LAYERED PISTACHIO DESSERT (USES JELL-O PUDDING MIX)
This recipe reminds me of those big, fun family dinners we used to have when I was a kid. This is one of my favorite recipes of my grandmother's. The layers consist of a nutty baked bottom crust, creamy cheesecake-like center and top layer of pistachio pudding. If desired, you could also use any other flavor of pudding mix. Yummy!

Steps:
- Press first three ingredients into a 13" x 9" pan and bake at 350 degrees for 20 minutes. Allow to cool thoroughly.
- Beat Cool Whip, cream cheese and confectionery sugar with electric mixer; spread over cooled crust.
- Beat pudding mix and milk well with electric mixer on low setting. Let mixture stand until set. Then carefully spread over cream cheese layer.
- Cover and refrigerate for one hour. Slice into 2" x 2" pieces.
- Store refrigerated for up to five days.

- 1. Set ice cream out to thaw. I use 1/2 of a 1.5 qt of any kind of vanilla ice cream.
- 2. Place stick of butter in a 9x13 pan and melt in the oven on low temperature. While butter is melting, crush crackers with a rolling pin. Mix melted butter and crackers together and pat down evenly in the pan. Put back in oven for 8-10 minutes until crispy but not brown.
- 3. In a seperate bowl mix together pistachio and vanilla pudding with milk. Add a drop of green food coloring if desired. Fold in ice cream. Pour mixture over crumb crust and refrigerate for one hour to set.
- 4. After one hour spread Cool Whip on pudding/ice cream layer. If desired, sprinkle chopped nuts or cherries or shaved chocolate for decoration. Chill for couple hours before serving.

- Place the crackers into a plastic storage bag and break into crumbs with a rolling pin. Pour crumbs into a bowl and add the melted butter. Spread into the bottom of a 13x9 inch pan to make a crust.
- Bake at 350°F (4 gas marks) for 20 minutes.
- Cool.
- Mix pudding with 2 cups of milk using the directions on the side of the package. Add in softened (not melted) vanilla ice cream.
- Pour over the cooled cracker crust. Top with Cool Whip.
- Use a vegetable peeler to create chocolate curls as garnish across the top.
- Chill until ready to serve.

- 1. Heat oven to 375^. Spray an 8-inch sq. baking dish with cooking spray. --- Beat together butter, and sugar,until light and fluffy. Add flour and stir until almost blended; then stir in 1/3 cup of the pecans. Press evenly into bottom of prepared pan- Bake for 13-15 minutes or until set. Cool completely on wire rack.
- 2. Beat together cream cheese, powdered sugar and about 1 cup of the whipped topping. Spread over cold crust.
- 3. Whisk pudding mix and milk together in a small bowl for 2 minutes or until it thickens. Spread the pudding over cream cheese mixture. Spread remaining whipped topping over pudding mixture, then top with remaining nuts. Chill for 3 hours before serving. Can make this the day before and keep refrigerated.
Tips:
- To make the pistachio pudding, you will need to use unflavored gelatin powder. If you only have flavored gelatin, you can use it, but the flavor of the pudding will be different.
- When you are measuring the milk, make sure to use cold milk. This will help the gelatin to set properly.
- If you do not have a double boiler, you can make the pudding in a heatproof bowl set over a saucepan of simmering water.
- Once the pudding has been made, it needs to be chilled for at least 4 hours before serving. This will allow the pudding to set properly.
