SOUTHERN GREEN BEANS & BACON

Southern Green Beans & Bacon image

This is definitely an unhealthy old southern recipe that we continue to make for all large family gatherings. My oldest son (age 23) makes this when he goes to friends' homes. He said he's never had any left to bring home.

Categories     Vegetable

Time 40m

Yield 10 serving(s)

Number Of Ingredients 3

6 lbs green beans (drained)
1 lb bacon
1 large onion

Steps:

  • Slice bacon into 1 inch pieces, (easiest way is to cut with scissors).
  • Put bacon into a large pot and begin to fry.
  • While bacon is frying, coarsely chop onion.
  • When bacon is about 1/2 way done, add onion and continue frying until bacon is semi crisp. (Do NOT drain grease).
  • Drain green beans and dump into bacon and onions. Stir.
  • Continue to cook for 30 minutes on medium, stirring occasionally.
  • Serve.

Tips:

  • For the best flavor, use fresh green beans. If using frozen green beans, thaw them completely before cooking.
  • If you don't have bacon, you can substitute ham or smoked sausage.
  • Add a splash of vinegar or lemon juice to the green beans for a tangy flavor.
  • Season the green beans with salt and pepper to taste.
  • Serve the green beans immediately or store them in the refrigerator for up to 3 days.

Conclusion:

Pressure cooker Southern-style green beans and bacon is a quick and easy dish that is perfect for a weeknight meal. The green beans are cooked to perfection in the pressure cooker, and the bacon adds a delicious smoky flavor. This dish is also a great way to get your kids to eat their vegetables.
