1 1/3 cups whole milk
2 cups polenta
Kosher salt
Extra-virgin olive oil, for brushing
1/2 cup grated gruyere cheese
3 tablespoons unsalted butter

  • Bring 7 cups water to a simmer in a large saucepan. Combine 4 cups of the hot water and the milk in a heatproof bowl (the bowl should fit over the saucepan). 1 quart chicken stock
2 tablespoons butter
3 ¼ cups dry polenta
3 ounces Parmesan cheese
¼ cup chopped fresh parsley

1 quart vegetable oil for frying
