Roasted Carrot Salad image

Inspired by an incredibly popular salad sold in a local award winning market here in Woodstock, VT. Since they don't give out the recipe, I had to figure it out on my own. But I (and others) believe that my version is infinitely better, and I'm sure you will agree. This light, fresh and healthy salad is perfect for summer days and presents well for BBQ's, potlucks, and dinner parties alike and it is guaranteed to impress and get rave reviews every time.

I enjoy this cold salad as a side dish at a summer BBQ or potluck for something a little different. Very inexpensive to make and take along. Better the longer it sits so i try to make it the night before.I am guessing at serving size as it depends on the appetites,I have doubled it before for a larger crowd. The cook time i listed does not include any overnight refrigeration.

CARROT MARSHMALLOW SALAD

Carrot Marshmallow Salad image

I haven't tried this yet... but it looks great! It was served at Miss Hullings Cafeteria in St. Louis.

Provided by Kim D.

Categories     Pineapple

Time 25m

Yield 6-8 serving(s)

Number Of Ingredients 7

3 1/2 cups shredded carrots
1 cup mini marshmallows
1/4 cup pineapple chunk
1 cup raisins
1/2 cup shredded coconut
1 cup mayonnaise
1 cup whipping cream

Steps:

  • In a large bowl, combine carrots, marshmallows, pineapple chunks, raisins, and coconut.
  • Toss lightly to mix.
  • Mix in mayonnaise.
  • Carefully fold in whipped cream.
  • (the recipe doesn't say, but I think you should whip it first!) Can be frozen.

Tips:

  • For optimal flavor, use fresh, crisp carrots. If using store-bought shredded carrots, rinse them thoroughly to remove any excess moisture.
  • Feel free to adjust the amount of sugar and vinegar in the dressing based on your taste preferences.
  • For a sweeter salad, add a tablespoon or two of honey or maple syrup to the dressing.
  • For a tangier salad, add a tablespoon or two of lemon juice or white wine vinegar to the dressing.
  • Add some chopped nuts or seeds, such as walnuts, pecans, or sunflower seeds, for extra crunch and flavor.
  • For a more colorful salad, add some shredded redキャベツ or bell pepper.
  • Serve the salad immediately or chill it for later. If chilling, let the salad come to room temperature for 30 minutes before serving.

Conclusion:

Carrot salad is a simple but delicious side dish that is perfect for any occasion. It is easy to make, customizable to your taste preferences, and can be served immediately or chilled for later. So next time you are looking for a healthy and refreshing side dish, give carrot salad a try.
