CREAMY POTATO AND LEEK GRATIN

Creamy Potato and Leek Gratin image

Cutting leeks into large pieces (they almost dissolve when thinly sliced) gives them a presence equal to disks of potato, while cooking the vegetables separately-the leeks are braised in butter, the spuds are simmered in milk and cream-preserves their distinct flavors. The glorious results will supply the homiest meatloaf supper with pizzazz.

Time 1h5m

Yield 6 servings

Number Of Ingredients 21

4 baking potatoes, like russets
4 small leeks, white part only
1 tablespoon unsalted butter, room temperature
1 tablespoon chopped garlic
1/2 quart heavy cream
Salt
White pepper
Nutmeg
2 racks of lamb, fat cap removed, frenched
3 tablespoons olive oil
1 cup Dijon mustard
Salt and freshly ground black pepper
1 tablespoon chopped fresh thyme leaves, plus 1 tablespoon
1 tablespoon chopped fresh rosemary leaves
1 tablespoon chopped fresh sage leaves
1 tablespoon chopped fresh chervil leaves
1 tablespoon chopped fresh parsley leaves
20 cloves garlic, peeled
1 cup dry white wine
2 cups lamb stock or veal stock
1 tablespoon butter

Steps:

  • For the Gratin: Preheat the oven to 350 degrees F.
  • Slice the potatoes into 1/4-inch slices. Slice the leeks into thin circles. Mix the butter and the garlic together and set aside. Season the cream with salt, white pepper, and nutmeg. Layer the potatoes, the leeks, the garlic butter, and then the cream, alternating until the potatoes are lightly covered with the cream. Bake for 30 minutes.
  • For the Lamb: Sear the lamb in olive oil in a roasting pan until golden, fat side down first. Remove and allow to rest for 5 minutes. Brush the mustard onto both sides of the seared lamb. Season with salt and pepper. Mix together all of the herbs. Dredge both sides of the lamb in the herbs, pressing lightly so the herbs adhere. In the same roasting pan the lamb was cooked in, add the 20 cloves of garlic and place the lamb on top. Cook in the oven for 15 minutes or until medium-rare. When cooked remove the lamb from the roasting pan and wrap in aluminum foil to rest.
  • Place the roasting pan on top of the stove over medium heat. Remove the garlic and set aside. Discard all the fat. Add the thyme, white wine, and the stock and reduce by half.
  • Place half of the roasted garlic in a blender. Add the reduced stock and wine mixture and puree until smooth. Add the tablespoon of butter and pulse to incorporate. Season with salt and pepper.
  • To Serve: Place a large scoop of the gratin in the center of a plate. Slice the lamb every two chops and place on top of the gratin. Pour the sauce over the lamb and garnish with the remaining roasted garlic and your favorite seasonal vegetables.

NAVA ATLAS'S SPINACH, LEEK AND POTATO MATZO GRATIN

Nava Atlas's Spinach, Leek and Potato Matzo Gratin image

This closely resembles the layered matzo casseroles, called minas, which are commonly served at Sephardic Seders. Consisting of layered matzos and vegetables, these make great main dishes for the vegans at the Passover table, and a nice side for everyone else.

Provided by Karen Barrow

Categories     dinner, lunch, casseroles, main course

Time 1h45m

Yield 8 to 10 servings

Number Of Ingredients 12

8 medium potatoes
1 cup raw cashews
1 medium ripe avocado, pitted, peeled and cut into large chunks
Juice of 1 lemon
2 tablespoons extra-virgin olive oil
2 large or 3 medium leeks, white and palest green parts only, chopped and well rinsed
10 to 12 ounces baby spinach, rinsed
2 tablespoons minced fresh dill, or 1 teaspoon dried
1/4 cup matzo meal
Salt and freshly ground black pepper to taste
6 matzos
1/3 cup pine nuts for topping, optional

Steps:

  • Preheat oven to 350 degrees.
  • Cook, bake or microwave the potatoes in their skins until just tender. When cool enough to handle, peel and cut into 1/4-inch-thick slices.
  • Cover the cashews with 1 cup of boiling water in a heatproof bowl and let stand for at least 15 minutes. Drain the cashews, then combine with the avocado and lemon juice in a food processor. Process until smoothly puréed; drizzle enough water through the feed tube while the processor is running to give the mixture a thick, creamy texture.
  • Heat the oil in a large skillet. Add the leeks and sauté over medium-low heat until golden. Add the spinach in batches, covering and cooking until wilted to make room for all of it. Stir in the cashew cream, dill and matzo meal. Season with salt and pepper.
  • Break each matzo in half, and place in a shallow container. Cover with room-temperature water in a shallow container until slightly pliable (don't let them get mushy), about 2 minutes; drain. Lightly oil a 9- by 13-inch casserole dish.
  • Layer the casserole as follows: line the bottom with a layer of matzos, using two matzos per layer. Follow with a layer of potato slices, half of the spinach mixture, and another layer of matzos. Repeat, ending with a layer of matzo.
  • Bake for 30 to 40 minutes, or until top is golden with spots of brown. Let stand for 10 minutes, then cut into squares to serve. If you will be topping with pine nuts, sprinkle them over the top about 10 minutes or so before the gratin is done, to allow them to get lightly toasted.

LEEK AND POTATO AU GRATIN

LEEK AND POTATO AU GRATIN image

Categories     Potato     Side     Bake     Sauté     Vegetarian     Casserole/Gratin     Fall     Winter

Number Of Ingredients 9

4 med russet potatoes, peeled and thinly sliced
1 leek (white part only, split in half and cleaned)
2 small bulbs fennel, quartered and thinly sliced
1 tbs unsalted butter
2 tbs olive oil
1 1/2 tbs garlic, minced
2 cups heavy cream
1/2 cup grated Asiago or romano cheese
salt and pepper to taste

Steps:

  • Preheat oven to 350*. Butter the inside of a 2-quart baking dish. In a saute pan, heat olive oil and butter over medium heat until butter foams. Add leeks and fennel and saute for 15 minutes, until tender. Mix potatoes in a large mixing bowl with the cream, salt and pepper. Add cooked fennel and onion and stir to combine. Pour contents into baking dish. Top with cheese. Bake for 1 1/2 hours or until potatoes are tender and top is browned and bubbly.

Tips:

  • Choose the Right Potatoes: Use a firm, waxy potato like Yukon Gold or Red Bliss for the best texture. Avoid starchy potatoes like Russet, as they will become too soft and mushy.
  • Slice the Potatoes Thinly: This will help them cook evenly and prevent them from becoming too thick and chunky.
  • Use Fresh Leeks: Fresh leeks have a milder flavor and are more tender than older leeks. Look for leeks that are bright green and have no signs of wilting.
  • Wash the Leeks Thoroughly: Leeks can be gritty, so be sure to rinse them well under cold water before slicing.
  • Don't Overcook the Leeks: Leeks should be cooked until they are soft but still retain a bit of their crunch.
  • Use a Good Quality Cheese: The cheese is a key ingredient in this dish, so don't skimp on quality. Use a cheese that melts well and has a good flavor, such as Gruyère, Parmesan, or Cheddar.
  • Don't Crowd the Pan: If you're using a large pan, be sure to spread the potato and leek mixture out in an even layer. Overcrowding the pan will prevent the potatoes from cooking evenly.
  • Bake the Gratin Until Golden Brown: The gratin is ready when the top is golden brown and bubbly. This typically takes about 30-35 minutes.

Conclusion:

Potato and leek gratin is a classic French dish that can be enjoyed by people of all ages. It's easy to make and can be served as a main course or side dish. Whether you're looking for a comforting meal on a cold night or a special dish to serve at a dinner party, potato and leek gratin is sure to please.
