Time 20m

Number Of Ingredients 10

1 1/2 cups all purpose flour
1 tsp baking powder
1 tsp baking soda
1 Tbs pumpkin pie spice (or 1 tsp each of cinnamon, nutmeg and ginger)
½ tsp salt
1 cup canned pumpkin puree (not pumpkin pie filling)
2 eggs
3 Tbs butter (melted)
1⁄4 cup dark brown sugar
1 cup milk (plus extra if needed)

Steps:

  • Heat your waffle iron.
  • In a large bowl, whisk together the flour, baking powder, baking soda, pumpkin pie spice and salt.
  • In a medium bowl whisk together the pumpkin, eggs, butter, brown sugar and milk until well combined.
  • Make a well in the dry ingredients, and pour in the wet mixture. Mix together until JUST combine, being careful not to over mix.
  • Your mixture will be thick but pourable. If too thick add 1/3 cup extra milk.
  • Pour batter into waffle iron, and cook according to waffle iron directions (my Belgian waffle maker will take longer than a regular iron).
  • Remove from waffle iron, serve with butter and maple syrup.
  • Devour

PUMPKIN SPICE WAFFLES

Pumpkin Spice Waffles image

These semi-from-scratch Pumpkin Spice Waffles take just minutes to put together, leaving you time to do what matters most during the holidays-spend time with your family!

Categories     Dessert

Time 15m

Number Of Ingredients 7

1 2/3 cup Immaculate Baking Co.™ organic pancake & waffle mix
2 tsp. cinnamon
1 cup non-dairy milk
1 tsp. apple cider vinegar
1/3 cup pumpkin puree
3 Tbsp. aquafaba (liquid drained from a can of beans)
2 Tbsp. coconut oil

Steps:

  • Preheat your waffle maker.
  • Pour the waffle mix into a bowl. Add the cinnamon and stir together.
  • In a large measuring cup, measure out the non dairy milk, vinegar, pumpkin, aquafaba, and oil. Whisk together.
  • Pour the liquids into the dry ingredients and mix to incorporate completely.
  • Spoon the batter into a preheated waffle maker.
  • Cook according to waffle maker instructions.
  • Remove from waffle maker and enjoy!

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Use fresh pumpkin puree. This will give your waffles the best flavor. If you don't have fresh pumpkin puree, you can use canned pumpkin puree instead. Just make sure to drain it well before using.
  • Don't overmix the batter. Overmixing will make your waffles tough. Just mix the batter until the ingredients are combined.
  • Let the batter rest for a few minutes before cooking. This will allow the gluten in the flour to relax, which will make your waffles more tender.
  • Cook the waffles on a hot waffle iron. This will help them to cook evenly and get crispy on the outside.
  • Serve the waffles warm with your favorite toppings. Some popular toppings include butter, syrup, whipped cream, and fruit.

Conclusion:

Pumpkin spice waffles are a delicious and easy fall breakfast. They're perfect for a cozy weekend morning or a special occasion brunch. With a few simple ingredients and a little bit of time, you can make these waffles at home and enjoy the taste of fall in every bite.
