PLUM CRUNCH CAKE
Steps:
- Place plums in a shallow, 2 qt, ungreased baking dish. Sprinkle with brown sugar, cinnamon, and 3 tbsp flour. Mix together sugar, 1 cup flour, baking powder, and egg. (This will be lumpy.) Pour over plums. Pour ½ cup melted butter over this. Bake at 375º for 45 minutes.
Tips:
- Use ripe plums. The riper the plums, the sweeter and more flavorful your cake will be.
- Don't overmix the batter. Overmixing can make the cake tough.
- Bake the cake until a toothpick inserted into the center comes out clean. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.
- Let the cake cool completely before serving. This will help the cake set and make it easier to slice.
