1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
2 eggs, separated
2/3 cup milk
1/4 cup canola oil
1-1/2 cups cooked wild rice
1/2 cup chopped pecans

Steps:

  • In a large bowl, combine the flour, baking powder and salt. In a small bowl, whisk the egg yolks, milk and oil. Stir into dry ingredients just until moistened. In another bowl, beat egg whites until stiff peaks form; fold into batter. 1 tablespoon baking powder
1/2 teaspoon salt
2 large eggs, room temperature, separated

Steps:

1 cup water
12 ounces piloncillo sugar, or dark brown sugar
3/4 cup toasted whole pecans
1/3 cup sour mash Bourbon whisky
1 tablespoon vanilla extract
1/2 cup wild boar bacon (regular bacon may be substituted)
4 ounces butter (1 stick)
1 cup milk
3 egg yolks
3/4 cup toasted pecans
1 cup cornmeal
3/4 cup all purpose flour
1 teaspoon salt
1 teaspoon baking powder
4 egg white

Steps:

  • To make the syrup, bring the sugar and water to a boil in a saucepan and stir until all the sugar is dissolved. Continue to boil, without stirring, until the syrup thickens slightly and its surface becomes shiny. Pour the syrup into a stainless steel bowl and stir in the pecans. Carefully add the whisky and the vanilla. Keep warm to be served over the waffles.
  • Chop the bacon into small pieces and cook in a frying pan with the butter. Beat the egg yolks with the milk and add the cooked bacon and butter from the frying pan. Chop the pecans to a medium-coarse consistency. Mix together with the cornmeal, flour, salt and baking powder and stir into the egg yolk mixture. 1/2 cup ground lightly toasted pecans
1 1/2 teaspoons baking powder

1/2 cup melted butter plus 1/2 cup cold butter, cut into pieces
2 1/2 cups milk
Vegetable oil or nonstick cooking spray, for coating the waffle iron
1 cup pecan pieces
1/2 cup cane syrup
4 medium bananas, peeled and cut into 1/2-inch slices

2 cups pure maple syrup
2 1/4 cups all-purpose flour

1/2 cup chopped pecans
3 eggs, separated
2 -2 1/2 cups buttermilk
6 tablespoons unsalted butter, melted
2 very ripe bananas, peeled,and pureed
