Number Of Ingredients 9

1 lb lean (at least 80%) ground beef
1 package Old El Paso™ taco seasoning mix

2 medium tomatoes, chopped
1/2 cup sliced ripe olives
4 medium green onions, sliced (1/4 cup)

1/2 cup Italian dressing
1 bag nacho-flavored tortilla chips, coarsley crushed

Steps:

  • In 10-inch skillet, cook beef and taco seasoning mix as directed on seasoning mix package.
  • In large bowl, gently mix lettuce, tomatoes, olives, onions and cheese. Add beef mixture; stir gently to mix.
  • Just before serving, add dressing and chips; toss.

Nutrition Facts : ServingSize 1 Serving

Tips:

  • Use fresh, high-quality ingredients. The fresher your ingredients, the more flavorful your salad will be. This is especially important for the artichokes. If you can't find fresh artichokes, you can use canned or jarred artichokes, but they won't be as good.
  • Don't overcook the artichokes. Artichokes should be cooked until they are tender, but not mushy. Overcooked artichokes will be tough and stringy.
  • Choose a good vinaigrette dressing. A vinaigrette dressing is a simple mixture of oil, vinegar, and herbs. It's a great way to add flavor to your salad without overpowering the other ingredients.
  • Don't be afraid to experiment. There are many different ways to make artichoke salad. Feel free to experiment with different ingredients and flavors to find a recipe that you love.

Conclusion:

Artichoke salad is a delicious and versatile dish that can be served as an appetizer, side dish, or main course. It's a great way to use up leftover artichokes, and it's also a healthy and nutritious meal. So next time you're looking for a new salad recipe, give artichoke salad a try. You won't be disappointed!
