Steps:
- Adjust oven rack to middle position and heat oven to 350 degrees. Grease and lightly flour a metal or disposable foil 9-by-13-inch pan. Whisk dry ingredients and spices in a large bowl. Mix milk, eggs and vanilla extract in a 2-cup measuring cup.
- Beat softened butter into dry ingredients, first on low, then medium, until mixture forms pebble-sized pieces. Add about 1/3 of the milk mixture and beat on low until smooth. Add remaining milk mixture in two stages; beat on medium speed until batter is just smooth. Add the sugar; beat until just incorporated, about 30 seconds. Pour batter into cake pan.
- Bake until a cake tester or toothpick inserted into the cake's center comes out clean, about 40 minutes. Set pan on a wire rack; let cool for 5 minutes. Run a knife around the pan perimeter and turn cake onto rack. Let cool.

UNBELIEVABLY EASY SPICE CAKE
You won't believe this cake came from a box! It's luxuriously moist, and the pumpkin gives it a lovely orange fall color. Our favorite variation of this recipe is Apple Spice Cake, made by adding 3 apples (cored, peeled, and chopped in food processor) to the batter, as well as adding extra cinnamon and pumpkin pie spice. We also love topping this cake with a delightful powdered sugar glaze or cream cheese frosting!

Steps:
- Preheat oven to 350°F. Butter and flour 8-inch square metal baking pan. Mix first 4 ingredients in medium bowl to blend. Whisk sugar, butter and egg in large bowl until smooth. Whisk in dry ingredients alternately with buttermilk, beginning with dry ingredients. Fold in nuts. Transfer batter to prepared pan. Bake until tester inserted in center comes out clean, about 1 hour. Cool slightly in pan on rack. Serve warm with ice cream.
Tips:
- For a moist and fluffy cake, use buttermilk instead of milk. Buttermilk reacts with the baking soda to create a tender and light crumb.
- Make sure your butter and eggs are at room temperature before you start baking. This will help the ingredients blend together more easily and create a smoother batter.
- Don't overmix the batter. Overmixing can develop the gluten in the flour, which will make the cake tough.
- Bake the cake until a toothpick inserted into the center comes out clean. If the toothpick comes out with batter or crumbs attached, the cake needs to bake longer.
- Let the cake cool completely before frosting it. This will help the frosting set properly and prevent it from melting.
Conclusion:
This spice cake is a delicious and easy-to-make treat that is perfect for any occasion. With its moist and fluffy crumb, warm spices, and sweet glaze, this cake is sure to be a hit with everyone who tries it. So next time you're looking for a special dessert, give this recipe a try.
