Unsalted butter for greasing the pan
1 cup hazelnuts
1 1/4 cups pecans
9 eggs, separated
1 cup brown sugar
1 1/2 teaspoons baking powder
Dash of salt
1 teaspoon vanilla extract
1 1/2 cups heavy cream
3 tablespoons unsweetened cocoa
1/3 cup superfine sugar
3 tablespoons Grand Marnier
1/4 cup sifted confectioners' sugar
1 ounce shaved unsweetened chocolate

Steps:

  • Preheat the oven to 350 degrees. Grease a jelly-roll pan and line it with wax paper.
  • In a nut grinder or a food processor, grind separately the hazelnuts and the pecans, pulsing six to eight times. (Do not overprocess, as the mixture can become buttery.) You should have about one and one-quarter cups of pecan flour and one cup of hazelnut flour.
  • Beat the egg yolks with the brown sugar until light-colored and thick. Fold in the nut flours, baking powder and salt. Add the vanilla.
  • Whip the egg whites until stiff and fold them into the nut mixture. Spoon into the prepared pan.
  • Bake for about 20 minutes or until lightly browned. Set aside to cool.
  • In a mixing bowl, beat the cream with a whisk or an electric beater until thick. Add the cocoa and continue beating until the mixture forms stiff peaks. Fold in the superfine sugar and Grand Marnier.
  • Place a damp towel over the cake, covering the whole surface. Carefully invert the cake onto the towel and remove the pan and the wax paper.
  • Spread the chocolate-Grand Marnier filling evenly over the surface. Very carefully and gently, roll the cake up like a jelly roll, starting at the long side. Use the towel to help in the rolling, and roll directly onto a serving platter. Decorate with the confectioners' sugar and shaved chocolate. Refrigerate until ready to serve.

1/3 cup/65 g caster sugar (superfine)
2 tablespoons flour
1/2 cup/50 g powdered hazelnuts
2/3 cup/150 ml heavy cream
Drop vanilla extract
Pinch ground cinnamon
Cocoa power, for dusting
Icing sugar (confectioners' sugar), for dusting

Steps:

  • Heat the oven to 400 degrees F. Line an 8-inch by 12-inch/20 cm by 30 cm sided baking sheet with parchment which you've buttered on both sides. Put the eggs and sugar in a glass or metal bowl, set it over a pot with an inch/2.5 cm of simmering water in the bottom (do not let the bowl touch the water) and beat until tripled in volume and very thick and ribbony, like cake batter. This will take about 10 minutes. Remove from the heat.
  • Sift the flour and nuts over the batter and gently fold together. Pour the batter into the pan so that it is evenly distributed. Bake until slightly golden on top, 10 to 12 minutes. Meanwhile, get set up for unmolding the cake: lay a damp tea towel on a cutting board or on the back of another baking sheet. When the cake comes out, flip it onto the towel, carefully peel off the paper, trim the edges it you want, and roll immediately. Set aside to cool to room temperature, about 5 minutes.
  • Whip the cream into stiff peaks with a hint of vanilla and a pinch of cinnamon. Unroll the cake from the towel and set the towel aside. Sieve over a dusting of cocoa powder and spread the cream over the cake leaving a 1-inch border, and roll the cake up again. Set on a platter seam-side down. Sift over a little icing sugar and cocoa powder. Decorate with a button-row of hazelnuts. Cover and refrigerate until eating, which you'll want to do the same day, preferably within a few hours. Alternatively, save the filling and rolling the cake until an hour or 2 before serving.

What a happy creation this turned out to be! It is a new little twist on an old standard pecan pie recipe. I guess I was inspired by the late night cooking muse. This became highly complimented and the recipe requested at our Thanksgiving Dinner this year. Note: Prep time does NOT include preparing/making the pie crust. I use the roll out pie shell dough from Pillsbury.

1 9" unbaked pie shell
4 eggs, lightly beaten
1 1/4 cups dark corn syrup
1/3 cup brown sugar
1 1/2 teaspoons flour

1/4 cup butter or 1/4 cup margarine, melted
1 cup pecans, chopped
1/4 cup hazelnuts, chopped finer than pecans
1/3 cup dark chocolate chips

Steps:

  • Preheat oven to 350.
  • Prepare Pie crust in pan, set aside.
  • In a large mixing bowl, combine eggs, corn syrup, brown sugar, flour and vanilla; beat well.
  • Add melted butter, pecans, hazelnuts and chocolate chips to the egg mixture, stir until ingredients are combined.
  • Pour mixture into pie crust. Bake until center of the pie is puffed and golden brown, about 30-35 minutes.
  • Cool. If desired, serve with a little whipped creme or vanilla ice cream.

This is an Stougaard old family favorite. Not the easiest to make, but well worth the trouble. Gooey and sweet. Best eaten fresh from the oven. I usually double the recipe, because if you go to the trouble to make yeast rolls--make lots. Milk can also be warmed in the microwave.

½ cup milk
½ teaspoon white sugar
½ teaspoon salt
¼ cup margarine
⅛ cup warm water (110 degrees F)
1 (.25 ounce) envelope active dry yeast
1 egg
2 ½ cups all-purpose flour, or as needed
2 tablespoons margarine, softened
¼ cup white sugar
1 teaspoon ground cinnamon
2 tablespoons light corn syrup
1 ½ tablespoons water
3 tablespoons margarine
¾ cup packed brown sugar
½ cup pecan halves

Steps:

  • Pour the milk into a small saucepan, and set over medium heat. Heat just until a skin starts to form on the top, then remove from the stove, and stir in salt and 1/4 cup margarine. Allow to cool to lukewarm.
  • Place 1/8 cup of warm water in a small bowl. Stir in 1/2 teaspoon sugar. Sprinkle yeast over the surface, and let stand until foamy, 5 to 10 minutes.
  • In a large bowl, stir together the cooled milk mixture and the yeast for 2 minutes using an electric mixer on medium speed. Add egg, and mix well. Use a large wooden spoon to stir in flour 1/2 cup at a time, mixing well after each addition until the mixture forms a dough. Knead on a floured surface, adding more flour if necessary, until dough is smooth and elastic, about 8 minutes. Place in an oiled bowl, and turn once to coat the top. Cover, and let rise until doubled in size, 1 to 2 hours.
  • Punch down dough, and let rest on the counter while you prepare the caramel topping. In a medium bowl, mix together the corn syrup, 1 1/2 tablespoons of water, 3 tablespoons of margarine and brown sugar until smooth. Spread an even layer onto the bottom of a 9x9 inch baking dish. Place pecan halves upside down in rows over the sugar mixture. Set aside.
  • On a lightly floured surface, roll dough out to a 9x12 inch rectangle Spread with 2 tablespoons of margarine. Mix together 1/4 cup of sugar with the cinnamon; sprinkle over the margarine. Roll the dough up starting at the long end to form a log. Pinch the seam together to seal. Cut the roll into 1 inch rounds. Place the rounds into the prepared baking dish. Set in a warm place to rise until doubled, about 30 minutes.
  • Preheat the oven to 350 degrees F (175 degrees C). Bake rolls for 20 to 25 minutes in the oven, until golden brown. Invert baking pan onto a cutting board or a clean cookie sheet while still warm so the caramel topping is on top.

1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon apple pie spice
15 1/4 ounces unpeeled apricot halves in light syrup
2 tablespoons granulated sugar
3 eggs
1/2 cup granulated sugar
3/4 cup finely chopped hazelnuts or 3/4 cup pecans
2 (3 ounce) packages cream cheese, softened
1/4 cup butter, softened (no substitues)
1/2 teaspoon vanilla
1 cup sifted powdered sugar
1 sprig rosemary

Steps:

  • Preheat oven to 375°F.
  • Grease & flour a 15x10x1 inch baking pan; set aside.
  • Sift together the flour, baking powder, salt and apple pie spice; set aside.
  • Drain apricots, reserving 1/3 cup of the syrup.
  • Chop the apricots finely. Reserve 1/2 cup of the chopped apricots for filling.
  • Combine remaining chopped apricots, reserved apricot syrup, & 2 tablespoons of sugar in a small saucepan. Bring apricot mixture to boiling; reduce heat. Cook & stir over low heat about 4 minutes or until thickened; stirrring and mashing with a spoon. Remove from heat; cool to room temperature.
  • Beat eggs in medium mixing bowl with electric mixer on high for 5 minutes; gradually beat in 1/2 cup sugar & apricot mixture.
  • Gently fold flour mixture into the egg mixture.
  • Spread batter in prepared pan.
  • Sprinkle with nuts.
  • Bake in a preheated oven for 10-12 minutes or until wooden toothpick inserted comes out clean.
  • Staring at a short side, roll up cake and towel together; cool.
  • Combine cream cheese, butter & vanilla in small mixing bowl; beat mixture with electric mixer on medium-high until fluffy.
  • Beat in powdered sugar.
  • Stir in the reserved 1/2 cup chopped apricots.
  • Unroll cake & spread with cream cheese mixture; reroll w/out towel; cover & chill for at least 2 hrs up to 24 hours.
  • Transfer cake roll to cake server.
  • If desired garnish with fresh apricot wedges and rosemary sprig.
