Steps:

  • Pour 1/3 cup pineapple juice, 1/3 cup lemonade, and 1/3 cup ginger ale into each of 4 large glasses. Add ice cubes or crushed ice, as desired. Garnish with fresh pineapple wedges.

½ cup butter
1 cup self-rising flour
1 cup white sugar
1 cup milk
1 (15 ounce) can pineapple chunks, drained
½ cup brown sugar
1 (4 ounce) jar maraschino cherries, halved

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). In a 9x13 inch baking dish, melt the butter in the oven.
  • In a medium bowl, stir together flour, white sugar, and milk until smooth. Pour batter into the prepared dish.
  • In a separate bowl, toss pineapple with brown sugar until fruit is well coated. Drop pineapple mixture by spoonfuls into the batter. Sprinkle with cherries.
  • Bake 30 minutes in the preheated oven, until golden.

2 cups chopped peeled seeded papaya (about 1 large)
2 cups cubed peeled fresh pineapple
2 teaspoons grated peeled fresh ginger
4 cups chilled tropical fruit juice blend (such as pineapple, orange and banana)
2 cups crushed ice
2 cups chilled bottled sparkling water

Steps:

  • Finely chop papaya, pineapple and ginger in processor. With machine running, add 1 cup juice; process until mixture is almost smooth. Pour into large pitcher. Mix in remaining juice. (Can be made 6 hours ahead. Refrigerate.) Stir in crushed ice. Gradually pour in sparkling water. Stir until blended and serve.

1 (20 ounce) can unsweetened pineapple chunks
3 tablespoons white sugar
6 tablespoons butter, melted
3 tablespoons all-purpose flour
5 ounces shredded Cheddar cheese
25 buttery round crackers, crumbled

Steps:

  • Drain pineapple, reserving 3 tablespoons juice.
  • Combine pineapple, reserved juice, sugar, butter or margarine, flour, and cheese. Mix well. Spoon mixture into a buttered 1 1/2 quart baking dish; top with cracker crumbs.
  • Bake at 350 degrees F (175 degrees C) for 30 minutes, or until bubbly.
