PISTACHIO BISCOTTI THINS
Steps:
- Preheat oven to 350°F. and line bottom and sides of a 9 1/4 x 5 1/2 x 2 3/4-inch metal loaf pan with parchment paper.
- In a large bowl with an electric mixer beat whites with a pinch salt until they just hold stiff peaks. Gradually beat in sugar and beat until meringue holds stiff, glossy peaks. Sift flour over meringue and fold in with nuts and vanilla gently but thoroughly. Spoon meringue mixture into loaf pan, smoothing top, and bake in middle of oven until golden, 25 to 30 minutes. Cool loaf in pan on a rack 15 minutes and turn out onto rack to cool completely.
- Reduce temperature to 300°F.
- Peel off parchment and with a serrated knife cut loaf crosswise into 1/8-inch-thick slices. Arrange slices about 1/2 inch apart on 2 baking sheets and bake in upper and lower thirds of oven, switching position of sheets halfway through baking, about 20 minutes total, or until pale golden and crisp. Cool cookies on sheets on racks. Cookies keep in an airtight container at cool room temperature 1 week.

Steps:
- Heat oven to 350 degrees. Butter and flour a baking sheet; set aside.
- In a medium bowl, whisk together flour, cocoa powder, baking soda, and salt. In the bowl of an electric mixer, cream butter and sugar until light and fluffy. Add eggs; beat until well combined, scraping down sides of bowl if necessary. Add flour mixture, and stir to form a stiff dough. Stir in pistachios and chocolate chips.
- Transfer dough to prepared baking sheet; form into a slightly flattened log, about 12 by 4 inches. Bake until slightly firm, about 25 minutes. Cool about 5 minutes. Reduce oven to 300 degrees.
- On a cutting board, using a sharp serrated knife, cut biscotti diagonally into 1-inch-thick slices. Arrange biscotti, cut sides down, on baking sheet, and bake until crisp but still slightly soft in the center, about 8 minutes. Serve with pistachio ice cream.
Tips:
- Choose high-quality ingredients, especially the pistachios and butter. Fresh, flavorful ingredients will make a big difference in the final product.
- Don't overwork the dough. Overworking will make the biscotti tough. Mix just until the dough comes together.
- Chill the dough before baking. Chilling helps the dough to firm up and makes it easier to slice and bake.
- Bake the biscotti until they are golden brown and crispy. Underbaked biscotti will be soft and chewy, while overbaked biscotti will be hard and dry.
- Let the biscotti cool completely before storing them. This will help them to crisp up and develop their full flavor.
Conclusion:
Pistachio biscotti are a delicious and easy-to-make cookie that is perfect for any occasion. They are crispy, flavorful, and packed with pistachios. These cookies are also a great way to use up leftover pistachios. With their beautiful green color and nutty flavor, pistachio biscotti are sure to be a hit with everyone who tries them.
