1 cup coffee, at room temperature
2 tablespoons half and half*, or more, to taste
1/2 cup sugar
1 cup water
1/2 teaspoon vanilla extract

Steps:

  • FOR THE SIMPLE SYRUP: Combine sugar and 1 cup water in a medium saucepan over medium heat, stirring until the sugar has dissolved. Let cool completely and stir in vanilla extract; set aside in the refrigerator until ready to serve. Serve coffee over ice with half and half and simple syrup, adding 1 teaspoon at a time, to taste.

1 pound ground coffee (a good, rich roast)
Half-and-half (healthy splash per serving)
Sweetened condensed milk (2 to 3 tablespoons per serving)

Steps:

  • Cook's Note: Can use skim milk, 2-percent milk, whole milk, sugar, artificial sweeteners, syrups...adapt to your liking!
  • In a large container, mix the ground coffee with 8 quarts water. Cover and allow to sit at room temperature for eight hours or overnight.
  • Line a fine mesh strainer with cheesecloth and set over a pitcher or other container. Pour the coffee/water mixture through the strainer, allowing all the liquid to run through. Discard the grounds. Place the coffee liquid in the fridge and allow to cool. Use as needed.
  • To make iced coffee, pack a glass full of ice cubes. Fill the glass two-thirds full with the coffee liquid. Add a healthy splash of half-and-half. Add 2 to 3 tablespoons sweetened condensed milk (can use plain sugar instead) and stir to combine. Taste and adjust the half-and-half and/or sweetened condensed milk as needed.

I have been using this method called 'cold brewing' during the hot summer months for years. I have not seen a recipe for it on this site so I figure it's time to let the secret out. Requires no coffee pot or fancy equipment either, gotta love simplicity at it's best. This makes the perfect cup of iced coffee. The heating of the beans is removed from this process, therefore it also removes the acidity from the coffee. Perfect for sensitive stomachs like mine! Enjoy. Stays fresh for about a week in the fridge. Add ice, simple syrup, or chocolate syrup for sweetness and a touch of cream and you will wonder (like I did) why I haven't heard of this miracle before!

I based this homemade iced coffee on Starbucks® bottled Frappuccino®. My husband and I love it and our fridge is never without a pitcher of this super easy, frugal alternative to the expensive stuff. Even though winter's coming and we live in Pennsylvania's Lake Erie snowbelt, we drink this year-round as an alternative to soda and other soft drinks. This particular recipe lends itself to endless variations limited only by your imagination!

4 cups ice cubes, or as needed
8 cups strong freshly brewed coffee
1 cup white sugar, or to taste
4 cups whole milk

Steps:

  • Place 2 cups of ice cubes into a 2-quart pitcher; slowly pour coffee over ice and stir until ice is melted. Stir sugar into coffee and mix thoroughly until sugar is completely dissolved. Add milk, stirring just until combined. Stir in remaining 2 cups ice, adding more as needed; refrigerate until well chilled, about 30 minutes.
  • Stir before serving. Pour over ice in tall glasses or into recycled serving-size glass bottles or insulated tumblers.

Frustrated with most coffee shops' inability to make an iced coffee the way I ask for it (brown, not white) and the actual cost of iced coffee, I spent awhile experimenting with different formulas at home. This is a recipe which most people are going to tailor to their own tastes. I am typing the recipe with more cream and sugar than I put in myself, so that those who prefer the way coffee is usually made at a coffee shop will have something very close to that, particularly if they use ground coffee from that shop. Myself, I use 2 teaspoons of half and half with a tablespoon of sugar, and brew my coffee a tad stronger. I found that once I perfected my own iced coffee, I could make it in less time than it takes to stop at Honey Dew. You can always do something else while the coffee is brewing.

3/4 cup water
2 tablespoons of your favorite regular grind coffee
ice, to fill a tall cup
1 tablespoon half-and-half
4 teaspoons sugar

Steps:

  • Brew your coffee double strength by using 2 tablespoons of ground coffee with 3/4 cup water.
  • Fill a tall glass with ice. A normal sized travel mug works well, but don't use anything smaller than that.
  • After the coffee has brewed, pour it into a ceramic mug or other heat-safe container.
  • Stir in sugar. This avoids the sugar at the bottom of the cup which usually happens at coffee shops.
  • Pour over ice. You'd think it would be best to chill the coffee first, but it cools down immediately and melts down enough of the ice that it becomes normal strength.
  • Add half and half, or your usual cream.
  • Try this recipe a few more times; fiddle around with it. I think this should make a good base recipe for most people.
