1 teaspoon minced fresh thyme
1 teaspoon honey
1 teaspoon whole pink peppercorns
Coarse kosher salt
Steak:
1 10-ounce New York strip steak (about 1 1/4 to 1 1/2 inches thick)
2 teaspoons extra-virgin olive oil, divided
1 teaspoon minced fresh thyme
Coarse kosher salt
1/4 cup thinly sliced shallot
1 cup dry red wine
1/2 cup low-salt beef broth or low-salt chicken broth
Celery Root and Parsnip Puree

Steps:

  • For pink peppercorn butter:
  • Combine first 4 ingredients in small bowl; mix with fork until peppercorns are slightly crushed.
  • Season with coarse salt and black pepper. Place small sheet of plastic wrap on work surface; place butter mixture atop plastic. Using plastic wrap as aid, form butter mixture into 1 1⁄2-inch-diameter cylinder; wrap tightly and chill. DO AHEAD: Can be made 3 days ahead. Keep chilled. Bring to room temperature before using.
  • For steak:
  • Rub steak with 1 teaspoon oil; sprinkle both sides with thyme, then coarse salt and 1/4 teaspoon black pepper. Let steak stand at room temperature 30 minutes.
  • Heat medium nonstick skillet over medium-high heat. Add steak; cook to desired doneness, 3 to 4 minutes per side for medium-rare. Transfer steak to plate; tent with foil. Add 1 teaspoon oil to skillet; add shallot and sauté until slightly softened, scraping up browned bits. Add wine; boil until liquid is reduced by half, stirring often, about 1 minute. Add broth; boil until sauce is thickened, about 2 minutes. Whisk in 3 tablespoons pink-peppercorn butter. Season sauce with coarse salt and pepper.
  • Cut steak against grain into 1/3-inch- thick slices. Divide between plates. Top with sauce; serve with puree.

CRISPY DUCK BREASTS WITH PEAR AND GREEN PEPPERCORN SAUCE

Crispy Duck Breasts with Pear and Green Peppercorn Sauce image

Categories     Duck     Fruit     Sauté     Apple     Pear     Brandy     Fall     Gourmet

Yield Serves 4

Number Of Ingredients 10

1 1/2 pounds boneless duck breast* (4 boneless breast halves, cut from two 5 1/2- to 6-pound ducks)
1 firm-ripe Bosc pear
3/4 cup apple juice
1/2 teaspoon cornstarch
2 tablespoons Calvados or Armagnac
1 tablespoon green peppercorns packed in brine, drained and crushed lightly
1 tablespoon duck or veal demiglace* or 1/2 extra-large vegetarian vegetable bouillon cube
1 teaspoon fresh thyme leaves or 1/4 teaspoon dried, crumbled
Garnish: fresh thyme sprigs
*available at many butcher shops and specialty foods shops

Steps:

  • Trim excess fat from duck breasts. Heat a 12-inch heavy skillet over high heat until very hot. Pat breasts dry and season with salt. Put breasts, skin sides down, in skillet and reduce heat to moderate. Cook breasts 20 minutes, or until skin is crisp and mahogany-colored, removing fat from skillet as it is rendered with a metal bulb baster (or very carefully pouring it off). Turn breasts and cook about 2 minutes for medium-rare or to desired doneness. Transfer breasts to a plate and keep warm, covered loosely.
  • While duck breasts are cooking, peel pear and cut into 1/4-inch dice. Pour off all but about 1 tablespoon fat from skillet and sauté pear until lightly browned, about 1 minute. In a measuring cup stir together apple juice and cornstarch. To pear add Calvados or Armagnac. Stir in cornstarch mixture, peppercorns, demiglace or bouillon cube, and thyme and simmer, stirring, 2 minutes, or until slightly thickened.
  • Serve duck breasts, sliced, with sauce spooned over them and garnish with thyme sprigs.

Tips:

  • Choose the Right Peppercorns: Use a variety of peppercorns for a more complex flavor. Black, white, green, and pink peppercorns each offer unique flavors.
  • Toast the Peppercorns: Toasting peppercorns before grinding enhances their flavor and aroma. Toast them in a skillet over medium-low heat for a few minutes, stirring constantly.
  • Grind the Peppercorns Freshly: Freshly ground peppercorns have a more intense flavor than pre-ground pepper. Use a pepper mill or mortar and pestle to grind the peppercorns just before using.
  • Use High-Quality Ingredients: The quality of your ingredients will greatly impact the flavor of your sauce. Use fresh herbs, good quality stock, and flavorful wine.
  • Reduce the Sauce Properly: Reducing the sauce concentrates its flavors and thickens it to the desired consistency. Simmer the sauce gently over low heat until it has reduced by about half.
  • Taste and Adjust: Always taste the sauce before serving and adjust the seasoning as needed. You may want to add more peppercorns, salt, or herbs to taste.

Conclusion:

Peppercorn sauce is a classic sauce that can be used with a variety of dishes. It is made with peppercorns, butter, stock, cream, and herbs. The type of peppercorns used will determine the flavor of the sauce. Black peppercorns create a more robust flavor, while white peppercorns create a milder flavor. Green peppercorns add a slightly fruity flavor. Pink peppercorns add a sweet and slightly floral flavor. Experiment with different types of peppercorns to find the flavor that you like best. Peppercorn sauce is a delicious and versatile sauce that can be used to add flavor to any dish.
