These are the *best* bars and so easy to make, the trick to these is not to overbake, mine bake out perfectly in a 350 degree oven, second-lowest rack for 22 minutes, servings is only estimated --- add in 1 teaspoon cinnamon also if desired --- this was developed using full-fat peanut butter :)

1 cup butter or 1 cup margarine, softened
1 cup brown sugar, well packed
1 cup white sugar
1 tablespoon vanilla (can use 1 tablespoon maple syrup or 2 teaspoons maple extract)
2 large eggs
1 1/4 cups peanut butter
2 cups all-purpose flour
1 teaspoon baking soda
2 cups oatmeal (I use half quick cooking and regular oats)
2 cups semi-sweet chocolate chips

Steps:

  • Set oven to 350 degrees.
  • Set oven rack to second-lowest position.
  • Grease a 13 x 9-inch baking dish.
  • In a large bowl using an electric mixer at medium speed cream the butter with both sugars and vanilla until no sugar granules remain (about 4 minutes).
  • Add in the peanut butter and beat until combined.
  • Add in eggs and beat until combined.
  • In a bowl combine the flour with baking soda and oats; add to the creamed mixture and mix on low speed until combined.

2/3 cup honey

1/2 cup coconut oil (no substitutes, this is what gives its creamy texture and flavor)
2 cups oats (not instant)
1 1/4 cups mini chocolate chips
3/4 cup dried cranberries

  • 1. In a medium sized saucepan, melt together peanut butter, honey and coconut oil. Remove from heat and add oats, chocolate chips and dried cranberries. Stir until combined and chocolate chips are melted.
  • 2. Spread into a 9x13 pan. Refrigerate until hardened, about an hour. Store in refrigerator.
  • 3. I use parchment in bottom of my pan so I can flip out of pan onto cutting board, cut, bag and freeze. This prevents me from eating it all at once!!

1/2 cup butter or 1/2 cup margarine, softened
1/2 cup white sugar
1/2 cup brown sugar
1 egg, large
1/3 cup peanut butter
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 teaspoon vanilla
1 cup flour
1 cup oats, I prefer old fashioned
1 1/2 cups milk chocolate chips
1/2 cup powdered sugar
1/4 cup peanut butter
2 -3 tablespoons milk

Steps:

  • Cream butter, brown sugar and white sugar until light and fluffy.
  • Add egg, 1/3 c peanut butter, soda, salt, vanilla and mix well; add flour and oats.

2 c butter
1 c dark brown sugar
2 tsp vanilla
6 c rolled oats
1 tsp cinnamon
1/2 tsp salt
2 c semi sweet chocolate chips
2 c chunky peanut butter

Steps:

  • 1. Spray a 9 x 13 pan with cooking spray. Set aside. In a saucepan combine the butter, dark brown sugar, and vanilla. Cook over low heat until the butter has melted and sugar has dissolved.
  • 2. Add the oats, cinnamon, and salt. Cook for about 5 minutes. Set aside.
  • 3. Place the chocolate chips and peanut in a microwave safe dish and microwave in increments of 1 minute until melted and mixed well.
