Steps:

  • Combine the shrimp and piri-piri sauce in a large resealable plastic bag and toss to coat. Place the bag in a shallow dish and place it in the fridge to marinate, turning it a few times, for several hours.

1 large onion, chopped

1 (12 ounce) can beer
¼ cup dry white wine

3 cups cooked white rice, or to taste

1 onion, chopped
3 cloves garlic, minced
1 (12 fluid ounce) can ale, divided
5 sprigs parsley, stemmed and chopped
2 teaspoons tomato paste
2 teaspoons Portuguese hot pepper sauce (pimenta)
1 cube chicken bouillon
1 teaspoon ground paprika
2 pounds unpeeled large shrimp, deveined
1 teaspoon kosher salt

Steps:

1 cup tomato sauce
1/2 cup orange juice

2 lbs large raw shrimp, with the shell & deveined
1 small onion, finely chopped
3 garlic cloves, minced
5 sprigs parsley, finely chopped
1 teaspoon paprika
1 teaspoon salt
1 chicken bouillon cube
1 1/2 teaspoons hot pepper sauce (or to taste)
1 1/2 teaspoons tomato paste
1 (10 ounce) bottle beer
oil (enough to cover the base of the pan)

Steps:

  • In a large frying pan with oil, saute the onions and garlic for several minutes. Add all of the spices, parsley, chicken bouillon, tomato paste, pepper sauce, and half of the beer and let the sauce simmer for approximately 5 minutes.
  • Once simmered, add the shrimp and remaining beer. Taste the sauce and adjust the seasonings to suite your taste. Once the sauce has been absorbed by the shrimp and the shrimp have turned pink, remove from the pan and serve.

1 pound skirt steak
1 pound medium shrimp, peeled
1 pound chorizo sausage
Olive oil
Salt and pepper
Wooden skewers-soaked in hot water
For the chimichurri dipping sauce:
1/2 cup olive oil
3 tablespoons white vinegar
2 jalapeño peppers, seeded and diced
1 small bunch flat leaf parsley, picked and chopped (1 cup loose leaves)
3 tablespoons chopped cilantro
1 clove fresh garlic, finely chopped
1 bay leaf
Sea salt

Steps:

  • Using a meat mallet, pound the skirt steak out thinly. Cut the steak into 1-1/2 inch strips and skewer on wooden skewers. Skewer the shrimp in a similar fashion on additional skewers. Each skewer should contain only a single piece of food to be grilled.
  • Cut the sausage into diagonal slices and also skewer. Place the skewered meats onto platters and lightly marinate in olive oil. Refrigerate until ready to cook. Marinate not longer than overnight.
  • Prepare the chimichurri dipping sauce:
  • Combine all the chimichurri ingredients in a large bowl, mix well and set aside. Make the chimichurri well in advance of cooking. (It can be prepared 3 days in advance and kept refrigerated for up to a week.)
  • Prepare a medium-hot fire on a well-oiled outdoor grill or indoor stove-top grill pan. Carefully drain all excess oil from the skewered meats and fish, and season with salt and pepper. Cook each skewered anticucho for 2-3 minutes or until charred and fully cooked.
  • Serve the anticuchos on a platter, drizzle chimichurri over the top or serve separately.

2 tsp. kosher salt
Juice of 1 fresh lemon
1/3 Cup extra virgin olive oil
1 Tbs. hot pepper oil (China Bowl,preferred)
6 Cloves garlic,thinly sliced
1 tsp. fresh minced cilantro
1 Tbs. minced fresh flat-leaf parsley
Special equipment: wooden skewers

Steps:

  • 1.Place shrimp in large heat resistant bowl, sprinkle with salt and lemon juice. 2.Place olive oil,hot pepper oil, and garlic in a small saucepan. Heat, over low-moderate setting for 5 minutes. Remove from heat and set aside for 10 minutes. 3.Add parsley and cilantro,pour over shrimp,cover bowl with plastic wrap and chill for 1 hour, tossing every 20 minutes. 4.Soak skewers in warm water for 30 minutes then place shrimp on skewers with tails curved around bodies,(4-5 per skewer). 5.Grill, over medium flame, 2-3 minutes on each side, until shrimp are orange and tail shells are slightly charred. Serve as explained in introduction.

  • Clean the shrimp properly. Remove the heads, shells, and tails. Devein the shrimp by making a shallow incision along the back of the shrimp and removing the dark vein.
  • Marinate the shrimp. This will help to flavor the shrimp and keep them moist during cooking. You can use a variety of marinades, but a simple marinade made with olive oil, lemon juice, garlic, and herbs is a good option.
  • Skewer the shrimp. This will help to keep the shrimp from falling through the grill grates. You can use metal or wooden skewers. If you are using wooden skewers, soak them in water for at least 30 minutes before using to prevent them from burning.
