Grilled Pork with Nectarines image

Provided by Food Network Kitchen

Time 35m

Yield 4 servings

Number Of Ingredients 12

1/2 cup apple cider vinegar
1/3 cup sugar
1 tablespoon whole-grain mustard
2 wide strips lemon zest (removed with a vegetable peeler), plus the juice of 1 lemon
2 large nectarines, chopped (about 2 cups)
1 large fennel bulb, cored and sliced 1/4 inch thick
1 red onion, sliced 1/2 inch thick and separated into rings
1 red onion, sliced 1/2 inch thick and separated into rings
3 tablespoons extra-virgin olive oil, plus more for the grill
Kosher salt and freshly ground pepper
1/2 cup roughly chopped fresh parsley
4 boneless center-cut pork loin chops (3/4 to 1 inch thick; about 1 1/2 pounds), trimmed

Steps:

  • Preheat a grill to medium high. Bring the vinegar, sugar, mustard and lemon zest to a simmer in a medium saucepan. Cook, whisking occasionally, until syrupy, about 3 minutes. Add the nectarines and cook until just softened, 3 to 5 minutes; keep warm over low heat.
  • Meanwhile, toss the fennel and red onion with the olive oil in a large bowl; season with 1/2 teaspoon salt and a few grinds of pepper. Brush the grill grates with olive oil. Grill the vegetables (with the fennel perpendicular to the grates to keep them from falling into the grill, or use a grill basket), flipping, until marked and crisp-tender, 5 to 7 minutes. Transfer to a large bowl. Add the lemon juice and parsley; toss to combine.
  • Season the pork chops with salt and pepper. Brush the grill grates with more olive oil. Grill the pork until marked and just cooked through, about 4 minutes per side. Serve with the nectarines (discard the lemon zest) and the fennel-onion mixture.

DELICIOUS TANGY PORK CHOPS

Delicious Tangy Pork Chops image

This is a variation of the 'Tangy Chicken' recipe here on Allrecipes.com. It's fast and easy. It makes the chops very juicy and tender. You may be put off by the lemon, but you really don't taste it that strong, it's overpowered by the Worcestershire Sauce. It seems the acid in the lemon helps make the more meat tender and helps the flavor soak in. The garlic is just a hint also, not too strong at all! Garlic powder could also be used.

Tips:

  • Choose the right pork chops: For this recipe, bone-in pork chops are best. They add more flavor to the dish and help keep the meat moist during cooking.
  • Make sure the pork chops are evenly cooked: To ensure that the pork chops are cooked through, use a meat thermometer to check the internal temperature. The pork chops should reach an internal temperature of 145 degrees Fahrenheit.
  • Don't overcrowd the pan: When searing the pork chops, don't overcrowd the pan. This will prevent the pork chops from cooking evenly and will make it more difficult to get a nice sear.
  • Let the pork chops rest before serving: After cooking the pork chops, let them rest for a few minutes before serving. This will help the juices redistribute throughout the meat, resulting in a more tender and flavorful pork chop.
  • Use a variety of nectarines: Feel free to use a variety of nectarines for this recipe. White nectarines, yellow nectarines, and donut peaches will all work well.
  • Adjust the sauce to your liking: The sauce for this dish is slightly sweet and tangy. If you prefer a sweeter sauce, you can add more honey or sugar. If you prefer a more tangy sauce, you can add more lemon juice or vinegar.

Conclusion:

Pork chops with nectarine sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork chops are juicy and flavorful, and the nectarine sauce is sweet and tangy. This dish is sure to please the whole family.
