Kosher salt and freshly ground pepper
2 tablespoons extra-virgin olive oil
5 cloves garlic, sliced
1/2 large white onion, sliced
1 1/2 cups baby carrots
2 tablespoons tomato paste

1/2 cup pitted green olives, plus 1/4 cup brine from the jar
8 small red-skinned new potatoes, quartered

Reduce the heat to medium low, cover and simmer until the chicken is cooked through and the potatoes are tender, about 20 minutes. Season with salt and pepper.

Emeril's Braised Chicken Thighs image

"When I'm preparing this dish, it's all I can do to wait until it's finished simmering to get a taste of the awesome gravy. You've simply gotta cook some rice to eat with this, no doubt about it." Recipe courtesy of Emeril Lagasse, "Emeril 20-40-60 Fresh Food Fast".

Time 1h10m

Number Of Ingredients 13

6 chicken thighs (about 2 pounds), trimmed of any excess skin or fat
1 tablespoon Emeril's Original Essence or Creole Seasoning
1 teaspoon salt
1/2 cup plus 1 tablespoon all-purpose flour
2 teaspoons olive oil
3 tablespoons unsalted butter
2 cups thinly sliced yellow onions
1 tablespoon minced garlic
6 sprigs fresh thyme, tied in a bundle, or 2 sprigs fresh rosemary
1/4 teaspoon freshly ground black pepper
3 cups chicken stock or canned, low-sodium chicken broth
1/4 cup chopped fresh parsley
Steamed white rice, for serving

Steps:

  • Season the chicken all over with the Essence and 1/2 teaspoon of the salt. Place the 1/2 cup flour in a small bowl, and quickly dredge both sides of each thigh in the flour, shaking to remove any excess. Set aside.
  • Heat 1 teaspoon of the olive oil in a 10- to 12-inch flameproof casserole or saute pan over medium-high heat. Add 2 tablespoons of the butter, and when it has melted, place the chicken, skin side down, in the pan. Brown for 2 minutes on each side. Remove the chicken from the pan and set aside.
  • Add the remaining 1 tablespoon butter to the pan, and when it has melted, add the onions, garlic, thyme bundle or rosemary sprigs, remaining 1/2 teaspoon then whisk in the chicken stock and increase the heat to high. Return the chicken, skin side down, to the pan, and bring the stock to a boil. Reduce the heat to medium-low, cover the pan with a heavy, tight-fitting lid, and simmer for 15 minutes.
  • Uncover the pan, stir the bottom of the pan to prevent scorching, and turn the chicken skin side up. Cover the pan, and simmer for 20 minutes longer.
  • Stir the bottom of the pan a final time, re-cover, and simmer for 20 more minutes.
  • Remove the pan from the heat and discard the herb bundle or rosemary sprigs. Transfer the chicken to a serving platter. Add the parsley to the sauce, stir to combine, and then spoon the sauce over the chicken. Serve with steamed white rice.

Categories     Chicken Pizza

Time 1h35m

Yield 12

Number Of Ingredients 29

3 ½ pounds boneless, skinless chicken thighs
1 cup plain Greek yogurt
2 tablespoons ginger paste
2 tablespoons garlic paste
1 tablespoon garam masala
2 teaspoons ground cumin
2 teaspoons ground turmeric
2 teaspoons chili powder
1 teaspoon salt
1 teaspoon lemon juice
5 tablespoons unsalted butter
2 medium onions, sliced
2 (14.5 ounce) cans crushed tomatoes
½ cup chicken stock
2 tablespoons ginger paste
2 tablespoons garlic paste
1 tablespoon ground cumin
2 teaspoons chili powder
2 teaspoons ground fenugreek
1 ½ teaspoons ground coriander
1 teaspoon salt
¼ jalapeno pepper, sliced
1 ½ cups heavy cream
1 tablespoon garam masala
2 (9 inch) naan breads
1 tablespoon olive oil, or as needed
8 ounces paneer, grated
¼ jalapeno pepper, sliced, or to taste
2 tablespoons chopped fresh cilantro, or to taste

Steps:

  • Cut chicken into bite-sized pieces. Combine yogurt, ginger paste, garlic paste, garam masala, cumin, turmeric, chili powder, salt, and lemon juice for marinade in a large glass or ceramic bowl. Mix ingredients together, then add chicken and toss to combine. Cover the bowl and refrigerate for at least 30 minutes, or up to 24 hours.
  • Heat butter for sauce in a saucepan over medium-high heat. Add sliced onions and cook until translucent, about 5 minutes. Add tomatoes, chicken stock, ginger paste, garlic paste, cumin, chili powder, fenugreek, coriander, salt, and jalapeno. Stir in heavy cream and garam masala. Reduce heat and let simmer.
  • Meanwhile, remove chicken from marinade and cook in a grill pan over medium-high heat until about 75% done, 3 to 5 minutes, flipping halfway though.
  • Use an immersion blender or electric blender to puree the sauce to desired consistency. Add chicken to the sauce and continue to simmer until chicken is cooked through and flavors have melded, about 10 more minutes.
  • While sauce simmers, preheat the oven to 350 degrees F (175 degrees C). Drizzle naan breads with olive oil.
  • Bake naan in the preheated oven for 15 minutes.
  • While naan is baking, remove sauce from heat and let cool to room temperature.
  • Remove naan from the oven and cover with a layer of butter sauce. Top with some of the paneer and jalapenos; add chunks of butter chicken, cilantro, and more paneer cheese. Reserve remaining paneer for topping after baking.
  • Return to the oven and bake for 10 minutes. Remove and sprinkle with remaining paneer and cilantro. Serve.

Tips:

  • Choose the Right Chicken Thighs: Look for bone-in, skin-on chicken thighs for the best flavor and texture.
  • Braising Liquid: Use a flavorful liquid for braising the chicken thighs, such as chicken broth, white wine, or a mixture of both. Add herbs, spices, and vegetables for extra flavor.
  • Slow and Low: Braise the chicken thighs low and slow to ensure they are cooked through and fall off the bone.
  • Crispy Skin: To achieve crispy skin on the chicken thighs, sear them in a hot skillet before braising. You can also finish them under the broiler for a few minutes.
  • Homemade Pizza Dough: For the best results, make your own pizza dough. It's easy to do and only requires a few simple ingredients.
  • Fresh Ingredients: Use fresh, high-quality ingredients for the best flavor. This includes the chicken, vegetables, and cheese.
  • Don't Overcrowd the Pizza: When assembling the pizza, don't overcrowd it with toppings. This will make it difficult to cook evenly and can result in a soggy crust.
  • Cook the Pizza at a High Temperature: Bake the pizza at a high temperature to ensure a crispy crust. The ideal temperature is around 500°F (260°C).

Conclusion:

Pizza with braised chicken thighs is a delicious and easy-to-make meal that is perfect for any occasion. By following these tips, you can create a pizza that is sure to impress your family and friends.
