1 cup chopped pecans, toasted, divided

1 can (4 ounces) chopped green chilies, drained
2 tablespoons chopped roasted sweet red pepper
1/2 teaspoon garlic powder
Assorted fresh vegetables

2 (20 ounce) cans pineapple chunks, drain and reserve juice
3/4 cup sugar
6 tablespoons flour
2 cups sharp cheddar cheese, grated
1/2 cup butter, melted
1 cup cheese crackers, crumbled

Steps:

  • Preheat oven to 350 degrees.
  • In a large bowl combine flour and sugar, then add 6 tablespoons of reserved pineapple juice.
  • Add butter, cheese and pineapple. Mix until combined.

1 cup white sugar
¾ cup all-purpose flour
2 cups shredded sharp Cheddar cheese
25 buttery round crackers, crumbled
½ cup melted butter

  • Spread pineapple in the bottom of a 2 quart casserole dish.
