Number Of Ingredients 6

1 ½ cups all-purpose flour
1 ½ cups brown sugar, divided
½ cup butter, softened
1 cup pecan halves
⅔ cup butter
1 cup milk chocolate chips

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Combine flour, 1 cup brown sugar, and softened butter in large mixer bowl. Beat at medium speed for 2 to 3 minutes or until mixture resembles fine crumbs. Pat mixture evenly onto bottom of ungreased 13x9-inch baking pan. Sprinkle pecans evenly over crumb mixture.
  • Combine 2/3 cup butter and remaining 1/2 cup brown sugar in small saucepan. Cook and stir over medium heat until entire surface is bubbly; cook, stirring constantly, 1/2 to 1 minute more. Pour into pan, spreading evenly over crust.
  • Bake in preheated oven until entire surface is bubbly, 18 to 20 minutes. Remove from oven; immediately sprinkle with chocolate pieces. Let stand 2 to 3 minutes to allow chocolate to melt; use a knife or small spatula to swirl chocolate slightly. Cool completely in pan on a wire rack. Use sharp knife to cut into 48 bars.

Chocolate Caramel Pecan Turtles image

One of our favorite Christmas treats loaded with pecans, delicious caramel and milk chocolate.

Yield 50

Number Of Ingredients 8

3 cups pecan halves
1/2 cup butter
1 cup brown sugar
1/2 cup corn syrup
7 ounces sweetened condensed milk (1/2 can)
1/2 teaspoon vanilla
12 ounces milk chocolate chips
1/2 teaspoon shortening

Steps:

  • Toast pecans at 300 degrees on a cookie sheet for 5 to 6 minutes until fragrant. Let cool.
  • Line 2 large cookie sheets with parchment paper and spray lightly with non stick cooking spray.
  • Arrange the pecans on the sheet in small groups of 3.
  • To make the caramel, melt butter in a medium sized sauce pan.
  • Add brown sugar, corn syrup, 7 ounces sweetened condensed milk.
  • Cook and stir over medium high heat until it reaches 235 degrees on your candy thermometer or the soft ball stage. (Clings together well when you drop 1/2 teaspoon of caramel in cold water).
  • Then remove the caramel from heat and stir in vanilla. Carefully spoon caramel over each nut cluster covering all the nuts.
  • For the chocolate topping melt the chocolate chips in a microwave safe bowl or big glass measuring cup. Heat for 30 seconds at a time stirring after each interval until all melted and smooth.
  • Then add in 1/2 teaspoon shortening to the melted chocolate chips. Stir all together until its blended in.
  • Spoon the melted chocolate over the caramel and spread around with the back of a spoon.
  • Once they set up you can eat them or store them in an airtight container.
  • Great for gift giving and holiday parties.

1 teaspoon plus 1 cup butter, divided
1 cup light corn syrup
2-1/4 cups packed brown sugar
1/8 teaspoon salt
1 can (14 ounces) sweetened condensed milk
1 teaspoon vanilla extract
1-1/2 pounds pecan halves, toasted
3/4 cup milk chocolate chips
3/4 cup semisweet chocolate chips
4 teaspoons shortening

Steps:

  • Line baking sheets with waxed paper; lightly coat with cooking spray and set aside. Butter the sides of a heavy saucepan with 1 teaspoon butter. Cube remaining butter; place in pan. Add the corn syrup, brown sugar and salt. Cook and stir until sugar is melted., Gradually stir in milk. Cook and stir over medium heat until mixture comes to a boil. Cook and stir until a candy thermometer reads 248° (firm-ball stage), about 16 minutes. Remove from the heat; stir in vanilla. Gently stir in pecans. Drop by rounded teaspoonfuls onto prepared baking sheets. Refrigerate until firm, about 12 minutes. , In a microwave, melt chips and shortening; stir until smooth. Drizzle over clusters. Chill until firm. Store in the refrigerator.

⅔ cup white sugar
½ cup butter, softened
2 teaspoons vanilla extract, divided
1 pinch salt
1 ½ cups all-purpose flour
⅔ cup packed brown sugar
½ cup light corn syrup
3 eggs
¼ teaspoon salt
1 cup chopped pecans
½ cup semisweet chocolate chips, or to taste

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease a 9x13-inch baking dish with cooking spray.
  • Beat white sugar, butter, 1 teaspoon vanilla extract, and pinch of salt together in a bowl until smooth; add flour and stir until dough forms. Press dough into the bottom of the prepared baking dish.
  • Bake in the preheated oven until edges are lightly brown, 15 to 17 minutes. Cool crust completely.

1/2 c butter
1/2 c brown sugar, lightly packed
2/3 c sweetened condensed milk
1/2 c light corn syrup
1 dash(es) salt
1/2 tsp vanilla extract
1 1/2 c pecans, half and pieces
16 oz chocolate chips, melted

Steps:

  • 1. Melt butter in saucepan. Stir in sugar, milk, corn syrup, and salt. Bring to a boil--Reduce to very low heat. Cook, Stiring almost constantly 25 - 30 minutes or until hard ball stage in cold water. Remove from heat. Stir in vanilla and pecans. Drop in 1 1/2 inch wide mounds from spoon onto buttered foil. With spoon spread small amount of melted chocolate over each candy. Let stand until firm. Wrap each turtle separately in plastic wrap.

1 bag snyder's of hanover square shaped butter pretzels
1 bag rolo ( chocolate covered caramel candies)
1 bag pecan halves

Steps:

  • 1. Unwrap Rolo candies and place in bowl for later.
  • 2. Arrange the pretzels in a single layer on a parchment lined cookie sheet. Place one chocolate covered caramel candy on each pretzel.
  • 3. Bake on 300 degrees for 5 minutes. Place in oven to soften rolos, approximately 5 minutes. Check occassionally, don't let them melt.
  • 4. Take out of oven.
  • 5. Push a pecan half on top of each rolo
  • 6. Set in a cool area or fridge to harden.
  • 7. Remove from fridge and store in bag or container.
  • 8. ENJOY
