My husband's family just expect this at every gathering and really gripe if I don't make it. Once I was planning something else and they brought the ingredients to the gathering for me to make it.

2 (3 1/2 ounce) packages instant pistachio pudding mix
2 (12 ounce) containers Cool Whip
1 (20 ounce) can crushed pineapple
2 cups chopped walnuts
1/2 cup maraschino cherry
1 (1 lb) bag mini marshmallows

Steps:

  • Chop the cherries into fourths, but reserve a few for the top whole.
  • Mix pudding with cool whip and pineapple with juice.
  • Add walnuts, chopped cherries and marshmallows.
  • Combine well.
  • Refridgerate for at least 24 hours so marshmallows can soften, but can be served after 2 hours.
  • Garnish with whole cherries on top.

3-1/4 cups JET-PUFFED Miniature Marshmallows, divided
2 tubs (8 oz. each) COOL WHIP Whipped Topping, thawed
3 maraschino cherries with stems

  • Combine dry pudding mix, pineapple, nuts and 1 cup marshmallows in large bowl. Gently stir in 1 tub COOL WHIP.

1/4 cup butter, melted
1 (8 oz.) package cream cheese, softened
1 (14 oz.) can Eagle Brand® Sweetened Condensed Milk
1/4 cup lime juice
1 (4-serving size) package instant pistachio flavor pudding mix
1 (8 oz.) can crushed pineapple, undrained
1 cup (1/2 pt.) heavy cream, whipped

  • HEAT oven to 350 degrees F. Combine cookie crumbs and butter. Press firmly into bottom of ungreased 9-inch springform pan or 13 x 9-inch baking pan. Bake 8 to 10 minutes. Cool.

After she died I looked everywhere for it with no luck, until this last Easter when I was looking through my moms cookbooks (She was given all of my grandmothers books). Down on the bottom of a page I notice my grandmothers writing and it was this recipe that she had written in. What a gift! It makes me cry just writing about it. I'm so excited to be able to share it with others and help my grandmother's gift of cooking live on. Hope you like it!

1 cup milk
3 cups marshmallows
2 cups whipping cream (not pre-whipped)
1 (15 ounce) can crushed pineapple
