I love pineapple smoothies. In this one I use carrot juice for the liquid and it works beautifully, as it's neither too sweet nor too acidic.

Number Of Ingredients 7

1/4 ripe pineapple, cored, skinned and cut into 1-inch pieces (about 1 heaped cup, or/ 7 ounces)
1 tablespoon soaked chia seeds (1 teaspoon dry unsoaked)
1 tablespoon sunflower seeds, soaked overnight in water and drained
1/2 cup carrot juice
1 tablespoon flat-leaf parsley leaves, firmly packed
4 to 5 fresh mint leaves
Ice cubes

Steps:

  • To soak the chia seeds, place in a jar or bowl and add 4 tablespoons water for every tablespoon of chia seeds. Place in the refrigerator for several hours or overnight. The seeds and water will be become gelatinous.
  • Scoop up a tablespoon of seeds with the gooey liquid and place in a blender (don't worry, your smoothie won't have this consistency). Add the remaining ingredients and blend for 1 full minute at high speed.

2 1/2 cups liquid -water (oranger juice, or coconut milk work well)
2 cups spinach
1 tablespoon psyllium husk
1 tablespoon chia seeds
2 tablespoons unsweetened coconut flakes
1 banana
1 cup frozen pineapple chunks

Steps:

  • Put the ingredients in a blender in the order listed. Blend until smooth and pour into two tall glasses.
  • Serve immediately.

I'm not sure that I would order this just based on the name. But believe me, you'll be pleased by this herbal concoction. Pineapple has so much sweetness and flavor on its own, and it marries well with the peppery, anisy basil. Very little else is required (no banana in this smoothie). I like to use kefir, but yogurt will work too. Pistachios and chia seeds bulk up the drink nicely, and the pistachios contribute to the pale green color.

1/4 ripe pineapple, peeled, cored and cut into chunks (about 6 ounces)

2 or 3 ice cubes

Steps:

  • Place all of the ingredients in a blender and blend at high speed for 1 minute, or until smooth. Serve.
