PUMPKIN RICE PUDDING
Steps:
- Preheat the oven to 375F.
- Bring the water to a boil in an ovenproof 4-quart saucepan. Stir in the rice and cover. Reduce the heat to low and simmer until the rice is nearly cooked, about 20 minutes.
- In a large bowl, whisk together the milk, pumpkin, honey, vanilla, cinnamon, ginger, nutmeg, and salt.
- While the rice is still hot, add the pumpkin mixture to the saucepan and stir well to combine. Cover and transfer to the oven. Bake until the liquid has reduced by about a third and the mixture is foamy and bubbling, 45 to 50 minutes. Remove from the oven and stir well to combine all the ingredients. Transfer to a large bowl, then cover and chill in the refrigerator for at least 8 hours or overnight. The pudding will keep for up to 4 days in an airtight container in the refrigerator. Serve with a dollop of whipped cream and a sprinkling of cinnamon.

PUMPKIN CORNBREAD
Delicious on its own or as the base for a stuffing, this rich, moist cornbread is inspired by a Basque recipe that's been altered to resemble American cornbread. The pumpkin flavor is very subtle, and honey provides a hint of sweetness.

Tips:
- Use fresh or canned pumpkin: Fresh pumpkin will give your pudding a more intense flavor, but canned pumpkin is also a good option. If using canned pumpkin, be sure to drain it well before using.
- Choose the right cornmeal: There are two types of cornmeal: fine and coarse. Fine cornmeal will give your pudding a smoother texture, while coarse cornmeal will give it a more rustic texture. Choose the type of cornmeal that you prefer.
- Don't overmix the batter: Overmixing the batter will make your pudding tough. Mix the ingredients just until they are combined.
- Bake the pudding in a water bath: Baking the pudding in a water bath will help to prevent it from drying out. Place the pudding dish in a larger baking dish filled with hot water.
- Serve the pudding warm or cold: Pumpkin corn pudding can be served warm or cold. If you are serving it warm, let it cool for a few minutes before serving. If you are serving it cold, chill it for at least 4 hours before serving.
Conclusion:
Pumpkin corn pudding is a delicious and versatile dish that can be enjoyed for breakfast, lunch, or dinner. It is also a great way to use up leftover pumpkin puree. With its creamy texture and sweet flavor, pumpkin corn pudding is sure to be a hit with everyone who tries it.
