Steps:

  • Preheat oven to 375 degrees F. Combine all-purpose flour, whole wheat flour, sugar, pumpkin pie spice, baking soda, salt and baking powder in medium bowl. Whisk together pumpkin, apple, oil, egg and vanilla in a large bowl. Add dry ingredients, mixing just until moistened. Stir in cranberries and flax seed. 1/2 cup plus 1 teaspoon granulated sugar
7 tablespoons unsalted butter, melted
1 teaspoon plus a pinch of ground cinnamon
1/2 teaspoon plus a pinch of salt
2 cups all-purpose flour
1 tablespoon baking powder
1 cup plus 1 1/2 to 21/2 teaspoons whole milk
1/2 cup pure pumpkin puree
1 1/4 teaspoons pure vanilla extract
2 large eggs
1/2 cup confectioners' sugar

Steps:

  • Preheat the oven to 350 degrees F. Line a 12-cup muffin pan with nonstick liners. Peel and core the apple and cut into 12 wedges, then slice the wedges crosswise into small triangular pieces. Combine the apple pieces, 1 teaspoon granulated sugar, 1 tablespoon melted butter and a pinch each of cinnamon and salt in a large nonstick skillet. Cook over medium-high heat, stirring occasionally, until the apples are browned and softened, 4 to 6 minutes. Let cool completely.
  • Whisk the flour, baking powder, remaining 1 teaspoon cinnamon and 1/2 teaspoon salt in a large bowl.   • Divide the batter among the muffin cups, filling them three-quarters of the way. Spoon the apples into the center of each. Bake until a toothpick inserted into the center of a muffin comes out clean, 22 to 25 minutes. Let the muffins cool 5 minutes in the pan, then remove to a rack to cool completely.

3/8 cup canola oil
1/2 cup apple butter or 1/2 cup applesauce
2 teaspoons vanilla extract
2 1/2 cups whole wheat pastry flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda
1 1/2 teaspoons cinnamon
1 teaspoon salt
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1/4 teaspoon nutmeg
1 cup walnuts, chopped

Steps:

  • Preheat oven to 350°.
  • In a large mixing bowl, combine eggs, honey, pumpkin, oil, apple butter and vanilla; mix well.

3/4 cup milk (I used 1%)
1 large egg, slightly beaten
1/4 cup vegetable oil
1 cup pumpkin butter

Steps:

  • Preheat oven to 400°F.
  • Combine all dry ingredients in a medium bowl.
  • In a second medium bowl, mix together milk, egg, oil, and 1/2 cup pumpkin butter.
