PERFECT PUMPKIN BARS

My mom has had this recipe forever and now that I'm a mom, they are always requested by my husband, kids, and inlaws around the holidays!

Categories     Cakes

Time 1h5m

Number Of Ingredients 14

2 c flour
2 tsp baking powder
2 tsp cinnamon
1 tsp baking soda
1/4 tsp salt
4 eggs (room temp)
1 can(s) pumpkin (15 oz)
1 2/3 c sugar
1 c vegetable oil
CREAM CHEESE FROSTING (I ALWAYS DOUBLE IT!)
1- 8 ounce pkg cream cheese softened
1/4 c butter, softened
1 tsp vanilla
2 c powdered sugar

Steps:

  • 1. Mix flour, baking soda, baking powder, salt and cinnamon and set aside.
  • 2. Beat sugar, pumpkin, oil, and eggs until well incorporated.
  • 3. Gradually add dry ingredients into pumpkin mixture until fully incorporated.
  • 4. Pour mixture into an ungreased 15x10x1 pan and bake at 350 degrees for 25-30 minutes. Let cool completely before frosting.
  • 5. For the cream cheese frosting: Beat together butter, cream cheese, vanilla until incorporated. Gradually add powdered sugar, and taste as you go. I like my frosting a little less sweet so I end up using less than the full amount of powdered sugar. Once frosted, I garnish with cinnamon on top. Enjoy! (I died the frosting orange in the picture for Halloween and topped with fresh ground cinnamon)

Tips:

  • Use fresh or canned pumpkin purée. Fresh pumpkin purée is ideal, but canned pumpkin purée is a convenient alternative.
  • Be sure to drain the pumpkin purée well before using. This will help to prevent your pumpkin bars from being too wet.
  • Use a combination of spices to flavor your pumpkin bars. Pumpkin pie spice is a classic choice, but you can also experiment with other spices such as cinnamon, nutmeg, ginger, and allspice.
  • Don't overmix the batter. Overmixing can make your pumpkin bars tough.
  • Bake the pumpkin bars until a toothpick inserted into the center comes out clean. This will ensure that your pumpkin bars are cooked through.
  • Let the pumpkin bars cool completely before frosting them. This will help to prevent the frosting from melting.

Conclusion:

Pumpkin bars are a delicious and festive fall treat. They're perfect for parties, potlucks, and bake sales. With a few simple tips, you can make perfect pumpkin bars every time. So what are you waiting for? Get baking!
