2 pounds Roma tomatoes, halved lengthwise
½ cup olive oil
1 clove garlic, crushed
1 tablespoon dried oregano
1 teaspoon white sugar
1 teaspoon salt

Steps:

  • Preheat oven to 250 degrees F (120 degrees C).
  • Arrange tomatoes, cut side up, in a shallow baking dish; drizzle with olive oil and sprinkle garlic, oregano, sugar, and salt evenly atop.

3 large tomatoes, rinsed and dried
4 tablespoons olive oil, as needed
2 -3 finely chopped garlic cloves
coarse salt
fresh ground black pepper
finely chopped cilantro or parsley
1 tablespoon wine (4 to 1 ratio with olive oil) or 1 tablespoon cider vinegar, as needed* (4 to 1 ratio with olive oil)
