Yield Serves 4

Number Of Ingredients 8

One (1 to 1 1/4 pounds) pork tenderloin or center-cut pork filet
2 tablespoons olive oil
Fine kosher or sea salt and freshly ground black pepper to taste
4 long rosemary branches or wooden skewers, soaked in water for at least 15 minutes
12 small ripe figs
4 ounces goat cheese
2 teaspoons honey
1 1/2 teaspoons finely chopped fresh rosemary

Steps:

  • Prepare a hot fire in your grill. Brush the tenderloin with the olive oil and season with salt and pepper.
  • Remove the skewers from the water. Pierce the figs through the middle with a metal skewer or ice pick to make a hole. Then thread 3 figs onto each rosemary or wooden skewer. Lightly brush the figs with olive oil.
  • Place the pork tenderloin directly over the fire. Grill for 2 to 3 minutes per side (the center-cut pork loin filet for 5 to 7 minutes per side), turning a quarter turn at a time, until an instant-read meat thermometer inserted in the thickest part registers 140°F for medium and the meat is juicy and slightly pink in the center.
  • At the same time, place the skewered figs over the fire, turning several times and cooking for about 5 to 6 minutes until they are heated through. When they're caramelized and soft, remove the skewers from the heat and keep warm.
  • Let the pork rest for about 5 minutes, and then cut on the diagonal into 1- to 2-inch-thick slices.
  • To serve, arrange 3 slices of pork with a skewer of figs on each plate, all topped with crumbled goat cheese, drizzled with 1/2 teaspoon honey, and a sprinkled with chopped rosemary.

Grilled Lemongrass Pork Tenderloin Skewers - {Suon Nuong Xa} Recipe image

Provided by á-174942

Number Of Ingredients 13

1/4 cup fish sauce
1 tablespoon soy sauce
3 tablespoons sugar
2 tablespoons vegetable oil
2 lemongrass stalks outer leaves and tops removed, root ends trimmed, stalks
finely grated
1 large shallot finely chopped
2 large garlic cloves finely chopped
1 pound pork tenderloin thinly sliced
16 bamboo skewers soaked 20 minutes, and drained
Rice Vermicelli - {Bun Thit} (see recipe)
1/2 cup chopped unsalted roasted peanuts
Fish Dipping Sauce - {Nuoc Cham} (see recipe)

Steps:

  • Stir together the fish sauce, soy sauce, sugar, and oil until the sugar is completely dissolved. Add the lemongrass, shallot, garlic and pork and mix to coat the meat evenly. Allow to marinate at room temperature for 20 minutes or refrigerate for at least 1 hour or up to overnight. Slide 2 to 4 slices of pork onto each skewer so the meat is flat with the skewer going through the slices several times. Grill over a barbecue (make sure that the flames have subsided and the coals are red with white ashes). Alternatively, heat a well-oiled grill pan or non-stick skillet over high heat and, working in batches, cook the skewers until the edges crisp, about 1 minute per side. Remove the skewers from the grilled pork. Divide the grilled pork among the bowls of rice vermicelli. Sprinkle peanuts and drizzle nuoc cham over each serving. Serve immediately. This recipe yields 4 servings.

Tips:

  • Choose a high-quality pork tenderloin: Look for a tenderloin that is firm to the touch and has a deep pink color. Avoid any tenderloins that are slimy or have a grayish tint.
  • Cut the pork tenderloin into 1-inch pieces: This will help the pork cook evenly and quickly.
  • Marinate the pork tenderloin for at least 30 minutes: This will help the pork tenderloin absorb flavor and become more tender.
  • Skewers: Use wooden or metal skewers. If using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning.
  • Grill the pork tenderloin skewers over medium heat: This will help the pork cook evenly without overcooking it.
  • Cook the pork tenderloin skewers for 8-10 minutes per side: Or until the internal temperature reaches 145 degrees Fahrenheit.
  • Let the pork tenderloin skewers rest for 5 minutes before serving: This will help the juices redistribute throughout the pork.

Conclusion:

Pork tenderloin skewers are a delicious and easy-to-make dish that is perfect for a summer cookout or party. By following these tips, you can make sure your pork tenderloin skewers are cooked perfectly and are full of flavor. Serve with your favorite sides, such as grilled vegetables, rice, or pasta. Enjoy!
