PORK IN GARLIC SAUCE
My daughter's boyfriend's mom gave her a cookbook that was created by the Houston Ballet for their Nutcracker Christmas Market in 1984. The recipes in the book were submitted by directors, choreographers, and dancers in the Houston Ballet that year. This recipe was submitted by Li Cunxin, Principal Dancer.

PORK WITH GARLIC CREAM SAUCE
This is a recipe I received from a caterer in town. She served this unique dish at an event and everyone really enjoyed it. It is pork tenderloin sliced thin and broiled for 3-5 minutes on each side. The pork slices are topped with a cream cheese based sauce that is really a delicious twist. I have made this at home several times. The sesame seeds in the recipe are optional. I have had the dish with and without them and it is great either way.

PORK CHOPS IN GARLIC MUSHROOM SAUCE
This recipe is my twist on a fancy restaurant meal we got on Valentine's Day. The recipe has half the amount of garlic than was originally used. Hope everyone else enjoys it just as much as we do. Garnish with fresh parsley, chives, or thyme leaves.

SHREDDED PORK WITH GARLIC SAUCE
Steps:
- 1. Combine the pork, egg white, cornstarch, salt, and 1 tablespoon of water in a medium bowl. Cover, and refrigerate for 30 minutes.
- 2. Heat a large wok over high heat. Add enough vegetable oil to come about 1 inch up the sides of the wok, and heat it to 325° F. Add the pork and stir gently until it turns light brown, about 40 seconds. Using a wide wire-mesh strainer, transfer the pork to a colander to drain. Discard all but 4 tablespoons of oil from the wok.
- 3. To start the sauce, mix the vinegar, soy sauce, sugar, and rice wine in a small bowl and set it aside. Dissolve the cornstarch in 3 tablespoons cold water, and set it aside.
- 4. Return the wok to high heat. Add the ginger, garlic, and scallions, and stir-fry until they are fragrant, about 15 seconds. Add the bamboo shoots, water chestnuts, tree ears, and bell pepper and stir-fry until the bell pepper starts to soften, about 30 seconds. Transfer the vegetables to the colander. Add the vinegar mixture to the wok and stir for 10 seconds. Then add the hot chili paste and stir for 10 seconds more. Return the pork and vegetables to the wok, and stir-fry until the sauce comes to a boil and thickens, about 20 seconds. Add the hot chili oil, if using, and stir-fry for 10 seconds. Add the sesame oil and serve immediately.

Tips:
- Use a heavy-bottomed pot or Dutch oven to prevent the pork from sticking.
- Pork shoulder, also known as pork butt, is a great cut of meat for this recipe because it is tough and flavorful and will become tender when cooked in the sauce.
- Brown the pork in batches to avoid overcrowding the pot and to ensure that the meat gets evenly browned.
- Use a wooden spoon to scrape up any browned bits from the bottom of the pot. These bits will add flavor to the sauce.
- Add the garlic towards the end of cooking to prevent it from burning.
- Serve the pork with your favorite sides, such as rice, mashed potatoes, or roasted vegetables.
Conclusion:
Pork in garlic sauce is a delicious and easy-to-make dish that is perfect for a weeknight meal. The pork is tender and flavorful, and the sauce is rich and creamy. This recipe is sure to be a hit with your family and friends.
