My sister found this recipe while surfing the web. She knows my DS loves smoked salmon, and creamy pasta dishes, so why not have them both!

12 ounces penne pasta, cooked and drained
2 tablespoons olive oil
1 whole shallot (thinly sliced)
4 roma tomatoes (seeded and chopped)
2/3 cup whipping cream
1 pinch ground nutmeg
2 tablespoons fresh dill (chopped,or 1-2 tsp dried dill weed)
1/3 cup vodka
6 ounces smoked salmon (cut into strips)
white pepper
1 sprig fresh dill (optional)

Steps:

  • Heat oil in a wide frying pan over medium-low heat.
  • Add shallot and cook, stirring often, until soft but not brown (about 3 minutes).
  • Stir in chopped tomatoes, cover and simmer for 5 minutes.
  • Add cream, nutmeg, chopped dill and vodka. Increase heat to high and bring to a full boil. Boil for 1 minute.
  • Add pasta to sauce and mix lightly using 2 spoons, until pasta is well coated.
  • Remove from heat.
  • Add salmon and mix lightly.
  • Season to taste with white pepper and garnish with dill springs.

A very easy recipe to make and is very tasty. Found a recipe similar to this one several years ago and made my own modifications to achieve a nice flavor. This recipe doubles very well, but be careful when igniting the Vodka. I suggest that the Vodka and cayenne pepper be burned in separte batches, then combine together before continuing with the recipe.

1 lb penne rigate (or a pasta of your choice)
1 tablespoon salt
2 tablespoons extra virgin olive oil
2 fluid ounces vodka
1/8 teaspoon cayenne pepper
1 cup whole milk, homogenized
1 cup whipping cream
2 tablespoons ketchup
1/2 cup grated parmigiano-reggiano cheese

Steps:

  • In a pasta pot or a large cooking pot, fill 3/4 full with water and bring to a rolling boil.
  • Add 1 tablespoon salt and 2 tablespoons olive oil.
  • Add pasta and cook uncovered for about 12 minutes or until el dente'.
  • DO NOT OVERCOOK.
  • In the meantime, in a medium size frying pan, heat Vodka and cayenne pepper until near boiling.
  • CAREFULLY light the Vodka using a long stick match and let the alcohol burn off.
  • USE CAUTION.
  • Soon as the alcohol burns out, add the milk, heavy cream and ketchup.
  • Simmer until sauce thickens, about 15 minutes, stirring occasionally.
  • Add 1/4 cup of grated Parmigiano Reggiano cheese and stir to blend.
  • Cook for 2 minutes longer.
  • Drain pasta well and transfer to a large bowl.
  • Pour sauce mixture over and toss to coat.
  • Sprinkle remaining 1/4 cup of Parmigiano Reggiano cheese and mix lightly.
  • Serve immediately.

1/2 pound penne
2 tablespoon olive oil
1 to 3 cloves garlic, minced
1/4 cup vodka
1 1/2 cups of heavy cream
1/2 cup tomato sauce
Salt and pepper
Fresh Parmesan cheese, grated

Steps:

  • Cook penne according to directions on package. Drain and set aside. In a large skillet heat olive oil. Add garlic and cook for 30 seconds. Add vodka and cook until the flames dissipate. Add cream and bring to a boil. Reduce heat so that cream simmers. Stir until mixture has reduced in volume by half. Add tomato sauce and season with salt and pepper. Add cooked pasta. Stir until coated and heated through. Serve with grated Parmesan cheese.

2 lb good penne pasta( like barilla)
2 qt marinara sauce( i use my own)
2 pt heavy cream
16 oz romano cheese, grated
1 small bunch of fresh basil
1 1/2 c vodka

Steps:

  • 1. Cook the pasta according to package directions,el dente. Strain and reserve. Using the same pot as the pasta,turn the heat to high and add the vodka. Bring to a light boil and add the sauce stirring frequently,lower the heat to a simmer.
  • 2. whisk in the heavy cream,3/4 of the grated cheese and stir frequently until the sauce come to a light boil. Chop the basil coarsely and add about half of it for the sauce and the other is for garnish along with the remainder of the cheese.
  • 3. The sauce should be pinkish in color and the alcohol in the vodka will evaporate leaving the flavor of the spirit. Serve in pasta bowls with a fork and a spoon so you can get all the goodness! I also like to have this with a good loaf of bread and a nice tossed salad,delicious!! A little red crushed pepper on it isn't to shabby either!! Enjoy!:)
