4 Pork chops (3/4 - 1 in thick)
1 onion (thinly sliced)
8 oz (sliced button mushrooms)
1 teaspoon salt
2 teaspoon garlic powder
1/2 teaspoon black pepper
1/2 teaspoon paprika
1/2 cup all purpose flour
2 cups water
3 tablespoons oil

Steps:

  • In a small bowl combine the seasoning mix.
  • Rub some of the seasoning mix on each pork chop. Save the leftover seasoning for the onion gravy. Then thoroughly coat each pork chop with the flour and set aside. Heat oil in a skillet over medium - high heat. When oil is hot enough add pork chops and brown for about 3-4 minutes on each side.
  • Using the same pan add sliced onions to the drippings and cook for a few minutes then add mushrooms and cook a few minutes more.
  • Add the remaining flour to the skillet and stir together incorporating the onions and mushrooms then slowly add 2 cups of water and stir. Add additional seasoning if you like at this point.
  • Bring to a boil over medium heat. Return pork chops to skillet and reduce heat to low/ simmer. Cover and cook for about 1 hour.

I took several recipes that I liked - but they weren't quite right, so this is the end result. This has NO soup, NO heavy breading, NO cheese, NO tomatoes, NO bacon and NO cream. It uses a pork loin, which I love to buy vs. individual pork chops, because I can cut them any thickness, and also it saves money. I cook part of it, and freeze the rest for a dinner like this. I also use fresh mushrooms, onions, garlic, a base of chicken stock, white wine and sherry for a unique flavor. And of course fresh herbs, thyme, bay leaf and rosemary. Some fresh scallions to garnish, and I prefer to serve mine over mashed "spuds." Mashed potatoes are the perfect comfort food to me; however butter noodles or rice could also be an option. Green beans is what I always make with it, they just seem to go together. It is still very comforting, but I left out the heavy breading and some of the other ingredients which just added additional calories which I didn't need. Give it a try.

4 pork chops, I cut then about 3/4-inch thick (bone in will offer a bit more flavor, but I cut mine myself from a large pork loin, but you can also)
1 cup flour (all purpose is fine)
1 tablespoon vegetable oil (canola oil will work, olive oil to me is a bit too strong)
1 tablespoon butter
1/2 teaspoon italian seasoning (any all purpose seasoning will work, but stay away from seasoning salt)
salt
pepper
1 large onion, cut in quarters and thin sliced
2 -2 1/2 cups cremini mushrooms (you can use a bit more if you like)
2 teaspoons garlic, minced
2 cups chicken broth (you can add a bit more if you like the sauce a bit thinner)
3/4 cup white wine
1/4 cup sherry wine
1 bay leaf
1 teaspoon fresh thyme, just pulled off the stem
1/2 teaspoon fresh rosemary, fine chopped
1 tablespoon fresh parsley
1 -2 teaspoon corn starch (mixed with a little of the broth, this is just used if you want to thicken the sauce)
salt
pepper
1 tablespoon butter
1 teaspoon olive oil
2 scallions, fine chopped (mostly green parts)

Steps:

  • Pork Chops -- Set the pork chops out on the counter so they get to room temperature. Season well with the salt and pepper and rub it in well. Then add the flour and Italian seasoning to a small bowl and mix well. Dredge each porch chop in the flour, and shake off the extra, but make sure it is coated well. Then in a large deep saute pan, add the oil and butter and bring to medium high heat. Saute the pork chops on each side until golden brown. Shouldn't take more than 3-4 minutes per side. Once golden brown, remove and set on a plate off to the side while you prepare the base vegetables.
  • Vegetable Base -- To the same pan, lower to medium heat, add the remaining butter and olive oil, garlic and onions and cook about 1-2 minutes until the onions begin to soften. Then add in the mushrooms and cook another minute making sure to cover them in the oil and butter mix with the onions.
  • Add in the sherry wine to the pan, still on medium heat and scrape up the bottom with all those good bits. Cook just a minute and then add in the wine, broth, bay leaf, a pinch of salt, go easy, because the broth is salty and a pinch of pepper, along with the thyme, and rosemary. Then, add the pork chops back in, pushing them down in the sauce and bring to a light boil. If the pork chops are not covered by the broth, add a bit more broth. You can always add a bit more later. Cover and simmer 30 minutes until the onions and mushrooms are soft and the pork chops are tender.
  • Finish -- Check for any additional seasoning and finish by adding in the parsley. If you want your sauce thicker - you can add a bit of corn starch to a teaspoon of the broth and then slowly stir into the broth. Add just a little at a time and bring to a light boil. Once it comes to a boil the sauce will continue to thicken. Make the sauce as thick as you like.
  • Serve -- Over mashed potatoes, buttered noodles or rice and I like to garnish with chopped scallions. ENJOY!

4 bone-in pork chops, 1 1/2-inches thick, at room temperature
Kosher salt and freshly ground black pepper
3 tablespoons EVOO
4 cloves garlic
1 large onion
1 to 2 cubanelle peppers
1 red bell pepper, seeded
1 red chile pepper
1 teaspoon fennel seeds
2 tablespoons tomato paste
1/2 cup dry white or red wine
1 1/2 cups chicken stock

Steps:

  • Preheat the oven to 400 degrees F. Sprinkle the chops with liberal amounts of salt and black pepper.
  • Heat 2 tablespoons of the EVOO in a large skillet over medium-high to high heat. When the oil begins to smoke, add the chops and brown on both sides, 3 to 4 minutes per side.
  • While the chops cook, slice the garlic, onion and peppers.
  • Remove the chops from the skillet and add the remaining tablespoon oil. Then add the fennel seeds, garlic, onions and peppers and toss to soften, 5 minutes. Next, add the tomato paste and stir 1 minute. Deglaze the pan with the wine, add the stock and stir. Nest the pork into the pan and move the peppers and onions on top of the meat. Place in the oven and roast to an internal temperature of 165 degrees F, about 10 minutes.

4 pork chops (thick cut and bone in)
1 (14 ounce) can cream of mushroom soup
1/2 small yellow onion (chopped)
1 (8 ounce) package cremini mushrooms (fresh and sliced)
1/2 teaspoon pepper
1/2 garlic salt
2 tablespoons olive oil
1 tablespoon unsalted butter

Steps:

  • In a large skillet place 2 tbs of olive oil in pan on med/high heat.
  • Sprinkle both sides of the pork chops with Garlic salt, and pepper to your liking, and squish together in hot pan. Cook til browned on both sides about 3 min per side.
  • Remove pork chops set aside and keep warm.
  • Add 1 tbs of unsalted butter and scrape up the bits and pieces of the pork chop from the pan. Add the onions and mushrooms to the pan drippings and cook until onion is tender; about 3-5 minute.
  • Turn the stove to med/low heat and add the cream of mushroom soup. Add salt to pepper to taste and mix well.
  • Return the pork chops to the pan and cover for 20 minute.

1/3 cup all-purpose flour
3 tablespoons vegetable oil, divided
1 large onion, halved and sliced

1 tablespoon dried marjoram
1 (10.75 ounce) can condensed cream of mushroom soup
¾ cup water
1 teaspoon salt
½ teaspoon ground black pepper

  • Preheat oven to 350 degrees F (175 degrees C).
  • Heat a small amount of oil in a large skillet, add chops and brown on both sides. When chops are almost done, sprinkle marjoram on both sides.

6 medium fresh mushrooms, sliced
2 tablespoons olive oil

1 1/2 teaspoons Worcestershire sauce

1/2 teaspoon garlic powder
1/4 teaspoon ground sage
