Categories     Food & Cooking     Dessert & Treats Recipes

Number Of Ingredients 5

2 forty-ounce cans sweet potatoes in heavy syrup, drained
8 tablespoons (1 stick) unsalted butter, cut into 8 pieces
1 twenty-ounce can crushed pineapple
1 cup maple syrup
1 package of large marshmallows, (10-ounces)

Steps:

  • Preheat oven to 350 degrees. Place sweet potatoes, butter, pineapple, and maple syrup in a 9-by-13-inch glass baking dish. Combine well, using a potato masher. Place in oven, and bake until bubbling, about 45 minutes. Top with marshmallows, and continue to bake until marshmallows are soft but not completely melted, about 15 minutes.

Tips:

  • Choose the right type of sweet potatoes: For the best texture and flavor, use firm, medium-sized sweet potatoes. Avoid using sweet potatoes that are too large or have blemishes.
  • Cook the sweet potatoes thoroughly: To ensure that the casserole is cooked through, bake it for at least 45 minutes, or until the sweet potatoes are tender when pierced with a fork.
  • Use fresh pineapple: Fresh pineapple adds a bright, tropical flavor to the casserole. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well before adding it to the casserole.
  • Don't overmix the casserole: Overmixing the casserole can make it dense and gummy. Stir the ingredients together gently until just combined.
  • Use a variety of marshmallows: For a fun and festive look, use a variety of marshmallows, such as mini marshmallows, regular marshmallows, or even colored marshmallows.

Conclusion:

Pineapple sweet potato casserole is a delicious and easy-to-make side dish that is perfect for any occasion. With its sweet and tangy flavor, this casserole is sure to be a hit with everyone at your table. So next time you're looking for a new side dish to try, give pineapple sweet potato casserole a try.
