ASPARAGUS-AND-POTATO GRATIN
Is anything better than a decadent potato gratin? Yes: a potato gratin with asparagus and prosciutto. The sweet, grassy undertones of goat cheese and sharp Pecorino Romano compliment this side-turned-dinner dish beautifully and will have the whole family asking for seconds.

BACON BLUE CHEESE POTATO SALAD
I'm not crazy about potato salad, but this one is definitely the exception. It's creamy and the flavor is wonderful. I got the recipe from my friend Devon, who got it from somebody else. Don't be put off by the blue cheese - the flavor is not overwhelming at all. I didn't know it had blue cheese until I asked for the recipe.

BLUE CHEESE & ASPARAGUS SALAD
Found this recipe on the back of a box of blue cheese and decided to try it. It's a nice blend of flavors and really sets off the asparagus and simple to make. Love that the asparagus is not over cooked and so fresh tasting;I guessed at the size can of mandarin oranges as don't have it handy. I used a small can as didn't want it to sweet - but there's a larger one if you prefer. I did add a teaspoon of balsamic vinager to mine for a little bit of bite, but since the original recipe did not call for it I left it out. Hope you like it.

Tips:
- Select the right potatoes: Choose firm, waxy potatoes like Yukon Gold or red potatoes for this salad. These potatoes hold their shape well when cooked and won't get mushy.
- Cook the potatoes perfectly: Boiling the potatoes until they are just tender is key. Overcooked potatoes will become mushy and fall apart.
- Use good quality blue cheese: A sharp, flavorful blue cheese like Roquefort or Gorgonzola will add plenty of flavor to this salad. Avoid using a mild or bland blue cheese, as it will get lost in the other ingredients.
- Roast the asparagus: Roasting the asparagus brings out its natural sweetness and gives it a slightly smoky flavor. You can also grill or sauté the asparagus if you prefer.
- Make a flavorful dressing: The dressing for this salad is simple but flavorful. Use a good quality olive oil and vinegar, and add some Dijon mustard, honey, and fresh herbs for extra flavor.
- Assemble the salad just before serving: This salad is best when served fresh. Assemble it just before serving to prevent the potatoes and asparagus from becoming soggy.
Conclusion:
This potato, blue cheese, and asparagus salad is a delicious and easy-to-make side dish that is perfect for any occasion. It is packed with flavor and texture, and it is sure to be a hit with your friends and family.
