2 tablespoons olive oil
2 teaspoons Creole seasoning
1 (3-pound) box kosher salt
1/2 cup chopped fresh parsley leaves
1/4 cup chopped fresh tarragon leaves
1/2 cup chopped fresh basil leaves
1/4 cup chopped fresh cilantro leaves
1/4 cup grated lemon zest
2 tablespoons fresh lemon juice
1 tablespoon grated orange zest
2 oranges, juiced (about 1/2 cup)
1 teaspoon freshly ground black pepper
6 cups cooked sticky rice, warm
Fresh Orange and Tomato Salsa, recipe follows
3 cups chopped vine-ripened tomatoes
1/2 cup small diced red onions
1 large fresh jalapeno, seeded and cut into small dice
1/2 cup loosely packed chopped fresh cilantro leaves
1 tablespoon chopped fresh parsley leaves
1/2 teaspoon chopped garlic
2 medium oranges, skin and pith removed and segmented

4 tablespoons fresh lime juice
1 tablespoon extra-virgin olive oil

Steps:

  • Preheat the oven to 350 degrees F. Line a baking sheet with parchment paper.
  • With a sharp knife, make 5 slits, at an angle and about 1 1/2 inches apart, on each side of the fish. Rub 1 tablespoon of the olive oil over each side of the fish, then season each side with Creole seasoning. Place the fish on the prepared baking sheet. Combine the kosher salt, herbs, lemon zest, and juice, orange zest and juice, and black pepper in a large mixing bowl. Mix well. Mound the mixture evenly on the surface of the fish, leaving the head and tail uncovered. With your fingers, firmly press the mixture into the flesh. Bake for 1 1/2 hours. Remove from the oven and cool for 2 minutes.
  • With the back of a heavy spoon or a mallet, lightly pound the salt crust to crack it open, beginning at the tail end. Carefully pull off the salt crust. Then, with a small spatula or wide knife, remove the flesh from the bone on the top side of the fish. Remove the back bone, then serve the flesh from the bottom side of the fish. Spoon the rice in the center of each serving plate. Lay the fish on top of the rice. Spoon some of the salsa over each serving.
  • Combine all of the ingredients in a mixing bowl and toss well. Allow the salad to sit for 15 minutes before serving.

2 Idaho potatoes, peeled
Salt and pepper
1 cup warm clarified butter
4 (5-ounce) snapper fillets
Beurre Blanc Sauce, recipe follows
Fresh lemon herbs
2 cups heavy cream
1 cup white wine
12 whole black peppercorns
1/4 cup freshly squeezed lemon juice
2 shallots, diced
1 pound whole butter, cut into pieces, softened

Steps:

  • Using a Chinese or a regular mandoline, finely julienne the potatoes, and immediately put them into cold water and rinse thoroughly. Repeat 2 or 3 more times, or until water is clear. (The purpose of this is to rinse all the starches and sugars so potatoes do not burn when cooking). Drain water from potatoes and towel dry thoroughly. In a mixing bowl, add potatoes and season with salt and pepper. Add about 1/2 cup of the warm clarified butter, or enough to coat.
  • Preheat oven to 375 degrees F.
  • Season snapper well with salt and pepper. Take julienned potaotes and put a thin layer on the top side of the fish only. In a large saute pan heat about 1/4-inch of clarified butter over medium-high heat. Carefully lay fillets in pan, potato side down, and pan-fry until potatoes are golden brown. Turn fish over and finish cooking in pan in the oven. Place 1 fillet on each of 4 dinner plates. Top with Beurre Blanc Sauce and garnish with lemon herbs.
  • Heat cream in a heavy saucepan over medium-high heat until reduced to 3/4 cup. Reserve. In a large skillet, reduce wine, peppercorns, lemon juice, and shallots over high heat until almost dry (only a little liquid remains). Add reduced cream, whipping constantly. Remove from heat, and slowly whip in butter until thickened and smooth. Serve over snapper.

4-ounce piece fresh tofu, cut into 1-inch pieces

Steps:

  • Preheat oven to 450 degrees.
  • Season fish inside and out with salt and pepper. Place lime leaves inside the body cavity. Combine the peanut oil, garlic, ginger and basil leaves in a dish and marinate the fish for 1 to 2 hours, refrigerated, occasionally turning and basting.
  • Preheat roasting pan in oven for 10 minutes before cooking snapper.

Steps:
