This is no ordinary chicken sandwich! Chicken breasts are marinated in ponzu sauce, pineapple juice, garlic, ginger, and herbs, then cooked together with onion, peppers, and cabbage, loaded into hoagie rolls, and topped with Swiss cheese.

1 cup prepared ponzu sauce
1 cup chopped fresh cilantro
½ cup pineapple juice
4 fresh mint leaves, chopped
4 cloves garlic, crushed
1 tablespoon grated fresh ginger
1 tablespoon toasted sesame oil
1 tablespoon chili oil
1 teaspoon brown sugar
3 skinless, boneless chicken breast halves, cut into chunks
1 tablespoon olive oil
1 onion, sliced
1 red bell pepper, sliced
1 jalapeno pepper, sliced
salt and freshly ground black pepper to taste
1 small head cabbage, shredded
4 Italian-style hoagie buns, split lengthwise and toasted
12 slices Swiss cheese
¼ cup chopped fresh cilantro, divided
1 tablespoon sesame seeds, divided
1 tablespoon chile-garlic sauce (such as Sriracha®), or to taste - divided
1 lime, cut into wedges

Steps:

  • Preheat oven to 500 degrees F (260 degrees C).
  • Combine ponzu sauce, 1 cup cilantro, pineapple juice, mint leaves, garlic, fresh ginger, sesame oil, chili oil, and brown sugar together in a large bowl. Add chicken and toss to coat.
  • Remove chicken from ponzu sauce mixture, reserving marinade. Heat large pot or Dutch oven over medium-high heat. Add chicken and cook, stirring frequently, until browned, about 5 minutes. Stir in olive oil, onion, red bell pepper, jalapeno pepper, salt, and black pepper. Cook and stir until onion has softened and turned translucent, about 5 minutes.
  • Pour reserved marinade into chicken mixture and bring to a boil. Stir in cabbage and cook until slightly wilted, 4 to 5 minutes.
  • Using a slotted spoon, transfer chicken mixture into toasted hoagie buns and top each sandwich with 3 slices Swiss cheese.
  • Place sandwiches onto a baking sheet and bake in the preheated oven until cheese is melted and buns are toasted, about 5 minutes. Garnish each sandwich with 2 tablespoons cilantro, 1/4 of the sesame seeds, and 1/4 of the chile-garlic sauce. Serve with lime wedges.

A marinade of tart ponzu and lime juice, jalapenos, and chiles gives this crispy braised chicken its spicy flavor.

3/4 cup lime ponzu
2/3 cup freshly squeezed lime juice
3 large tomatoes, halved horizontally and grated on the large holes of a box grater
2 jalapenos, quartered lengthwise
2 dried chiles de arbol
1 bunch fresh cilantro, leaves and stems separated
1 head garlic, cloves divided and unpeeled
1 large red onion, cut into 1-inch wedges
6 chicken legs, skin on
Coarse salt and freshly ground black pepper
Mexican Corn Cakes, for serving
Lime wedges, for serving
1 cup cherry tomatoes, halved, for serving
1 avocado, peeled and sliced, for serving
Sour cream, for serving

Steps:

  • Place ponzu, lime juice, and tomatoes in a medium bowl; stir to combine. Add jalapenos, chiles, garlic, and red onion; stir to combine. Place chicken legs in a large resealable plastic bag; add ponzu mixture. Tie cilantro stems together with kitchen twine and add to bag with chicken; seal bag and shake to coat. Transfer bag to refrigerator and let marinate overnight.
  • Preheat oven to 325 degrees. Pour chicken mixture from plastic bag into a roasting pan; turn chicken so that it's skin side up and season with salt and pepper. Cover roasting pan tightly with parchment paper-lined aluminum foil and transfer to oven; bake for 1 1/2 hours.
  • Uncover chicken and increase oven temperature to 450 degrees and return roasting pan to oven. Cook until chicken is crisp, about 30 minutes. Serve chicken with vegetables in roasting pan, corn cakes, lime wedges, cherry tomatoes, avocado, and sour cream; garnish with cilantro leaves.

Juice of 2 lemons
1/4 cup seasoned rice vinegar
1/2 cup plus 2 tablespoons dark soy sauce
2 tablespoons tamari
1/4 cup mirin
1/4 cup bonito flakes
1 3-inch square kelp, cut in thirds

Steps:

  • In a bowl, mix together all the ingredients. Let sit for 24 hours, then strain through cheesecloth. Ideally, the ponzu should sit, refrigerated, for at least a month; it improves with age and may be stored in the refrigerator for up to six months. Serve as a dipping sauce for tempura.

CHICKEN PONZU OVER RICE

I found this recipe in our Publix supermarket ad and wanted to try it because I'd never had ponzu sauce before. Well, it made a wonderful dinner that we all enjoyed, and I served it with a side dish of carrots and sugar snap peas. (I've added directions for making roasted garlic, which I prepare ahead of time. When it cools, I separate individual cloves and squeeze out the creamy roasted garlic until I have the amount I need -- in this recipe, 2 teaspoons.) I roast the garlic ahead of time and start cooking the rice about 15 minutes before I start making the chicken ponzu. Cooking time includes the time for roasting the garlic and also for making the chicken ponzu.

1 tablespoon sesame oil
2 teaspoons roasted garlic
1/2 cup sliced green onion
8 ounces fresh mushrooms, sliced
1/2 of a green bell pepper
1 3/4 lbs boneless skinless chicken breasts
1/4 teaspoon salt
1/8 teaspoon pepper
4 ounces canned water chestnuts, sliced
1/3 cup kikkoman ponzu sauce
2 tablespoons molasses
2 -3 cups cooked rice

Steps:

  • To make roasted garlic:.
  • Preheat oven to 400°F Peel off the outer layer of skin on a whole bulb of garlic. Do not peel individual cloves. Cut off about 1/2" across the top of the entire garlic bulb. Place onto a square of aluminum foil large enough to completely cover the bulb. Wrap the foil about halfway up the bulb and then drizzle with 2 teaspoons olive oil. Finishing wrapping the bulb in foil, making sure it is completely closed so that no oil or steam will escape.
  • Place in oven and cook for 30-35 minutes. Remove from oven, let cool. Separate the individual cloves and squeeze each one to remove the creamy roasted garlic.
  • To make chicken ponzu:.
  • Preheat large sauté pan on medium-high heat 2-3 minutes. Place oil in pan; swirl to coat. Add roasted garlic flesh, green onions and mushrooms. Cover and cook 3-4 minutes, stirring occasionally, or until mushrooms are browned.
  • Meanwhile, cut the bell pepper half and the chicken into bite-size pieces. Season chicken with salt and pepper. Move mushrooms to one side of pan; add chicken, bell peppers pieces, and water chestnuts. Cook 4 minutes, stirring occasionally, or until chicken is browned.
  • Stir in ponzu sauce and molasses; cook 3-4 minutes or until thoroughly heated. Serve mixture over rice.
