Time 55m

Number Of Ingredients 10

1 cup all-purpose flour
3 tablespoons white sugar
1 tablespoon unsweetened cocoa powder
½ cup butter
1 (14 ounce) can sweetened condensed milk
2 cups chocolate chips
1 ½ cups confectioners' sugar
3 tablespoons butter
3 tablespoons maraschino cherry juice
1 (1 ounce) square semisweet chocolate, chopped

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease an 8 inch square baking pan. In a medium bowl, stir together flour, white sugar, and cocoa powder. Cut in butter until the texture is mealy. Pat into the bottom of the prepared pan.
  • Bake for 10 minutes in the preheated oven. In a saucepan over medium-low heat, combine the sweetened condensed milk and chocolate chips. Cook, stirring frequently until chips are melted and the mixture is smooth. Pour over the baked crust.
  • Return to the oven, and bake for 15 minutes. Remove, and cool in the pan over a wire rack.
  • In a medium bowl, mix together the confectioners' sugar, butter, and cherry juice. Spread over the cooled filling in the pan. Melt semisweet chocolate in a small glass dish in the microwave, or in a metal bowl over a pan of simmering water, stirring occasionally until smooth. Place in a plastic bag or piping bag, cut the tip to 1/8 inch, and drizzle the chocolate over the bars in a back and forth motion to make stripes. Cool completely before cutting into squares.

PINK LADY SQUARES

This is another of our family favorites that makes for an excellent addition to the serving tray. Looks very appealing on the holiday platter and great for special occasions. I often substitute the graham crumbs with crushed Nillas. Just as good untinted - but as my mom reminds me " always make the icing using the juice from a real lemon" - realemon will work but she's right ... that lemon juice makes for awesome!

Tips:

  • Choose ripe, sweet mangoes: The quality of your mangoes will greatly impact the taste of your lassi. Look for mangoes that are fully ripe, with a deep yellow or orange color and a sweet, fragrant smell.
  • Use full-fat yogurt: Full-fat yogurt will give your lassi a richer, creamier texture and a more satisfying flavor. If you prefer a thinner lassi, you can use low-fat or non-fat yogurt, but be prepared for a slightly less creamy texture.
  • Add sugar or honey to taste: If your mangoes are not very sweet, you may want to add a little sugar or honey to your lassi to taste. Start with a small amount and add more until you reach the desired sweetness.
  • Use chilled ingredients: Chilled ingredients will help to make your lassi more refreshing and enjoyable. Chill your yogurt, milk, and mangoes before blending.
  • Add a pinch of salt: A pinch of salt will help to balance the sweetness of the lassi and enhance the flavor of the mango.
  • Garnish with your favorite toppings: You can garnish your lassi with a variety of toppings, such as chopped nuts, pistachios, or rose petals. These toppings will add extra flavor and texture to your drink.

Conclusion:

Pink lassi is a delicious and refreshing drink that is perfect for any occasion. It is easy to make and can be customized to your own taste preferences. With its beautiful pink color and sweet, tangy flavor, pink lassi is sure to be a hit with everyone who tries it.
