RASPBERRY JELLY

Raspberry Jelly image

To determine whether or not the jelly is done cooking, use a candy thermometer and the "sheeting method," described below. Don't use overripe fruit for jelly, as it may not set up well.

Provided by Martha Stewart

Categories     Food & Cooking     Breakfast & Brunch Recipes

Time 5h

Yield Makes 3 to 3 1/2 cups

Number Of Ingredients 5

3 pounds raspberries
1 1/2 cups water
Sugar
2 tablespoons fresh lemon juice
Coarse salt

Steps:

  • Combine fruit and water in a saucepan. Bring to a boil, reduce to a simmer, and cook, partially covered, mashing occasionally with a potato masher, until fruit is very soft, 10 to 15 minutes. Transfer mixture to a fine sieve set over a heatproof bowl; let drain without pressing on fruit, 4 hours. Strain again through sieve lined with damp cheesecloth. Measure juice; you will have 3 to 4 cups.
  • In a large heavy-bottomed pot, bring juice to a boil. Add 3/4 cup sugar for each cup of juice. Add lemon juice and 1/4 teaspoon salt. Return to a boil and cook, stirring frequently, 8 to 12 minutes. To test if jelly is done, dip a large metal spoon in, lift it horizontally above pot, and let mixture drip back in. Jelly is done when mixture has thickened slightly and drops of it slide together off spoon in a sheet. (Temperature should register 221 degrees on a candy thermometer.) Skim foam from top.
  • Ladle jelly into clean containers, leaving 3/4 inch of headroom. Let cool completely. Cover, label, and refrigerate up to 1 month, or freeze up to 1 year.

RASPBERRY HABANERO PEPPER JELLY

Raspberry Habanero Pepper Jelly image

I make large batches of this (by popular demand!) for Christmas baskets. You can make it as hot or mild as you like but I use at least 4 habaneros. Pour it over a block of softened cream cheese and serve with crackers; use as a glaze for ham or pork; great on a ham sandwich.

Provided by Momofthree

Categories     Jellies

Time 1h

Yield 10-12 4 oz. jars

Number Of Ingredients 8

3 -5 habanero peppers, deseeded and membranes removed (Be sure to wear gloves when doing this... those babies are HOT. And don't touch your eyes or mouth b)
2 sweet red peppers
1 sweet green pepper
12 ounces frozen raspberries, defrosted and put through a food mill with fine disc
2 1/4 cups water (**or a mixture of the raspberry juice from defrosted raspberries and water to make the total)
1 cup vinegar
1 3/4 ounces sure-jel dry pectin (powder, not liquid)
4 cups sugar

Steps:

  • Chop up peppers in a processor until they are chopped fine. Put all but ¼ cup peppers in a saucepan with raspberries and water. Bring to a boil; cover and reduce heat to simmer and cook 15 minutes. Press through a sieve or a jelly bag. You should have 2 cups prepared juice. (Sometimes I have more juice than needed so I freeze it for another batch).
  • Return juice to a clean pot. Add vinegar and reserved chopped peppers. Cool 15 minutes.
  • Add pectin. Bring to a boil; add sugar. Bring back to a boil and boil hard for 2 minutes. Remove from heat; skim foam.
  • Ladle into hot ½ pint jars leaving 1/8" headspace.
  • Seal; process in a boiling water bath for 5 minutes (for 4 oz. jars).
  • Note: jelly might be liquidy at first, but gels over the next 1 or 2 days.
  • I usually get anywhere from 10-12 of the 4 oz. jars.

JALAPENO RASPBERRY JELLY

Jalapeno Raspberry Jelly image

I have made jalapeno jelly for years, one year I added raspberries - and will never again make it any other way. It's great on turkey or ham sandwiches. I also melt it slightly and spoon it over cream cheese to serve with crackers.

Provided by Teagen Lefere

Categories     Jams & Jellies

Time 1h10m

Number Of Ingredients 5

12 jalapenos, fresh
2 c apple cider vinegar
6 c sugar
2 1/2 c raspberries (or any other berry or berry mix of your choice)
1 pkg liquid fruit pectin

Steps:

  • 1. Puree peppers with some of the apple cider vinegar. I keep the seeds in the peppers. You can seed for less heat. Add to a 4 c. measuring cup with remaining cider vinegar. Crush berries and add to 4 c. measuring cup to equal 4 cups. ** you can tweek this to taste. My children do not like it very warm, so I'll cut back on the peppers, and add more berries. Just have four cups of produce/vinegar to add to pot with sugar.
  • 2. Add sugar to 8 quart pot. Add jalapenos, berries & vinegar to sugar. Cook to full, hard boil where you can't stir it down. Boil for ten minutes.
  • 3. Add one packet of fruit pectin to hot jam. Stir and boil for one more minute. Remove from heat. Most jalapeno recipes suggest 2 packets. I have made it both ways, and have no problem making it with one packet. I can make more batches using just one.
  • 4. Fill clean jars and seal with warm canning lids and rings as you normally would when making jam. I also turn the ring back just a bit and turn jars upside down for 30-40 minutes.

RED CURRANT & RASPBERRY JELLY

Red Currant & Raspberry Jelly image

I first tried this recipe from the "Complete Book of Small Batch Preserving" when I discovered a red currant bush in our garden. We get so many berries from the bush that I freeze them & make this jelly all year round. My grandchildren don't want store-bought jam anymore!

Provided by CountryLady

Categories     Jellies

Time 1h

Yield 8 cups

Number Of Ingredients 5

4 cups red currants, washed &, stemmed
3/4 cup water
4 cups raspberries
7 cups granulated sugar

  • Using a potato masher, crush currants in a very large stainless steel or enamel saucepan.
  • Add water& bring to a boil over high heat.
  • Reduce heat, cover& boil gently for 10 minutes.
  • Add raspberries, return to a boil& boil gently for 3 minutes.
  • Strain mixture through a coarse sieve, pressing pulp to extract juice& discarding the solids.
  • If you want, you can now pour the juice through a jelly bag (cheesecloth)- I'm lazy& don't do this!
  • You should have 4 cups of juice - when I don't get that amount, I top up with cranberry cocktail - combine juice with sugar in a very large stainless steel or enamel saucepan.

  • Remove from heat, stir in pectin& ladle into sterilized jars, leaving 1/2 inch head space.

RASPBERRY SWIRL JELLY ROLL

Raspberry Swirl Jelly Roll image

The light and fluffy texture of sponge cake makes it malleable -- ideal for this classic dessert, which gets its name from its trademark shape. Martha made this recipe on "Martha Bakes" episode 604.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Number Of Ingredients 10

Unsalted butter, for pans
3/4 cup all-purpose flour, plus more for pans
3/4 cup cornstarch
6 large eggs, separated
3/4 cup plus 6 tablespoons granulated sugar
1 1/2 teaspoons pure vanilla extract
1/4 teaspoon salt
Confectioners' sugar, for dusting
1 1/2 cups heavy cream
1/3 to 1/2 cup good-quality raspberry jam, strained

Steps:

  • Preheat oven to 350 degrees. Butter bottom and sides of an 11-by-17-inch rimmed baking sheet. Line pan with parchment paper and butter again. Dust with flour; tap out excess. In a small bowl, sift together flour and cornstarch.
  • In the bowl of an electric mixer fitted with the whisk attachment, beat egg yolks, 3/4 cup granulated sugar, vanilla, and salt on high speed until thick and pale, about 3 minutes. Transfer egg-yolk mixture to a large bowl. Wash and dry mixer bowl and whisk attachment.
  • Place remaining egg whites in mixer bowl, and whisk on medium speed until soft peaks form, about 1 1/2 minutes. With mixer running, slowly add remaining 6 tablespoons granulated sugar; continue whisking until stiff and glossy, about 1 minute more.
  • Fold egg-white mixture into egg-yolk mixture. In three additions, sift reserved flour mixture into egg mixture, folding to combine after each addition. Transfer batter to prepared baking sheet, smoothing top with an offset spatula. Bake until light golden brown and a cake tester inserted in the center comes out clean, about 20 minutes.
  • Run a knife around the sides of cake. Invert onto a kitchen towel dusted with confectioners' sugar; remove parchment. Lightly dust with confectioners' sugar using a sieve. Using the towel and starting at a short end, roll up cake and towel. Let cool completely, seam side down.
  • Unroll cake. Whip cream until soft peaks form; mix in jam. Spread on top of cake, leaving a 1/2-inch border. Starting at a short end, roll up cake without towel. Wrap jelly roll cake in towel. Transfer to baking sheet, seam side down to maintain cylindrical shape. Refrigerate at least 30 minutes and up to 3 hours. Dust with confectioners' sugar before slicing and serving.

HAZELNUT-RASPBERRY JELLY ROLL

Hazelnut-Raspberry Jelly Roll image

What sets our hazelnut-raspberry jelly roll apart is its toasty, nutty flavor. Ground hazelnuts are baked into the sponge cake, and hazelnut liqueur, such as Frangelico, is whipped into the cream.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cake Recipes

Time 3h

Yield Makes one 10-inch roll

Number Of Ingredients 11

Vegetable-oil cooking spray
1/2 cup plus 1 tablespoon cake flour (not self-rising), plus more for pan
1/3 cup skinned whole hazelnuts, deeply toasted
1/4 teaspoon salt
3 large eggs plus 2 large egg yolks
1/2 cup granulated sugar
1/2 stick unsalted butter, melted but not very hot
3 to 4 tablespoons confectioners' sugar for dusting, plus more for towel
1 cup plus 3 tablespoons high-quality raspberry preserves or jam, such as Bonne Maman (one 13-ounce jar)
1 cup very cold heavy cream
2 tablespoons hazelnut liqueur, such as Frangelico

Steps:

  • Make the cake: Preheat oven to 400 degrees. Coat an 11 1/2-by-17-inch rimmed baking sheet (1/2 inch deep) with cooking spray, and line with parchment. Coat parchment with spray, and dust with flour, tapping out excess. Bring a pot of water to a simmer. Meanwhile, pulse hazelnuts, flour, and salt in a food processor until nuts are finely chopped, about 1 minute. Sift flour mixture, discarding any pieces of nuts in sieve.
  • Whisk together eggs, yolks, and granulated sugar in a heatproof bowl set over a saucepan of simmering water, until sugar dissolves and mixture is warm, about 2 minutes. Remove from heat. Beat with a mixer on medium speed 2 minutes. Raise speed to high, and beat until pale and fluffy, about 4 minutes. Sprinkle flour mixture on egg mixture in 3 additions, folding with a rubber spatula and drizzling in butter toward end of last addition. Spread batter in pan, and bake until top is golden, 7 to 8 minutes.
  • Loosen cake from pan with a paring knife. Dust a clean kitchen towel with confectioners' sugar, and invert cake onto towel. Peel off parchment. Starting from a short side, tightly roll up cake in towel. Let cool completely, about 1 1/2 hours.
  • Make the filling: Unroll cake, and spread with jam, leaving a 1/4-inch border on all sides. Beat cream with liqueur until medium peaks form. Spread cream over jam, leaving a 1-inch border on all sides. Starting from a short side, roll up cake as tightly as possible. Place cake, seam side down, on a baking sheet or in a platter. Refrigerate at least 1 hour and up to 4 hours. Dust with confectioners' sugar, slice, and serve.

Provided by GABREEZY

Categories     Dessert

Time 2h8m

Yield 1 10 1/2, 8 serving(s)

Number Of Ingredients 17

vegetable oil cooking spray, for coating parchment paper
1/2 cup cake flour
1/8 teaspoon baking powder
4 large eggs, separated
1 teaspoon vanilla extract
1/2 cup sugar, divided
1 pinch salt
1 pinch cream of tartar
1/2 teaspoon confectioners' sugar
3 tablespoons vegetable shortening
3 tablespoons unsalted butter
1 cup confectioners' sugar
1 teaspoon vanilla extract
1 cup light corn syrup
1/2 cup raspberry jam
2 tablespoons water
1 1/4 cups toasted unsweetened flaked coconut

Steps:

  • Preheat oven to 350 degrees. Line a 10 1/2" by 15 1/2" jelly roll pan with baking parchment and lightly coat with nonstick vegetable spray.
  • Into a large bowl, sift the flour and baking powder together three times.
  • In a mixing bowl, beat the egg yolks, vanilla, and 1/4 cup of the sugar together until thick, pale yellow and when drizzled, will hold a ribbon shape for 2 seconds on the surface. This should take about 5 minutes.
  • Fold in the flour mixture.
  • In another clean, dry mixing bowl, whisk the egg whites with the pinches of salt and cream of tartar until creamy and foamy. With the mixer still running, sprinkle in the remaining 1/4 cup sugar and whisk until the egg whites hold very soft peaks (the consistency of shaving cream).
  • In thirds, fold the egg whites into the egg yolk mixture. Spread the batter in the prepared pan and bake for 8 minutes, until barely golden. Set the pan on a rack to cool.
  • Make the vanilla cream filling: With an electric mixer, beat together the vegetable shortening and butter until blended. Turn the mixer down to its lowest setting and gradually add the confectioners' sugar. Turn the mixer back up and beat at high speed until light and fluffy, about 5 minutes. At a drizzle, gradually beat in the vanilla and corn syrup until the filling is the consistency of mayonnaise, about 2 minute more.
  • Run the tip of a knife around the edge of the cake to loosen it from the sides. Dust the surface with confectioners' sugar. Flip the cake onto a dry work surface. With a spatula, spread a 1/8" thick layer of vanilla cream over the cake. Mix the preserves and water until smooth, then carefully spread 1/3 of it in a very thin layer over the vanilla cream. Roll up tightly. Spread the rest of the preserves around the outside of the roll. Sprinkle the coconut on a cookie sheet. Roll the cake through the coconut to coat completely. Refrigerate for 1 hour to set, then trim the ends even.

RASPBERRY JELLY ROLL

Raspberry Jelly Roll image

This recipe was featured in an email today from the www.kingarthurflour.com website. "A light, tender spongecake, filled with raspberry jam and showered with confectioners' sugar: this classic dessert refuses to go out of style. Substitute the jam or jelly of your choice; lemon curd makes a lovely filling, too." Pictures and step-by-step instructions are on the website - a "must see!"

Categories     Healthy

Time 36m

Yield 1 cake, 12 serving(s)

Number Of Ingredients 8

6 large eggs, at room temperature
3/4 teaspoon salt
1 1/2 cups granulated sugar
1/3 cup water
2 teaspoons vanilla
1 cup all-purpose flour
3/4-7/8 cup jam
confectioners' sugar, for coating

Steps:

  • Preheat the oven to 375°F Line an 18" x 13" half-sheet pan with parchment or aluminum foil, and grease the parchment or foil.
  • Beat the eggs and salt at high speed until they're foamy.
  • Gradually add the sugar, beating till thick and light-colored, about 3 minutes at high speed of an electric or stand mixer.
  • Gently mix in the water and vanilla.
  • Stir in the flour, scraping the bowl to make sure the mixture is thoroughly combined.
  • Pour the batter into the prepared pan, making sure it spreads into the corners.
  • Bake the cake till it's a light golden brown, and a cake tester inserted into the center comes out clean, about 16 minutes.
  • While the cake is baking, generously sprinkle confectioners' sugar on a smooth dish towel (not terry cloth) larger than 18" x 13". Gently rub/spread the sugar to cover the surface of the towel.
  • Remove the cake from the oven, and turn the pan over onto the towel. Lift off the pan.
  • Peel off the parchment or foil. Starting with a short end, gently roll the warm cake and towel into a log.
  • Let the wrapped cake cool for 30 minutes, or until it's completely cool.
  • Unroll the cooled cake, and lift it off the towel onto a clean work surface.
  • Stir the jam till any lumps have smoothed out, and it's soft enough to spread easily. Spread it over the cake.
  • Roll the cake up, again starting with a short end. Roll fairly tight without squashing; you may see excess jam oozing off the edge when you get to the end. That's OK; just scrape it off and use it on your toast.
  • Sprinkle the cake heavily with confectioners' sugar.
  • Let the cake set for an hour or so before serving. For prettiest slices, cut off each ragged end, and serve in 1" slices. A garnish of fruit, sauce, or whipped cream is always welcome.

PROSECCO AND RASPBERRY JELLY

Prosecco and Raspberry Jelly image

Prosecco and jelly: two of my favourite things. And when combined with raspberries, they make a wickedly celebratory concoction. The reason for putting this in the freezer for the first half an hour is to help set the prosecco bubbles in the jelly. It also works very well with cava.

Provided by Rachel Allen

Categories     HarperCollins     Dessert     Sparkling Wine     Freeze/Chill     Raspberry     Wheat/Gluten-Free     Fat Free     Kidney Friendly     Dairy Free     Peanut Free     Tree Nut Free     Soy Free

Yield Serves 4

Number Of Ingredients 4

3 sheets gelatine
2 ounces caster or granulated sugar
375 milliliters prosecco
4 1/2 ounces raspberries

Steps:

  • Place your chosen glasses or bowls in the freezer for half an hour. Soften the gelatine sheets in a bowl of cold water for 3-5 minutes.
  • Place 2 tablespoons of water and the sugar in a saucepan over a medium-low heat. Stir until the sugar dissolves, then remove from the heat.
  • Remove the gelatine sheets from their soaking water and squeeze out any excess liquid. Transfer the softened gelatine to the hot syrup and stir until dissolved. Set aside to cool for 5 minutes, then pour the prosecco into the syrup. Remove the glasses or bowls from the freezer, pour in the jelly mixture and return to the freezer for half an hour.
  • Take the glasses out of the freezer and place 8-10 raspberries in each jelly, pressing down slightly. Chill the jellies in the fridge for 2-3 hours until fully set.

Jelly Roll-Raspberry Amaretto Recipe - (4.5/5) image

Provided by MJH

Number Of Ingredients 14

3/4 cup sugar
1/4 cup almond paste
1 tsp. Amaretto diSaranno
Cooking spray
2/3 cups flour
1 tsp. baking powder
1/8 tsp. salt
4 jumbo eggs
1 tsp. vanilla extract
1/4 cup powdered sugar, divided
2/3 cup seedless raspberry jam/preserves
1 cup whipping cream
1/2 cup powdered sugar
Fresh raspberries

Steps:

  • Preheat oven to 350 degrees. Combine the sugar, almond paste and amaretto liquor with a blender until well blended. Set aside. Coat a 15 X 10″ jelly roll pan with cooking spray. Line pan with wax paper. Coat paper well with cooking spray. Generously sprinkle wax paper with powdered sugar.....this is a MUST to prevent cake from sticking. Set aside. Combine 2/3 cup flour with baking powder and salt in a medium-sized bowl. Stir with a whisk. Place eggs in a large bowl, beat with a hand-held mixer on high speed until pale and fluffy (about 4 minutes). Gradually add sugar/almond paste mixture with vanilla extract, beating at a medium speed until smooth (about 3 minutes). Fold half of the flour mixture into the egg mixture. Repeat procedure with remaining flour mixture. Spread batter evenly into prepared jelly roll pan. Bake at 350 degrees for 10 minutes and the cake springs back lightly in the center. Loosen cakes from sides of pan and turn it over onto a dishtowel GENEROUSLY sprinkled with powdered sugar. Carefully peel off the wax paper. Sprinkle cake with 2 Tbsp. powdered sugar, cool for one minute. Starting at one end, roll up the cake and towel TOGETHER. Place seam side down on a wire rack and cool completely for about 30 minutes. Carefully unroll the cooled cake and remove the towel. Spread the jam/preserves over the cake. Re-roll the cake back up, placing seam-side down on a platter. Mix the whipping cream and powdered sugar in a medium bowl, beat with hand-held mixer until stiff peaks form. Cut cake into 1″ wide slices with a serrated knife. Top each slice with whipped cream and fresh raspberries.

Tips:

  • Use fresh, ripe raspberries. This will ensure the best flavor and color in your jelly. Look for berries that are deep red and plump, with no signs of bruising or mold.
  • Prepare your jars and lids properly. Wash jars and lids in hot soapy water and rinse well. Then, sterilize the jars by boiling them in a large pot of water for 10 minutes. Keep the jars hot until you're ready to fill them.
  • Use a candy thermometer to measure the temperature of the jelly. This is important to ensure that the jelly reaches the proper consistency. The jelly should reach a temperature of 220°F (105°C) before it is removed from the heat.
  • Let the jelly cool completely before storing it. This will help to prevent the jelly from crystallizing. Once the jelly is cool, store it in a cool, dark place for up to 1 year.
