QUICK MANGO SALSA

A fruity salsa, great with pita chips. One guy I know was gonna pay me to make this for him. I like to let mine sit for at least an hour and give it a stir every so often. However, if you want to eat it right away.

Yield 4

Number Of Ingredients 12

2 teaspoons olive oil
1 medium red onion, finely chopped
3 garlic cloves, minced
3 cups cooked or 2 (15.5-ounce) cans black beans, drained and rinsed
1 (14.5-ounce) can diced tomatoes with chiles, undrained
1 teaspoon ground cumin
1/2 teaspoon ground coriander
3 cups vegetable broth
Salt and black pepper
1 fresh ripe mango, peeled, pitted and chopped
3 tablespoons minced fresh cilantro
1 tablespoon fresh lime juice

Steps:

  • -Heat the oil in a large pot over medium heat. Add all but 2 tablespoons of the onion and cook until softened, about 5 minutes. Add the garlic and cook 1 minute longer. Stir in the beans, tomatoes, cumin, coriander, vegetable broth, and salt and pepper to taste. Bring to a boil, then reduce heat to medium and simmer until the flavors are blended, about 15 minutes. -While the soup is simmering combine the reserved 2 tablespoons onion in a bowl with the mango, cilantro, and lime juice. Mix well and set aside. -When ready to serve, ladle the soup into bowls and top with a spoonful of the salsa.

Tips:

  • Choose ripe mangoes: Use ripe mangoes for the best flavor and texture in your salsa. Look for mangoes that are slightly soft to the touch and have a sweet aroma.
  • Use a variety of colors: For a visually appealing salsa, use a variety of colored mangoes. This will add vibrancy and make your salsa more inviting.
  • Don't overchop the ingredients: Chop the ingredients into small pieces, but not too small. You want to retain some texture in the salsa.
  • Use fresh herbs: Fresh herbs like cilantro, mint, or basil add a burst of flavor to mango salsa. Use them sparingly, as their flavors can be overpowering.
  • Adjust the heat level: If you like spicy salsa, add some chopped jalapeños or serrano peppers. Start with a small amount and adjust to taste.

Conclusion:

Mango salsa is a refreshing, versatile condiment that can be used in a variety of ways. It's perfect for adding a pop of flavor to grilled chicken, fish, tacos, or burritos. You can also serve it as a dip with tortilla chips or crackers. No matter how you choose to enjoy it, mango salsa is sure to be a hit.
