1 (16 ounce) package pork breakfast sausage
1 sweet onion, chopped
7 eggs
1 (8 ounce) package Cheddar cheese, grated, divided
½ cup milk

Steps:

  • Preheat an oven to 450 degrees F (230 degrees C). Prick potatoes several times with a fork and place onto a baking sheet.
  • Bake in the preheated oven until potatoes are soft, 50 minutes to 1 hour. Remove potatoes from oven and let cool until safe to handle, at least 15 minutes.

Two 3-to-4-ounce sweet or spicy Italian sausage links, casings removed
2 cloves garlic, minced
1 cup shredded smoked mozzarella (4 ounces)
4 large eggs, at room temperature
2 cups milk, at room temperature
1 1/2 cups all-purpose flour
2 small green onions, pale green and white parts only, finely sliced to yield 1/4 cup
3 tablespoons chopped fresh basil
1 1/2 teaspoons kosher salt
1/2 teaspoon freshly ground black pepper
Maple syrup, for drizzling

Steps:

  • Place an oven rack in the center of the oven and preheat to 400 degrees F. Butter the muffin cups.

  • 1. Adjust oven rack to upper-middle position and heat oven to 425 degrees. Prepare 9-inch springform pan as shown in photos, and set aside on rimmed baking sheet. 2. ground black pepper to taste
1 cup shredded Cheddar cheese
1 pound Polish kielbasa
½ teaspoon dried dill weed
¼ teaspoon caraway seed
⅔ cup milk

  • Preheat oven to 375 degrees F (190 degrees C). Using two long sheets of aluminum foil on top of each other, fold one long edge together and open out to make a large sheet of foil. Line a 13x9 pan with the foil, allowing edges to hang outside pan

1 medium onion, diced

1/4 teaspoon pepper
mild salsa

Steps:

  • In a large skillet, cook sausage and onion, breaking up sausage with a spatula.

This is a super easy and delicious brunch dish. I found it on Epicurious.com. I made it this weekend and doubled it. I also used cubed hash browns instead of shredded and did not use a glass pan. I think I would add to the cooking time by 5-10 minutes to accomodate these changes. I also omitted the green onion and suggest using O'Brien potatoes as a variation. Everyone loved this. I reheated leftovers the next day and added eggs which was another tasty concoction.
