Tips:

  • To ensure evenly cooked and juicy chicken, start by patting the chicken quarters dry with paper towels to remove excess moisture. This will help the marinade penetrate the chicken more effectively.
  • Feel free to adjust the amount of pineapple juice or chicken broth in the marinade based on your desired consistency. If you prefer a thicker marinade, use less liquid. For a thinner marinade, add more liquid. Marinate the chicken for at least 30 minutes, but preferably for several hours or overnight to allow the flavors to fully develop.
  • To achieve a perfectly charred and smoky flavor, grill the chicken over medium-high heat. If you don't have a grill, you can also cook the chicken in a grill pan over medium heat.
  • Baste the chicken with the reserved marinade throughout the grilling process. This will help keep the chicken moist and prevent it from drying out.
  • Serve the pineapple BBQ chicken quarters immediately with your favorite sides, such as grilled pineapple slices, coleslaw, or potato salad.

Conclusion:

In conclusion, pineapple BBQ chicken quarters are a delicious and easy-to-make dish that is perfect for any occasion.
