HONEY-ROASTED PEARS WITH BLUE CHEESE AND WALNUTS RECIPE - (4.1/5)

Honey-Roasted Pears with Blue Cheese and Walnuts Recipe - (4.1/5) image

Provided by á-2825

Number Of Ingredients 6

3 ripe pears (about 1 1/2 lbs.), like Bosc, unpeeled
3 Tbs. unsalted butter, melted
1/4 cup honey
1/4 cup granulated sugar
1/2 cup chopped walnuts
1/2 cup crumbled blue cheese

Steps:

  • Preheat the oven to 375 degrees. Cut the pears in half, then slice a thin sliver from the rounded side of each half so the pears can rest flat. Scoop out the core of each pear half with a melon baller. It doesn't have to be pretty, as you will later be filling the cavities with cheese and nuts. Pour the melted butter into a 9"x13" baking dish. Whisk in the honey and sugar. Arrange the pears, cut side down, on top of the honey-sugar mixture. Roast the pears until they are tender, about 30 minutes. Meanwhile, in a medium dry skillet, lightly toast the chopped walnuts over medium heat for 4 to 5 minutes, tossing occasionally, until they are fragrant, lightly browned in spots and softly hissing. Remove to a plate to cool. Remove the pears from the oven and gently flip them, cut side up. Baste the pears with the honey syrup and return them to the oven for 10 minutes. Remove the pears again and fill each cavity with a generous tablespoon of blue cheese. Return the pears to the oven and bake until the cheese has melted, about 5 minutes more. To serve, spoon some of the caramelized syrup onto serving plates, set the warm pear halves on top and sprinkle with toasted walnuts. Any leftovers can be stored, covered, in the refrigerator for 1 to 2 days and reheated in the microwave.

Yield 6 serving(s)

Number Of Ingredients 16

4 tablespoons olive oil
1 tablespoon fresh limes or 1 tablespoon lemon juice
1 teaspoon white wine vinegar
1 1/4 teaspoons Dijon mustard or 1 1/4 teaspoons whole grain prepared mustard
1/4-1/2 teaspoon maple syrup or 1/4-1/2 teaspoon honey
2 teaspoons finely minced green onions
salt and pepper
1 cup walnut halves
1/2 teaspoon butter
1 teaspoon maple syrup or 1 teaspoon honey
1 dash cayenne or 1 dash hot smoked paprika
1/2 lb arugula, mesclun, romaine, mache, spinach (whatever may be your preference)
3 firm bartlett pears, washed, cored and sliced into very thin wedges (skin remaining)
4 ounces blue cheese, crumbled (gorgonzola, Stilton, etc.)
2 slices bacon, cooked until crisp and well drained
1/2-1 lb cooked sliced chicken (optional)

Steps:

  • Whisk together all vinaigrette ingredients until well blended; set aside.
  • In a small frying pan set on a medium heat, melt the butter, stir in the maple syrup or honey and then stir in the walnuts. Continue to heat the walnuts, stirring continuously, for approximately 2-3 minutes or until they are fragrant, caramelized and lightly browned. Remove from the heat; set aside.
  • Place the greens in a large salad bowl or, if individual servings are preferred, distribute them equally among 6 salad plates. Sprinkle over the pears, blue cheese and walnuts. Place over chicken then drizzle with dressing and toss.
  • Note: I find having the chicken warmed is superior to cold chicken.

  • Pick ripe pears: Look for pears that are fragrant and have a slight give when you press them gently. Avoid pears that are too hard or have bruises or blemishes.
  • Use a variety of lettuces: This salad is a great way to use up leftover lettuce. You can use a mix of baby spinach, arugula, romaine, or any other type of lettuce you like.
  • Choose a good quality blue cheese: The blue cheese is a key ingredient in this salad, so it's important to choose a good one. Look for a blue cheese that is creamy and flavorful, with a strong pungent aroma.
  • Toast the walnuts: Toasting the walnuts brings out their flavor and makes them more香脆. You can toast the walnuts in a pan over medium heat until they are golden brown, or you can roast them in the oven at 350 degrees Fahrenheit for 10-12 minutes.
  • Make the dressing ahead of time: The dressing for this salad can be made ahead of time and stored in the refrigerator for up to 2 weeks. This makes it a great option for a quick and easy lunch or dinner.

The salad is a great way to use up leftover lettuce and pears, and it is also a good way to get your daily dose of fruits and vegetables.
