CARAMEL PECAN CINNAMON ROLLS (BREAD MACHINE RECIPE)

Caramel Pecan Cinnamon Rolls (Bread Machine Recipe) image

Make and share this Caramel Pecan Cinnamon Rolls (Bread Machine Recipe) recipe from Food.com.

Provided by Holly Lyman

Categories     Breads

Time 35m

Yield 16 rolls, 16 serving(s)

Number Of Ingredients 18

1/4 cup butter, melted
1/4 cup water
0.5 (3 1/2 ounce) package instant vanilla pudding, box
1 cup milk
1 egg, beaten
1 tablespoon sugar
1/2 teaspoon salt
4 cups bread flour
2 1/2 teaspoons yeast
1/2 cup butter
1 1/2 cups brown sugar, packed
3 tablespoons water
1 teaspoon vanilla
3/4 cup pecan halves
1 tablespoon milk, just enough to brush over the dough
1 cup brown sugar
2 teaspoons cinnamon
3/4 cup pecans, chopped

Steps:

  • Rolls:
  • Place ingredients in machine following the specifications of that particular machine. Set for dough cycle. If bread machine seems to be working too hard to mix dough, sometimes I add 1 - 2 Tbls vegetable oil to get it moving better.
  • After complete on dough cycle, remove from machine and roll out to about 17x10" rectangle. The larger you roll the rectangle, the more layers you have, which is really nice.
  • Caramel Pecan Topping:.
  • Mix butter, brown sugar and water together in a small saucepan, heat on low until butter is melted.
  • Increase heat to medium and boil, stirring constantly, for 3 minutes.
  • Stir in vanilla and remove from heat.
  • Pour into cake pan, then place pecan halves over the caramel.
  • Filling:
  • Mix together brown sugar, pecans and cinnamon.
  • Moisten the dough by brushing with milk.
  • Sprinkle brown sugar, pecan and cinnamon mixture over top.
  • Roll tightly from long end, pinching edges closed when completely rolled (sometimes putting a little milk on the edge helps seal it).
  • Slice rolled dough into 1/2" slices (or larger if a larger bun is preferred).
  • Place into pan on top of caramel.
  • Let rise until doubled (about an hour, or quicker if you put the pan on a heating pad).
  • Bake at 350° for 20 minutes, until golden. Do not overbake.
  • Invert onto a cookie sheet immediately, before caramel hardens.

Time 13h35m

Yield Makes 12

Number Of Ingredients 17

6 tablespoons unsalted butter, melted, plus more, room-temperature, for bowl and dish
1 medium russet potato (8 ounces), peeled and cut into 1-inch pieces (1 1/4 cups)
1 cup whole milk
2 1/4 teaspoons active dry yeast (not rapid-rise; one whole 1/4-ounce envelope)
2/3 cup granulated sugar
1 large egg
3 1/2 cups bread flour, plus more for dusting
1 1/2 teaspoons kosher salt
3 tablespoons unsalted butter, room temperature
3 tablespoons apple butter, such as Red Jacket Orchards
2/3 cup packed light-brown sugar
1 teaspoon ground cinnamon
Pinch kosher salt
1 cup chopped toasted pecans
1/2 cup dried currants or chopped raisins
3/4 cup packed light-brown sugar
4 tablespoons unsalted butter

Steps:

  • Dough: Brush a large bowl with butter; set aside. Place potato in a small pot of water and bring to a boil. Cook until fork-tender, 10 to 12 minutes; drain. Pass through a ricer or mash with a fork until smooth (to yield 2/3 cup); let cool slightly.
  • Heat milk until warm to the touch (110 degrees on a thermometer). Transfer to the bowl of a stand mixer; add yeast. Let stand until foamy, about 5 minutes. Stir in butter, granulated sugar, potato, egg, flour, and salt until a ragged dough forms. Place bowl on mixer fitted with the dough-hook attachment; mix on medium-low speed, scraping sides and removing dough from hook a few times, until soft and pliable, about 15 minutes. Transfer to a lightly floured surface; knead into a ball. Transfer to buttered bowl (dough will be very soft) and cover with plastic wrap. (Dough can be covered and refrigerated at this point up to 2 days). Let rise in a warm place until almost doubled, 1 hour and 10 minutes to 1 1/2 hours. Brush two 8-inch cake pans with butter; set aside.
  • Filling: In a bowl, stir together butter and apple butter. In another bowl, combine brown sugar, cinnamon, and salt. Punch down dough; transfer to a lightly floured surface. Roll out to a 14-by-18-inch rectangle. Spread evenly with butter mixture, leaving a 1/2-inch border on far long edge; top with brown-sugar mixture, pecans, and currants. Starting at long edge closest to you, roll dough away from you into a tight jelly-roll shape. Transfer, seam-side down, to a parchment-lined baking sheet and refrigerate until firm, about 30 minutes. Trim ends, then cut roll crosswise into twelve 1 1/2-inch-thick rounds with a serrated knife. Arrange, cut-sides up, in prepared pans; cover with plastic wrap. Refrigerate at least 8 hours, or overnight.
  • Preheat oven to 350 degrees. Remove rolls from refrigerator and place in a warm spot until almost doubled in size, about 1 1/2 hours. Remove plastic and bake until browned on top and a thermometer inserted registers about 210 degrees, 30 to 35 minutes. Let cool in pans on a wire rack, 10 minutes.
  • Glaze: Meanwhile, heat brown sugar, butter, apple butter, and 1 tablespoon water in a saucepan over medium, stirring, until simmering; cook 1 minute. Drizzle over rolls; let cool at least 20 minutes. Serve.

Time 2h20m

Yield 12 rolls

Number Of Ingredients 16

3 1/2-4 cups all-purpose flour
2 1/4 teaspoons active dry yeast
1 cup milk
1/3 cup butter
1/3 cup sugar
1/2 teaspoon salt
2 eggs
2 tablespoons butter, softened
1/4 cup packed brown sugar
2 teaspoons ground cinnamon
1/2 cup golden raisin
1/2 cup melted butter
1/4 cup maple syrup
1 cup packed brown sugar
3/4 cup pecans, toasted
1/2 cup whipping cream

Steps:

  • In a mixing bowl combine 1-1/2 cups of the flour and yeast; set aside.
  • In a saucepan heat milk, 1/3 cup butter, sugar, and salt until warm (120°degrees F) and butter is almost melted. Add to flour mixture along with eggs.
  • Beat with an electric mixer on low speed 30 seconds, scraping bowl. Beat on high speed 3 minutes. Stir in as much of the remaining flour as you can.
  • Turn dough out onto a lightly floured surface (or use dough hook on KA). Knead in enough remaining flour to make a moderately soft dough that is smooth and elastic (approximately 5 minutes kneading).
  • Shape dough into a ball. Place dough in a lightly greased bowl; turn once. Cover and let rise in a warm place until double (1 to 1-1/2 hours). Punch dough down. Turn out onto a lightly floured surface. Cover; let rest 10 minutes.
  • Spread pecans on non-stick cookie sheet in a single layer and toast in 350 degree oven for 8-10 minutes.
  • Spray a 13x9x2-inch baking pan with non-stick cooking spray. Add melted butter to baking pan (I actually put the pan and butter in the oven for a few minutes to melt). Drizzle maple syrup over butter, and sprinkle brown sugar and pecans on mixture; set aside.
  • Roll dough into 18x10-inch rectangle. Spread with softened butter. Combine brown sugar and cinnamon; sprinkle onto dough. Sprinkle with raisins. Tightly roll up into a spiral, starting from a long side. Pinch seams to seal. Cut dough crosswise into 12 even slices. Arrange slices, cut sides down, in the prepared baking pan. Pour whipping cream over rolls. Cover and let rise until nearly double (about 30 to 40 minutes).
  • Bake in a 350 degree for 25 to 30 minutes or until golden. Invert rolls onto serving platter. Cool slightly before serving.
  • Makes 12 rolls.
  • Make ahead tip: Up to 24 hours ahead, make and shape rolls. Cover with oiled waxed or parchment paper; then with plastic wrap. Chill in the refrigerator for 2 to 24 hours. Before baking, let stand for 20 minutes at room temperature.

1 large egg
2 Tbsp margarine or butter, softened
3 1/4 c bread flour
1/4 c sugar
1 tsp salt
2 tsp ground cinnamon
3 tsp regular active dry yeast

1/3 c margarine or butter, melted
1/2 c packed brown sugar
1 Tbsp corn syrup, dark
2/3 c pecan halves
1/2 c granulated sugar

Steps:

  • 1. Place all Dough ingredients in bread pan in the order listed. Select SWEET DOUGH cycle.
  • 2. Grease 13x9x2 inch rectangular pan. Mix 1/3 cup margarine, the brown sugar, corn syrup and pecan halves. Spread mixture in pan.

  • 4. Heat oven to 375 degrees. Bake 22 to 27 minutes or until golden brown. Immediately invert pan onto heat proof serving plate or tray. Let pan remain a minute so caramel can drizzle over rolls.

Tips:

  • Use a stand mixer or hand mixer to make the dough. This will help to ensure that the dough is well-mixed and smooth.
  • If the dough is too sticky, add a little more flour. If the dough is too dry, add a little more milk.
  • Let the dough rise in a warm place for about an hour, or until it has doubled in size.
  • Roll the dough out into a rectangle and spread the filling evenly over the top.
  • Roll the dough up tightly and cut it into 12 slices.
  • Place the rolls in a greased baking dish and let them rise for another 30 minutes.
