1 cup water
¼ cup soy sauce
5 tablespoons soy sauce
1 tablespoon dark molasses
½ tablespoon fresh ground ginger
1 teaspoon minced garlic
¼ cup water
2 tablespoons cornstarch
3 tablespoons vegetable oil
1 tablespoon minced garlic
1 teaspoon red pepper flakes, or to taste
3 large chicken breasts, cut into bite-sized pieces
1 (16 ounce) package frozen oriental-style vegetables
1 (8 ounce) can sliced water chestnuts
1 (8 ounce) can pineapple tidbits in juice, drained and juice reserved
1 tablespoon cornstarch
⅛ teaspoon sesame oil

Steps:

  • Combine water, 1/4 cup plus 5 tablespoons soy sauce, molasses, ginger, and garlic in a saucepan and bring to a gentle boil, about 5 minutes. Combine water and cornstarch in a bowl; add to saucepan and stir until slightly thickened, about 3 minutes. Set sauce aside.
  • Heat oil in a large wok or frying pan over medium heat until sizzling. Add garlic, red pepper flakes, and chicken. Cook until chicken is no longer pink inside, 5 to 7 minutes. 2 cups water
1 tablespoon butter
1 teaspoon salt, eyeball it
1 rounded cup white rice
2 tablespoons black sesame seeds, toasted white sesame seeds may be substituted
4 boneless, skinless chicken breasts
4 boneless, skinless chicken thighs
Vegetable oil, for drizzling
Salt and pepper
1 cup chicken broth or water
1-inch ginger root, peeled and chopped
1/4 cup honey
1/2 cup teriyaki sauce
1 tablespoon toasted sesame oil
4 scallions, thinly sliced
1 ripe pineapple

Steps:

  • Preheat a grill pan or large griddle over medium high heat.
  • Bring water to a boil in a small covered pot. Add butter, salt and rice to the pot. Return the water to a boil. Reduce heat to simmer and replace cover. Simmer 18 minutes and remove rice from heat. Take the lid off the pot to cool rice a bit. Scoop rice into balls with an ice cream scoop and your hands. Dampen hands with water to work with rice if it is very sticky. Set rice balls on a plate and sprinkle with black sesame seeds.
  • While your rice is cooking, lightly coat chicken with oil, salt and pepper. Place chicken on hot grill and cook 6 minutes on the first side.
  • While chicken is cooking, bring chicken broth and ginger to a boil. Stir in honey. When honey has dissolved into broth, add teriyaki sauce and sesame oil and reduce heat to simmer.
  • Turn chicken and coat liberally with honey teriyaki sauce using a basting brush. Cook chicken 4 minutes, turn again and baste liberally again with sauce, then cook 2 minutes longer. Remove chicken to a plate. Garnish chicken with sliced scallions.
  • While chicken cooks on the second side, peel and cut a ripe pineapple into 8 spears. Cut off top and bottom of pineapple. Set pineapple upright and trim away skin in strips from top to bottom. Halve pineapple lengthwise and quarter each 1/2, lengthwise. The core is edible, but may be trimmed if you wish. Pineapple can be very acidic. Spears set in cold water for just 1 minute will keep the fruit from stinging your lips when it is eaten. Serve with chicken and rice balls

3/4 cup teriyaki sauce, Lawry's brand
1 teaspoon dijon-style mustard
4 boneless skinless chicken breasts (cut into 1 inch pieces)
2 bell peppers (cut into chunks)
1 zucchini, cut into slices
12 wooded skewers (12-inch long)

Steps:

  • Reserves 1/4 cup marinade.
  • Combine reserved juice, 1/2 cup marinade and mustard.

3 tablespoons parsley
2 teaspoons ground ginger
1/3 cup brown sugar
1 pinch salt

8 chicken thighs, bone-in and skin-on (2 per person)

1 (3 ounce) can unsweetened pineapple juice

Steps:

  • Preheat your oven to 450 degrees Fahrenheit.
  • Rinse and dry the chicken, then season and place into a roasting pan with a rack in the bottom.

3 chicken breasts, boneless/skinless
1 onion, chopped
1 broccoli head, florets separated
2 medium carrots, sliced on the digonal
4 clove garlic, minced
1/2 c pure pineapple juice
1/2 c *orange juice, fresh or *crystals
1 c honey
1 tsp fresh ginger, minced
1 c teriyaki sauce
1/2 c mirin
2 Tbsp oyster sauce
2 Tbsp szechuan spicy stir-fry sauce
1 1/2 Tbsp sesame oil
2 Tbsp grapeseed oil
1/2 tsp kosher salt, more if needed
1 tsp cracked pepper
1/3 c cornstarch
4 Tbsp butter
1/4 c *grapefruit juice, fresh or *crystals
1 1/2 c water, as needed to dilute

Steps:

  • 1. Make sauce: In a large bowl, add: pineapple juice, *grapefruit juice, *orange juice, teriyaki sauce, mirin, oyster sauce, sesame oil, Szechuan sauce, honey, garlic, ginger, salt, pepper, *and water, if needed. Whisk thoroughly. Add cornstarch and whisk thoroughly. Set aside.
  • 2. Cut the broccoli florets into bite-size pieces. Medium dice the onion Slice the carrots thinly, and on the diagonal.
  • 3. Heat a large skillet on medium-high. Add enough butter and oil to stir-fry the vegetables Stir-fry broccoli, onions, and carrots til tender-crisp. Remove and set aside.
  • 4. Cube chicken breasts, and salt and pepper them. In same skillet, add enough oil to stir-fry the chicken. Add chicken; when almost done, add vegetables back to skillet.
  • 5. Pour sauce into skillet and stir to combine with the chicken and vegetables. Bring to a boil; cook, stirring, for a few minutes, to thicken the sauce.
  • 6. Serve immediately over rice, quinoa, or noodles. Top with sesame seeds. Enjoy!
  • 7. *I sometimes use True Lemon crystals when I'm out of fresh lemon, lime, orange, or grapefruit juice. If you use these crystals, you DEFINITELY need to dilute with 1 1/2 cups of water; and, even if you use fresh juice, you can dilute some, according to your taste.

1/2 cup vinegar
1 teaspoon garlic powder
1/4 cup Worcestershire sauce
1/2 cup Italian salad dressing (I use fat free)
1 -1 1/2 lb boneless chicken breast
cooked rice (4 servings)
1 (4 ounce) can crushed pineapple
3/4 cup cashew pieces
various cooked vegetables, your choice

Steps:

  • Mix the first 7 ingredients and bring to a boil.
  • Cool; divide in half.
  • Use half to marinade 1-1 1/2 pounds boneless chicken breast or chicken breast tenders over night. Refrigerate other half to be used later.
  • Prepare white rice for 4 people, as instructed on bag.
  • Remove chicken from marinade and discard marinade. Grill or broil chicken while rice is cooking.
  • Stir can of crushed pineapple (drained) and about 3/4 cup of cashew pieces into cooked rice.
  • Reheat other half of marinade. Serve grilled chicken over rice mixture with sauce. Also serve any type oriental vegetables you desire (I recommend snowpeas, water chestnuts, cauliflower, broccoli and carrots.)
  • My husband isn't crazy about pineapple so I've started serving it separate from the rice. That way I can add it but he doesn't have to.

1/2 c pineapple paradise teriyaki sauce (prefer kona coast)
2 Tbsp balsamic seasoned rice vinegar
1/4 c panko bread crumbs
2 Tbsp green scallions, finely chopped
3 tsp toasted sesame oil
2 tsp fresh lemon grass, minced
2 clove of garlic, minced
1/2 tsp roasted ground cumin (prefer mccormick gourmet collection)
1 tsp roasted ground ginger (prefer mccormick gourmet collection)
2 Tbsp vegetable oil, for brushing on grill
3/4 c citrus sriracha mayo, recipe follows
36 small butter crackers (use your favorite)
3 c black sesame snow pea slaw, recipe follows

Steps:

  • 1. In a large bowl combine, ground chicken, 2 tablespoons pineapple paradise teriyaki sauce, 1 tablespoon balsamic seasoned rice vinegar, panko bread crumbs, green scallions, 2 teaspoons toasted sesame oil, lemon grass, garlic, cumin, and 1/2 teaspoon roasted ground ginger. From into 36 patties, about 1/2 " thick and 1 3/4" in diameter. (think the size of a your butter cracker) Place on a parchment lined baking sheet. Refrigerate, covered until ready to cook.
  • 2. Preheat a gas grill on medium high heat. Baste grill with vegetable oil. Cook patties until chicken is cooked through about three minutes each side. During the last few minutes of cooking, baste the patties with 1/4 cup of the Pineapple Paradise Teriyaki Sauce.
  • 3. Place 1/2 teaspoon of the Citrus Sriracha Mayo on each butter cracker, top with chicken patty, than about 2 teaspoon of the Black Sesame Snow Pea Slaw. 4 boneless, skinless chicken breasts or thighs
1 1/2 cups long grain white rice
1 20. oz can crushed pineapple
Olive oil
Teriyaki Sauce/Glaze
1/2 cup reduced sodium soy sauce
1/2 cup sugar
1/4 cup cider vinegar
1 teaspoon ground garlic
1/2 teaspoon ground ginger
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon sriracha
2 teaspoons cornstarch

Steps:

  • 1.Whisk together Teriyaki Sauce ingredients in a small bowl. Add 1/3 cup of this sauce plus 1 tablespoon olive oil and chicken to a freezer bag and marinate 1 hour up to overnight. Refrigerate remaining Teriyaki Sauce separately. 2.When ready to cook, strain pineapple juice from crushed pineapple and add water to strained juice to equal 3 ½ cups liquid ("Pineapple Water"). Set aside. 3.Stir reserved Teriyaki Sauce and add to large skillet (nonstick works best). Bring to a boil then reduce to a simmer until slightly thickened, stirring constantly (glaze will continue to thicken upon standing). Remove Teriyaki Glaze to same bowl it was refrigerated in. 4.Wipe skillet (doesn't have to be thorough) and heat 1 tablespoon olive oil over high heat. Let excess marinade drip off chicken and add to skillet. Cook over medium high heat for 5 minutes on each side (3 minutes on each side for thighs) or until nicely browned (will not be all the way cooked through) and remove to a plate. 5.Wipe skillet and add 1 tablespoon olive oil and Pineapple Water. Bring to a simmer then stir in crushed pineapple and rice. Cover, reduce to medium low and cook for 12 minutes. Stir rice and nestle chicken on top and brush with Teriyaki Glaze. Cover and continue to cook for an additional 8-12 minutes or until rice and chicken are cooked through. 6.Brush chicken with additional Teriyaki Glaze and season rice with freshly cracked salt and pepper. Add sriracha for some heat if desired.

2 3/4 lbs boneless skinless chicken breasts
4 cups Teriyaki sauce
3 pineapple fruit cups, or sliced pineapple
1/4 cup brown sugar
Butter for preparing the chicken

Steps:

  • Preheat skillet at medium temperature and coat in butter or margerine. Chop chicken breasts into 1 inch cubes, making sure there are no large chunks. Place chicken into skillet, and add more butter if needed. Stir chicken constantly until all pieces are thoroughly cooked and are a white to light brown color. Drain any extra butter, and pour in 1 1/2 cup of teriyaki sauce and the juice from 1 fruit cup. Do not add the fruit pieces yet, only the juice. Stir in 1/4 cup of dark brown sugar. Stir for 5-10 minutes, and pour 1 1/2 cup more teriyaki and all of the contents of the fruit cups. Place lid over skillet and lower heat. Simmer for fifteen minutes, and remove from heat, stirring again. This dish is wonderful with white rice.

1 can(s) 20-oz. can pineapple rings, drained
1 c lawry's teriyaki marinade

  • 1. Preheat oven to 375 degrees F. Spray a 13x9x2 inch glass baking dish with nonstick cooking spray.
  • 2. Arrange chicken in dish and top each with a pineapple slice, onion and pepper slice. Drizzle the chicken with marinade.

A delicious teriyaki marinade - made with soy sauce, brown sugar, ginger, and garlic - lends a sweet, briny flavor to chicken or tofu (or both).

4-6 boneless
1/2 cup vegetable oil
1 cup soy sauce
3 tablespoons brown sugar
4 cloves garlic (minced)
2 tablespoons minced fresh ginger root
2 tablespoons sherry
1 fresh pineapple (peeled, cored, and cut into rings)

Steps:

  • In a small bowl, whisk together the vegetable oil, soy sauce, brown sugar, garlic, ginger, and sherry.
  • Prep the chicken
  • Cut off any fat and place in a large Ziploc bag. With a rolling pin, pound chicken to 1/2 inch thickness. Pour in the marinade (or half the marinade if doing 1/2 chicken and 1/2 tofu) and place the bag of chicken in the fridge. Let the chicken marinate for 6 - 8 hours, turning once or twice if you can.
  • Prep the tofu
  • Press the block of tofu to help get some of the moisture out. The best way to do this, I've found, is to line a plate with five or six paper towels, put the block of tofu on there, add another paper towel or two on top, and top with about four dinner plates. Let the dinner plates weigh down the tofu, pressing out the extra moisture, for 10-15 minutes. But watch your plates! Sometimes the tofu sinks down on one side and your plates are in danger of tumbling. Now lay the tofu slab on its back and slice into 5 - 6 slices about 3/4 inches wide (or 2 - 3 slices if using 1/2 chicken and 1/2 tofu). Lay tofu in a shallow bowl or pan and pour the marinade on the top. Unless you like your food salty (I admittedly do), I'd suggest marinating tofu for no more than a couple hours.
  • Cook it up
  • Heat your grill to about 350-375 degrees, pull your chicken and/or tofu out of the fridge, and plop it on the grill. Turning often (be very careful with the tofu), grill for about 15 minutes or until the chicken is no longer pink inside and the tofu is just getting crisp around the edges and has dark grill lines.
  • Grill the pineapple slices for about 2-3 minutes on each side and serve along side the chicken and/or tofu.

Tips:

  • Use fresh pineapple for the best flavor. If you don't have fresh pineapple, you can use canned pineapple, but be sure to drain it well.
  • To make the teriyaki sauce, you can use store-bought teriyaki sauce or make your own. If you're making your own, be sure to use a good quality soy sauce and brown sugar.
  • To grill the chicken, you can use a grill pan or an outdoor grill. If you're using a grill pan, be sure to preheat it over medium-high heat before adding the chicken.
  • Cook the chicken until it is cooked through, but not overcooked. Overcooked chicken will be dry and tough.
