2 lbs frozen peas
1 lemon, juice of
1 pinch sugar
2 tablespoons fresh dill, chopped
2 tablespoons olive oil
6 green onions
1 (14 1/8 ounce) can artichoke hearts, chopped

Steps:

  • Bring a pot of salted water to a boil, then add peas, lemon juice, pinch of sugar & chopped dill.
  • Cover & cook about 10 minutes, or until peas are tender, then drain & keep warm.
  • Cut off root ends of green onions & trim green tops, leaving about 1 inch of green attached.
  • In a saucepan heat olive oil & cook onions to soften.

1 lemon, cut in half
4 medium artichokes, or 8 to 10 small or baby artichokes
2 tablespoons extra-virgin olive oil, more for garnish
1/2 teaspoon kosher salt, more to taste
1 cup fresh peas (from about 1 pound of peas in the pod) or frozen peas
2 cups fresh ricotta cheese
Finely grated zest from 1 lemon
1/4 cup torn mint or dill, or a combination

Steps:

  • Heat oven to 375 degrees.
  • Squeeze one lemon half into a large bowl of cold water. Pluck off all tough leaves from one artichoke, until you reach leaves that are pale and soft. Using a vegetable peeler or paring knife, peel stem and trim base of artichoke, then dunk it in lemon water to keep it from browning. Cut off the top 1/3 of artichoke and discard. Slice artichoke lengthwise into quarters; remove any inner purple leaves and scoop out the fuzzy choke if there is one. 1 lb baby peas
4 carrots, sliced thinly
2 large onions, chopped (approx 2 cups)
1 1/2 cups water
1 tablespoon tomato paste
1/2 cup olive oil
2 tablespoons minced dill
1 lemon, juice of
salt and pepper

Steps:

  • Place the oil, onions and carrots in a large saucepan and cook until the onion is translucent.
  • Add 1 1/2 cups of water and bring to the boil.
  • Cook for 10 minutes.

Juice of 1 lemon
4 small globe artichokes or 2 large globe artichokes
2 tablespoons extra virgin olive oil
2 large garlic cloves, minced, or 1 small bulb of green garlic, minced
3/4 pound orzo (about 1 2/3 cups)
3/4 cup shelled fresh peas (about 1 pound in the shells)
2 tablespoons finely chopped parsley
2 tablespoons finely chopped dill
2 ounces Parmesan, grated (1/2 cup)

Steps:

  • Make the béchamel and set aside.
  • Prepare the artichokes. Fill a bowl with water and add the lemon juice. Cut away the stem and the top third of each artichoke, break off the leaves and trim them down to the bottoms, placing them in the water as you go along. 4 large chicken thighs with skin and bone (2 pounds total)

1/2 cup reduced-sodium chicken broth
1 (14-ounce) can artichoke hearts, rinsed, drained, and halved lengthwise
1 cup frozen baby peas (not thawed)
1 tablespoon chopped fresh flat-leaf parsley
