PORTUGUESE-STYLE PORK CHOPS (OR CHICKEN)

Portuguese-Style Pork Chops (or chicken) image

This recipe honors the Portuguese explorers who did so much to introduce peppers to the Old World. Try to start this the day before you plan to serve it so the paste can really flavor the meat. For Chicken variation, see directions in steps. Nice served with rice. From Eating Well.

A very easy and delicious way to cook pork chops with a sweet, but not too sweet, sauce. I recommend serving the pork chops with white rice since the sauce is also excellent on the rice.

Tips:

  • Choose the right pork chops: Look for bone-in pork chops that are about 1-inch thick. This will help them stay juicy during cooking.
  • Marinate the pork chops: Marinating the pork chops in a mixture of olive oil, garlic, paprika, cumin, and thyme will help them to flavor and tenderize them.
  • Sear the pork chops: Before baking, sear the pork chops in a hot skillet over medium-high heat. This will help to caramelize the outside of the chops and lock in the juices.
  • Bake the pork chops: Bake the pork chops in a preheated oven at 375 degrees Fahrenheit for 20-25 minutes, or until they are cooked through.
  • Add the pineapple: After the pork chops are cooked, add the pineapple slices to the pan and cook for an additional 5 minutes, or until they are heated through.
  • Serve immediately: Serve the pork chops and pineapple slices immediately, garnished with fresh parsley.
