  • Bring a large pot of salted water to a boil over medium heat. Add pasta and cook until al dente. Drain pasta, reserving 1 cup of pasta water.
  • Meanwhile, saute pancetta in a large saucepan over medium-high heat until golden and crisp, about 6 minutes. Transfer to a paper towel-lined plate. In the same pan, saute onions until softened, about 5 minutes. Add peas and garlic and saute for 3 minutes. Stir in Parmesan, pasta and pancetta. Moisten pasta with some of the reserved pasta water. 1 1/2 tablespoons olive oil
3 ounces thinly sliced pancetta or bacon
1 quart chicken stock
3 large leeks, white parts only, split lengthwise, sliced 1/4-inch thick and thoroughly washed (about 3 cups)
2 garlic cloves, smashed
Kosher salt and black pepper
1 1/2 cups arborio rice
1/2 cup dry white wine
1 tablespoon unsalted butter
2 ounces grated Pecorino (about 3/4 cup), plus more for topping
8 ounces sugar snap peas, strings removed, snap peas halved lengthwise
1/2 cup snipped chives (optional)

Steps:

  • Add 1/2 tablespoon oil to a large, wide saucepan, and add the pancetta slices. (It's OK if they're not in one layer, as they will shrink quite a bit.) Turn heat to medium and cook, turning and rearranging the pancetta until lightly browned, crisp, and the fat has rendered, 6 to 8 minutes. Transfer with tongs to a paper towel, leaving the fat in the pan.
  • Add the stock and 1 cup water to a separate medium saucepan. Transfer the saucepan to a back burner and bring to a simmer over low. Keep warm on the lowest heat.
  • Add 1 tablespoon oil to the pan that you cooked the pancetta in, and add the leeks, garlic and 1/2 teaspoon salt. Cook, stirring, over medium-high until wilted and soft, about 5 minutes.
  • Add the rice and cook, stirring, until grains look slightly translucent, 2 to 3 minutes. Add wine and cook until nearly absorbed, about 1 minute.
  • Add a ladleful of stock to the rice - you want just enough to barely cover the surface of the rice. Cook at a lively simmer, stirring very frequently, until it's nearly absorbed, 2 to 3 minutes. Continue adding stock in this way until rice is very creamy, but still al dente, 15 to 20 minutes total. You may not need all of the liquid, but you will probably use most of it.
  • Stir in the butter and cheese, and season to taste with salt and pepper. Stir in the snap peas. Add more of the remaining liquid if needed to loosen (it should be a bit soupy), and divide among four shallow bowls. Crumble the reserved pancetta over top, and sprinkle with chives, if desired.

I love fresh peas just boiled in some water and served with a little butter and mint, but my son is not as keen, so I came up with this so he would eat them and enjoy them. You can make this with frozen or fresh peas just make sure you cook the peas first if fresh.

1 tablespoon butter
1/2 onion, finely chopped
3 garlic cloves, crushed
5 pancetta, rashers chopped finely
2 cups cream (I use a half fat cream, can use full fat or double cream)
1/2 cup parmesan cheese, grated
2 cups cooked fresh peas (can use frozen, you can add them straight into the cream without cooking.)
1 dash cayenne pepper
mint, sprinkle with some chopped fresh mint (optional)

Steps:

  • Melt butter in a pan, add onion, garlic and bacon, cook until onion is soft and bacon cooked.
  • In a saucepan add cream, bring to the boil, reduce heat and simmer, to reduce slightly, Approx 4-5 Min's.
  • Add onion garlic mix, cheese and peas, stir to heat through and melt cheese, approx 3-4 Min's. If using frozen peas cook a little longer.
  • Add cayenne and season with salt and pepper if desired, cook for a further minute or two, until nice and hot and thickened slighlty.
  • Serve sprinkled with fresh mint.

Steps:

  • Set a small saucepan of water over high heat and bring to a boil. Add pancetta and cook for 1 minute, then drain and set aside.
  • Bring a large pot of well-salted water to a boil on the back burner, for cooking the pasta.
  • Meanwhile, put basil, parsley and mint in a mortar or mini food processor and mash to a coarse paste with about 1/4 cup oil. Set aside.
  • Warm 2 tablespoons olive oil in a wide skillet over medium-high heat. Add green garlic and peas, and sprinkle with salt and pepper. Steps:

  • Preheat the oven to 450 degrees.
  • Place the pancetta slices on a baking rack set in a sheet pan and roast for 8 to 10 minutes until crisp. Remove from the oven and set aside to cool.
  • Meanwhile, bring 2 to 3 quarts of water to a boil in a large pot and add 1 tablespoon of salt. Fill a large bowl with ice water and have a sieve or colander ready in the sink.   • Shell fresh peas if using. Diagonally cut sugar snaps and/or snow peas into thirds. Finely chop pancetta and shallots separately.
  • Fill a 6-quart pasta pot three fourths full with salted water and bring to a boil for peas and pasta. Have ready a bowl of ice and cold water.
  • Cook fresh or frozen peas in boiling water until tender, about 2 minutes, and with a slotted spoon transfer to ice water to stop cooking. 2 tablespoons olive oil
1/2 lb pancetta, cut into small dice
3 shallots, halved and thinly sliced
1 pinch red pepper flakes
1 lb frozen peas, thawed

Steps:

  • Heat the oil in a large high sided saute pan over medium heat. Add the pancetta and cook until golden brown and the fat has rendered. Remove the pancetta to a plate lined with paper towels.
  • Add the shallots and red pepper flakes to the pan and cook until soft. Add the peas and cook until warmed through. Transfer to a large bowl and top with the crisp pancetta.

Good and creamy, this is an impressive pasta dinner that comes together very easy. I used large rigatoni which allowed for ample cheese sauce coverage. Expect big smiles on everyone's face when they dig in.

18 oz Paccheri pasta or large rigatoni
8 oz gorgonzola cheese
4 oz pancetta
1 c peas, frozen petite
1 c heavy cream
3 Tbsp parsley
4 Tbsp Parmigiano-Reggiano, grated
2/3 tsp coarse sea salt
2/3 tsp black pepper

Steps:

  • 1. Bring a large pot of water, 4 to 5 quarts, to a rapid boil. Add a Tbsp. of sea salt. Toss in the Paccheri or large rigatoni pasta and cook according to instructions. Al Dente is preferred so remove before pasta is fully cooked.
  • 2. In a large sauté pan add 1 tbs of extra virgin olive oil and 4 oz. of cubed pancetta. Cook at medium temperature until fat has been rendered out of pancetta and is crispy. With a slotted spoon take Pancetta out and set aside.
  • 3. In the sauté pan add the cream, gorgonzola, Parmesan, salt, pepper, and parsley. Whisk rapidly until the cheeses melt and the sauce comes together.
  • 4. Once pasta is cooked and still al dente toss directly into large sauté pan add peas and pancetta. Garnish with parsley or additional Parmesan cheese.

My husband claims that these gnocchi are the best he's ever had. Therefore, I'm putting the recipe here for safe keeping. With just a few simple ingredients it had incredible flavor and richness. This is a personally created recipe.

4 large baking potatoes (about 2 pounds)
1 tablespoon salt
1 egg, lightly beaten
1 1/2-2 cups all-purpose flour
1/4 cup grated parmigiano-reggiano cheese
2 tablespoons olive oil
3 -4 ounces pancetta, chopped
2 garlic cloves, minced
16 -18 sage leaves, sliced in a chiffonade
1 (14 ounce) can chicken broth, unsalted
1 cup frozen peas, thawed
6 tablespoons butter

Steps:

  • To make the gnocchi:.
  • Wash and dry the potatoes. Slit each one or prick with a fork. Place in a 375 degree oven and bake for approximately 1 hour or until tender all the way through.
  • Once the potatoes are cool enough to handle, peel the skin and run the potatoes through a food mill or potato ricer onto a baking sheet. Place in the refrigerator until the potatoes are cold.
  • Put the riced potatoes on a floured flat working surface. Sprinkle the salt, the cheese and about 1 cup of the flour over the potatoes. Create a well in the potatoes and add the beaten egg.
  • Begin mixing the ingredients together with your hands and kneading the dough lightly. Add more flour if the dough is too sticky but be careful not to add too much flour or knead the dough too much. This will make the gnocchi very heavy and tough. (You can test out your dough by boiling a little water and dropping some of your dough into it to cook. If they fall apart you will need to add more flour. If they are heavy and tough, then you have added too much flour.).
  • Cut off pieces of dough and roll them out with your hands into ropes about the diameter of your thumb. Then cut the ropes into about 1 inch pieces. You can also roll each gnocchi over the back of a fork to create ridges if desired.
  • Put gnocchi on a baking sheet with plenty of flour to keep them from sticking to each other and the pan.
  • To make the sauce:.
  • Heat the oil in a large skillet over medium heat and add the pancetta. Cook until crisp.
  • Add the garlic and cook for about 30 seconds then add the sage. Cook another 30 seconds.
  • Add the chicken broth and peas and cook over medium high heat until the liquid is reduced by half.
  • Lower the heat to low and add the butter and cook until melted and the sauce is slightly thickened.
  • Cook the gnocchi in boiling water. They will rise to the surface when they are done. Scoop them out with a slotted spoon and let drain. Add them to the sauce and gently stir together.
  • Serve with additional cheese at the table.

250 grams fresh peas, shelled weight (you can substitute frozen peas - no need to defrost, add them straight from the freezer)
1 red onion, finely sliced
1 clove garlic, finely sliced
pancetta, cut into lardons

  • Place a little oil and a small knob of butter in a skillet over a medium heat. When the butter has melted add the pancetta and cook until it has started to brown. Turn the heat down low and add the sliced onion and garlic - stir well and let it cook it very slowly until it has softened and become golden. During the slow cooking the onion will almost break and release it's juices - it's at this stage that you add the shelled peas along with just enough water to barely cover them. 1 ¼ lbs asparagus, trimmed, cut on diagonal in 1" pieces

1 bunch green onions, thinly sliced, white and pale green parts separated from dark green parts
2 cloves garlic, pressed
½ c finely grated Parmesan cheese, plus additional for serving

1 T finely grated lemon zest
¼ c chopped fresh parsley, divided
¼ c thinly sliced fresh basil, divided

Meanwhile, cook pancetta in large nonstick skillet over med heat until crisp. Using slotted spoon, transfer pancetta to paper towels to drain. Pour off all but 1 t drippings from skillet. Add asparagus to drippings in skillet; sauté 3 minutes. Add peas, white and pale green parts of green onions, and garlic; saute until veggies are just tender, about 2 min. Remove from heat. 3. Add veggie mixture, ¼ c pasta liquid, dark green parts of green onions, ½ c Parmesan, cream, olive oil, lemon juice, lemon zest, half of parsley, and half of basil to pasta. Toss, adding more cooking liquid by tablespoons as needed. Season with salt and freshly ground black pepper. Transfer to a large bowl. Sprinkle pancetta, remaining parsley, and basil over. Serve, passing additional Parmesan cheese.
