2 cups fresh basil, firmly packed
1/2 cup fresh parsley
1/2 cup parmesan cheese
3 large garlic cloves
1 teaspoon salt
1/4 cup pine nuts
1/2 cup extra virgin olive oil
1 tablespoon white vinegar
1 lb pasta, cooked and kept warm
6 plum tomatoes, seeded and chopped
salt & pepper
3 tablespoons pine nuts, toasted

Steps:

  • For the pesto, in a food processor or blender, finely chop basil,parsley, parmesan cheese, garlic ,salt and the 1/4 Cup of pine nuts.
  • Add the olive oil and vinegar.

8 ounces angel-hair pasta

1 lb pasta, corkscrew (or orzo)
1 tablespoon butter
3 tablespoons sun-dried tomatoes packed in oil, packed
1 cup prepared pesto sauce
1/2-1 cup grated parmesan cheese
1/8 teaspoon red chili pepper flakes
1/8 teaspoon ground black pepper
1/4 teaspoon garlic powder
1/4-1/2 cup pine nuts, toasted
salt, if needed

Steps:

  • Cook the corkscrew pasta (or you can use orzo pasta) in salted boiling water until tender.
  • Drain and stir in the butter.
  • Let cool for about 15 minutes.
  • Transfer the pasta to a large serving bowl.

12 ounces fusilli or other spiral-shaped pasta
5 tablespoons olive oil
2/3 cup pine nuts, toasted
2/3 cup chopped drained oil-packed sun-dried tomatoes (about 3 ounces)

1/2 cup grated Parmesan cheese (about 1 1/2 ounces)
