Time 5h25m

Yield 1 deep-dish pie

Number Of Ingredients 16

2 1/2 cups all-purpose flour (see Cook's Note), plus more for dusting
2 tablespoons granulated sugar, plus extra for sprinkling
1 teaspoon fine salt
1/4 cup chilled vegetable shortening
12 tablespoons cold unsalted butter, cut into cubes, plus extra for the pan
4 to 5 tablespoons ice water
2 1/2 pounds peach wedges (from 8 to 10 medium peaches), thawed and drained if frozen
3/4 cup light brown sugar
1/3 cup quick-cooking tapioca
1/2 teaspoon ground cinnamon
1/2 teaspoon vanilla extract
1/4 teaspoon ground nutmeg
1/4 teaspoon salt
Juice of 1 lemon
Oil, for oiling the foil
1 tablespoon heavy cream

Steps:

  • For the crust: Put the flour, granulated sugar and salt in the bowl of a food processor and pulse to combine. Add the shortening and pulse until it looks like cornmeal. Add the butter and pulse until the butter is about the size of a pea. Add 4 tablespoon ice water and pulse until the dough starts to come together but is still crumbly (add the remaining tablespoon water if necessary). Divide the dough into 2 pieces, one made from a third of the dough and the other from the remaining two-thirds of the dough. Form each into a disc and wrap in plastic. Refrigerate for 30 minutes or up to overnight.
  • For the peach filling: Combine the peach wedges, light brown sugar, quick-cooking tapioca, cinnamon, vanilla extract, nutmeg, salt and lemon juice in a large bowl and toss to coat. Set aside.
  • Lightly butter an 8-inch springform pan. On a lightly floured surface, roll the larger piece of dough into a 14-inch circle, about 1/4-inch thick.
  • Roll the dough onto a rolling pin, then unroll it into the pan, patting it in gently, leaving a 1-inch overhang. Pour in the filling.
  • Roll out the other piece of dough into a 10-inch circle about 1/8-inch thick and place it over the filling; press the crust edges together and trim any excess, leaving a 1-inch overhang. Roll up or pinch the overhang to seal.
  • Place a foil-lined baking sheet on a rack in the lower third of the oven and preheat to 450 degrees F. Wrap an oiled, wide band of foil around the edge of the pan like a collar to protect the crust. Make slashes in the top of the crust and chill the pie 30 minutes.
  • Place the pie on the foil-lined baking sheet and immediately reduce the oven to 400 degrees F. Bake the pie for 1 hour. Remove the foil band, brush the crust with heavy cream and sprinkle with some granulated sugar. Continue to bake until golden brown, about 45 minutes more. Let cool 1 hour, then carefully remove the edge of the pan. Let cool completely, about 1 more hour, before slicing.

I acquired this delicious peach pie filling recipe some 40 years ago, when my husband and I first moved to southern Iowa and had peach trees growing in our backyard. BRANDIED PEACH CUSTARD PIE

Brandied Peach Custard Pie image

Provided by Emeril Lagasse

Categories     dessert

Yield 1 9-inch pie

Number Of Ingredients 19

4 whole peaches, peeled and cut into 1/4-inch wedges
3 tablespoons butter
1/2 cup sugar
1/4 cup brandy
2 cup heavy cream
4 eggs
1/2 cup brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1 unbaked pie crust (recipe follows)
Shaker with powder sugar
Fresh mint
Pastry bag of whipped cream
Pie Crust:
2 cup flour
1/4 teaspoon salt
1 1/2 teaspoon sugar
1 cup solid vegetable shortening
1/2 cup ice water

Steps:

  • Preheat the oven to 450 degrees.
  • For the peaches: Over high heat, in a saute pan, heat the butter. When the butter is hot add the sugar. Stir until the sugar is dissolved. Add the peaches and saute for 5 to 6 minutes, or until the sugar starts to turn dark amber in color. Incorporate the brandy into the peach mixture. Carefully ignite the brandy and flambe the peaches. Remove from heat and allow to cool, about 10 minutes.
  • For the custard: In a mixing bowl, whisk all the ingredients together until fully incorporated. In an unbaked pie crust, spoon the brandied peaches over the pie crust. Place the crust in the oven and pour the custard into the shells. This prevents spilling the custard in the oven. Bake for 1 hour or until the custard sets. Place foil around the crust for the first 30 minutes and then remove. This keeps the crust from getting too brown. Allow to cool for about 30 minutes. Place a slice of the pie on the plate and garnish with powder sugar, whipped cream, and fresh mint.
  • For the crust: In a mixing bowl, combine the flour, salt and sugar. Add the shortening and work it through with your hands until the mixture resembles coarse crumbs. Add the water, 1 tablespoon at a time, and work it in with your hands until you have a smooth ball of dough. Wrap the dough in plastic and refrigerate for at least 30 minutes. Remove the dough from the refrigerator and place it on a lightly floured surface. This recipe will make two pie crusts.
  • For the individual crust: Divide the dough into fourths. Roll out the dough on the floured surface into a circle about 5 inches in diameter and 1/8-thick.
  • For the whole pie crust: Roll out the dough on the floured surface into a circle about 14 inches in diameter and 1/8 inch thick. Gently fold the circles of dough in half and then in half again so that you can lift it without tearing it, and unfold into a 9-inch pie pan.

Greg's Hot Peach Pie image

Homemade crust, fresh peaches and a little habanero make a pie with the perfect combination of sweet and spicy.

Provided by Greg H

Categories     Desserts     Pies     Fruit Pies     Peach Pie Recipes

Time 1h40m

Yield 8

Number Of Ingredients 10

1 ½ cups all-purpose flour
½ teaspoon salt
9 tablespoons cold unsalted butter, cut into 1/4-inch cubes
3 tablespoons ice-cold peach nectar, or as needed
4 large fresh peaches - peeled, pitted and chopped
6 large fresh peaches - peeled, pitted, and sliced
3 habanero peppers, seeded and minced (wear gloves), or to taste
⅓ cup all-purpose flour
1 cup white sugar
¼ cup unsalted butter, softened

Steps:

  • Place 1 1/2 cup of flour and the salt into the work bowl of a food processor, and pulse briefly once or twice to combine. Add 9 tablespoons of chilled unsalted butter, and pulse 4 or 5 times, a few seconds per time, until the mixture looks like coarse crumbs. With the machine running, drizzle the peach nectar into the dough, 1 tablespoon at a time, until the dough gathers itself into a crumbly mass. Transfer the dough into a bowl, form into a ball, and wrap it in plastic wrap. Refrigerate to hydrate the dough, about 30 minutes.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the 4 chopped peaches into the food processor, and pulse to puree, about 1 minute. Add the minced habanero peppers, 1 teaspoon at a time, and puree until smooth. Place the remaining 6 sliced peaches into a bowl, and toss lightly with the habanero puree.
  • In a bowl, mix 1/3 cup of flour, the white sugar, and 1/4 cup of softened unsalted butter until it forms a crumbly mixture; set the streusel aside.
  • Cut the dough in half, and roll each half into a circle about 10 inches in diameter. Fit one dough circle into a 9-inch pie dish. Pour the peach-habanero filling into the bottom pie crust, and sprinkle with the crumbly sugar streusel. Fit the top crust onto the pie, and crimp with a fork to seal the edges. Cut several slits into the top crust for venting steam.
  • Bake in the preheated oven until the crust is golden brown and the filling is bubbling and thickened, about 50 minutes.

PILED HIGH LEMON MERINGUE PIE

Piled High Lemon Meringue Pie image

Found this in Canadian Family Circle magazine many years ago & loved it. Hope you enjoy it too.

Provided by Heydarl

Categories     Pie

Time 1h5m

Yield 8 serving(s)

Number Of Ingredients 13

1 1/2 cups plain flour
1/2 teaspoon baking powder
125 g butter, chilled
2 tablespoons cold water
1/2 cup plain flour
1/2 cup cornflour
1 cup caster sugar
1 1/4 cups lemon juice
1 cup water
125 g butter
6 egg yolks
6 egg whites
1 1/2 cups caster sugar

Steps:

  • Brush a 23cm fluted flan tin with melted butter or oil. Place flour, baking powder and butter in food processor.
  • Process for 30 seconds using the pulse action. Add water and process a further 30 seconds or until the mixture comes together.
  • Turn onto a lightly floured surface and press together until smooth. Roll out the pastry between 2 sheets of plastic wrap, to cover base and side of the tin.
  • Ease pastry into the tin and trim edges. Cover with plastic wrap and refrigerate 20 minutes.
  • Preheat oven to moderate 180°C/350°F Cut a sheet of greaseproof paper to cover pastry-lined tin.
  • Spread a layer of dried beans or rice evenly over the greaseproof paper. Bake for 10 minutes, then remove from the oven and discard paper and beans. Return the crust to the oven and bake for a further 10 minutes or until it is lightly golden. Allow to cool completely.
  • To make filling: Combine flour, cornflour and sugar in a medium pan. Gradually stir in lemon juice and water and blend until smooth. Stir over a low heat until mixture boils and thickens.
  • Remove from heat, stir in butter and egg yolks. Return to low heat and stir until butter has melted. Cover with plastic wrap and cool completely. Place in prepared pastry.
  • To make topping: Beat egg whites in a large, clean, dry mixing bowl with electric beaters until stiff peaks form. Add sugar gradually, beating constantly until mixture is glossy and thick.
  • Preheat oven to moderately hot 210°C.
  • Spread the filling over the pastry base and then spoon the meringue on top of the filling, spreading it to the edges of the pie to seal. Peak the meringue using a flat bladed knife.
  • Bake for 5 minutes or until meringue is lightly browned on top.
  • NOTE: For best baking results make the pastry and the filling the day before and store separately. The meringue only needs to cook for about 5 minutes - enough for it to brown lightly. If left in the oven too long, the pie filling will warm and this makes the pie difficult to cut.

Tips:

  • Use fresh peaches: Fresh peaches have the best flavor and texture for peach pie. If you can't find fresh peaches, you can use frozen or canned peaches, but the flavor will not be as good.
  • Peel and slice the peaches thinly: This will help them to cook evenly.
  • Add sugar and spices to the peaches: This will help to enhance their flavor.
  • Use a combination of flour and cornstarch as a thickener: This will help to create a thick, glossy filling.
  • Don't overcook the pie: The filling should be bubbly and the crust should be golden brown.
  • Let the pie cool before serving: This will help the filling to set.

Conclusion:

Peach pie is a classic summer dessert that is easy to make and always a crowd-pleaser. With its sweet, juicy filling and flaky crust, it's the perfect way to enjoy the season's best peaches.
