ROASTED EGGPLANT WITH SICHUAN-STYLE PORK

Roasted Eggplant with Sichuan-Style Pork image

Our chopped challenge this week was ground pork. We wanted to infuse with as much flavor as possible so we cooked it Sichuan-style and paired it with sweet Japanese eggplant. Chopped Basket Ingredient: ground pork

Provided by Food Network Kitchen

Categories     main-dish

Time 35m

Yield 4 servings

Number Of Ingredients 11

6 medium Japanese eggplants (about 1 pound), tops trimmed, halved lengthwise
1/4 cup canola oil
Kosher salt and freshly ground black pepper
1 pound ground pork
1 bunch scallions, thinly sliced, white and green parts separated
6 cloves garlic, minced
One 2-inch knob ginger, peeled and finely grated
2 to 4 tablespoons chili-garlic sauce or sambal oelek
1/4 cup soy sauce
1/4 cup balsamic vinegar
Steamed white rice, warm, for serving

Steps:

  • Preheat the oven to 425 degrees F with a rack set on the middle shelf.
  • Use a sharp paring knife to lightly score the flesh of each eggplant 6 to 8 times. Place the on a baking sheet and toss with 2 tablespoons of the oil and season liberally with salt and pepper. Place the eggplant, cut-side down, and bake until the eggplant starts to soften and the skin starts to brown, about 15 minutes. Use a large offset spatula to gently flip the eggplant over and bake until the flesh is completely softened and light golden brown, about 15 more minutes.
  • Meanwhile, make the pork: Heat the remaining oil over medium-high heat in a large saute pan. Add the pork and 1/4 teaspoon salt. Cook, breaking up the meat, until lightly browned and no longer pink, about 5 minutes. Add the scallion whites, garlic and ginger and cook for 2 minutes, stirring constantly. Stir in the chili-garlic sauce, soy sauce, vinegar, 1/2 cup water and half of the scallion greens. Simmer over medium-low heat for 10 minutes, stirring occasionally.
  • To serve, spoon the pork over the roasted eggplant and garnish with the remaining scallion greens. Serve with steamed rice.

1 small eggplant, peeled and sliced thin (1/16-inch)
2 cups penne pasta cooked until al dente
1/4 cup sliced hardboiled egg
6 ounces bolognese ragu, recipe follows
Fresh basil leaves, as much as you like
1/4 cup pecorino
2 ounces tomato sauce
1/2 cup scamorza cheese grated
10 ounces salt pork or pancetta, rendered
1 quart water
1 cup diced carrots

PORK AND EGGPLANT IN HOT GARLIC SAUCE

Pork and Eggplant in Hot Garlic Sauce image

Asian stir-fry. This is based on one of my favorite dishes at my favorite Chinese restaurant. Feel free to adjust seasonings to your personal preference. We like ours spicy and usually use more of the ginger, garlic and chiles.

Provided by Sheynath

Categories     Pork

Time 30m

Yield 2-4 serving(s)

Number Of Ingredients 12

1 large eggplant (or several small Asian)
2 tablespoons vegetable oil
1/2 lb lean pork, cut in thin strips
2 garlic cloves, minced
1/2 inch piece gingerroot, minced
2 teaspoons soy sauce (I use gluten-free tamari sauce)
2 teaspoons lime juice
1 teaspoon sugar
1 teaspoon dark sesame oil
1 teaspoon dried hot chili flakes
1 scallion, sliced thin (for garnish)
1/2 teaspoon sesame seeds (for garnish)

Steps:

  • Peel eggplant and slice into pieces approximately 1x2 inches and 1/4 inch thick. If using Asian eggplants, peel and slice into 1/4 slices.
  • Heat the vegetable oil in a non-stick wok or large skillet. Stir-fry eggplant strips until soft, drain, leaving oil in pan. Set eggplant aside.
  • Toss garlic and ginger in the hot oil. As soon as it turns fragrant add the pork and toss until just cooked through.
  • Add eggplant back to pan, stir to combine pork and eggplant.
  • Add remaining ingredients (except garnishes) and stir. Turn off heat and let mixture sit for a couple of minutes to blend flavors.
  • Plate the eggplant and sprinkle with garnishes.

Tips:

  • Choose the right cut of pork: Pork shoulder or pork butt are the best cuts for this recipe, as they are well-marbled and will become tender when cooked slowly.
  • Brown the pork before roasting: Browning the pork in a skillet before roasting helps to develop flavor and color.
  • Use a Dutch oven or roasting pan with a lid: This will help to keep the pork moist and tender as it cooks.
  • Add vegetables and herbs to the roasting pan: Vegetables such as carrots, celery, and onions add flavor to the pork. Herbs such as thyme, rosemary, and sage also add flavor and aroma.
  • Cook the pork until it is fall-apart tender: The pork is done cooking when it reaches an internal temperature of 145 degrees Fahrenheit. Let the pork rest for 15 minutes before slicing and serving.
