Provided by Giada De Laurentiis

Time 20m

Yield 4 to 6 servings (8 cups)

Number Of Ingredients 11

2 tablespoons butter
1 tablespoon olive oil
2 shallots, chopped
1 sage leaf
2 (15-ounce) cans cannellini beans, drained and rinsed
4 cups low-sodium chicken broth
4 cloves garlic, cut in 1/2
1/2 cup cream
1/2 teaspoon freshly ground black pepper
6 slices ciabatta bread
Extra-virgin olive oil, for drizzling

Steps:

  • Place a medium, heavy soup pot over medium heat. Add the butter, olive oil, and shallot. Cook, stirring occasionally, until the shallots are softened, about 5 minutes. Add the sage and beans and stir to combine. Add the stock and bring the mixture to a simmer. Add the garlic and simmer until the garlic is softened, about 10 minutes. Pour the soup into a large bowl. Carefully ladle 1/3 to 1/2 of the soup into a blender and puree until smooth. Be careful to hold the top of the blender tightly, as hot liquids expand when they are blended. Pour the blended soup back into the soup pan. Puree the remaining soup. Once all the soup is blended and back in the soup pan, add the cream and the pepper Keep warm, covered, over very low heat.
  • Place a grill pan over medium-high heat. Drizzle the slices of ciabatta bread with extra-virgin olive oil. Grill the bread until warm and golden grill marks appear, about 3 minutes a side. Serve the soup in bowls with the grilled bread alongside.

ROASTED GARLIC AND WHITE BEAN DIP WITH ROSEMARY

Roasted Garlic and White Bean Dip With Rosemary image

The idea of adding a whole head of garlic to a dip might scare you, but compared to its bracing raw counterpart, roasted garlic is sweet and mellow. This dip is garnished with a sprig of sizzled rosemary that's for more than just looks: Frying the herb infuses the olive oil with its fragrance. Spoon the remainder over your finished bowl for a hit of rosemary you wouldn't get with just the minced leaves, then scoop it up with warm pita, cucumber spears, and carrot sticks.

Time 1h

Yield 8 to 10 servings (2 1/2 cups)

Number Of Ingredients 9

1 head garlic
1 teaspoon, plus 5 tablespoons olive oil
2 (15-ounce) cans white beans, like cannellini, Great Northern or navy beans, drained and rinsed
3 tablespoons lemon juice (from 1 lemon)
1 tablespoon roughly chopped fresh rosemary leaves, plus 1 full sprig
1/4 teaspoon black pepper
1 pinch of cayenne, plus more for garnish (optional)
1 tablespoon hot water
1 1/4 teaspoons kosher salt

Steps:

  • Roast the garlic: Heat the oven to 400 degrees. Peel off most of the garlic's outermost skin but leave the whole head intact. Trim about 1/4 inch off the top of the garlic to expose the cloves. Place the garlic on a large piece of aluminum foil, then drizzle 1 teaspoon olive oil over the exposed cloves and close the foil into a pouch. Bake for 40 to 50 minutes, until you can pierce the center of the head with a knife. Let cool slightly.
  • Squeeze the roasted garlic cloves into the bowl of a food processor. Add the white beans, 4 tablespoons olive oil, lemon juice, rosemary leaves, black pepper, cayenne (if using), hot water and salt. Purée until smooth, then taste for salt, pepper, rosemary and lemon juice. Adjust as necessary. Transfer to a serving dish.
  • Heat remaining 1 tablespoon of olive oil in a small heavy skillet over medium-high heat. When hot, add the remaining rosemary sprig - it should sizzle. Cook until brown and crisp, flipping once, about 1 minute per side, then transfer to the top of the dip as a garnish. Pour or spoon the remaining olive oil, now infused with rosemary, over the top of the dip. Sprinkle with cayenne for a little additional heat.

Yield Makes 6 servings

Number Of Ingredients 14

For dressing
2 garlic cloves
1 teaspoon Dijon mustard
1 tablespoon red-wine vinegar
3 tablespoons extra-virgin olive oil
For bean purée
1/2 pound dried small white beans such as navy or pea
1 fresh thyme sprig
2 slices firm white sandwich bread, crusts removed
1/3 cup heavy cream
2 tablespoons extra-virgin olive oil
Accompaniment: toasted baguette slices (croûtes)
Special Equipment
a food mill fitted with large-holed disk

Steps:

  • Make dressing:
  • Blanch garlic in a small saucepan of boiling water 3 minutes, then drain and finely chop. Transfer garlic to a bowl and whisk in mustard and vinegar. Add 3 tablespoons oil in a stream, whisking until emulsified. Season with salt and pepper.
  • Make bean purée:
  • Soak beans in water to cover by 2 inches in a large bowl at least 8 hours, then drain. Simmer beans with thyme in fresh water to cover by 2 inches in a 3- to 4-quart saucepan, partially covered, until very tender, about 1 1/4 hours (some beans will fall apart). Reserve 1 cup cooking liquid and drain beans, discarding thyme.
  • Crumble bread into a large bowl and stir in cream. Force beans through food mill into moistened bread, then stir in oil. Add reserved cooking liquid 1 tablespoon at a time for a spreadable consistency. Season generously with salt and pepper.
  • Serve warm with vinaigrette spooned over purée.

Number Of Ingredients 6

1 whole head garlic
6 tablespoons extra-virgin olive oil
1 pound dried white beans, soaked overnight
Coarse salt and freshly ground pepper
2 tablespoons fresh thyme leaves
2 sprigs of thyme to garnish

Steps:

  • Meanwhile, simmer the beans in water to cover for about one hour, or until they are tender. Halfway through cooking time, season them with salt and pepper.
  • Put the beans in a food processor. Squeeze six cloves of garlic out of their skins and add them, along with the olive oil (reserve the rest of the garlic for using in salad dressings or on vegetables like baked tomatoes). Process the beans until they are smooth, adding more oil if needed. Correct seasoning and add more garlic if it seems needed. Stir in the thyme leaves and serve in a bowl garnished with sprigs of thyme.

Tips:

  • Soak the beans overnight: Soaking the beans overnight helps to reduce the cooking time and makes them more digestible. If you're short on time, you can quick-soak the beans by boiling them for 1 minute, then removing them from the heat and letting them sit for 1 hour.
  • Use a flavorful broth: The broth you use to cook the beans will add a lot of flavor to the finished dish. Use a vegetable broth, chicken broth, or ham broth, depending on your preference.
  • Roast the garlic: Roasting the garlic mellows its flavor and adds a delicious depth of flavor to the beans. If you don't have time to roast the garlic, you can mince it and add it to the beans along with the other ingredients.
  • Use a good quality olive oil: The olive oil you use will also add flavor to the beans. Use a fruity, extra-virgin olive oil for the best results.
  • Season to taste: Once the beans are cooked, taste them and season them with salt and pepper to taste. You can also add other seasonings, such as herbs, spices, or a squeeze of lemon juice.

Conclusion:

Pureed white beans with roast garlic and olive oil is a simple and delicious dish that is perfect for a weeknight meal. It's also a great way to use up leftover beans. The beans are creamy and flavorful, and the roasted garlic and olive oil add a delicious depth of flavor. Serve the beans with grilled chicken or fish, or use them as a dip for vegetables or pita bread.
